SPINACH CAPRESE SALAD
A greener version of the classic Caprese, this salad is just as delicious with the added nutrients of spinach! The drizzle of olive oil and balsamic vinegar make a wonderful dressing for the spinach underneath.

- Spread the spinach out on a serving plate. Place the slices of tomato on the bed of spinach. Top each slice of tomato with a slice of fresh mozzarella. Sprinkle the basil over the salad and drizzle with olive oil and balsamic vinegar.

SPINACH TORTELLINI SALAD
Easy Spinach Tortellini Salad, loaded with with fresh herbs, tomatoes, mozzarella, and olives, and tossed in a simple homemade Italian dressing. Perfect for a little party, or serve it as a side next to chicken or fish. Leftovers will make a great lunch the next day!

Steps:
- Cook the tortellini pasta in salted boiling water according to package instructions (about 5 to 7 minutes). Drain and rinse in cold water.
- Transfer the pasta to a large bowl. Add the rest of the salad ingredients and toss gently.
- In a small bowl, combine the garlic, lemon juice, vinegar, olive oil, and herbs. Add a big pinch of kosher salt and black pepper. Whisk to combine.
- Pour the dressing over the salad. Toss to combine.
- For best flavor, allow the salad to rest for 30 minutes or so for the flavors to meld before serving. Transfer to a platter and serve.

- Whisk salad dressing, chopped garlic, balsamic vinegar and dried oregano to blend in large bowl.
- Mix in sliced tomatoes, cubed mozzarella cheese and sliced onion.

- Add spinach to salad and toss to combine.
- Season to taste with salt and pepper and serve.

- In a mixing bowl, add all of the dressing ingredients—lemon juice, olive oil, salt, pomegranate molasses, basil of choice, and mix until an emulsified dressing forms. I like to mix for about a solid minute. This helps puncture the basil and ensures the salt is evenly distributed throughout the dressing. Now let’s put it all together.
