I was trying to "calorie and sugar" down an old favorite and this is the result! Let me just add that hubby and I put a big dent in this dish tonight! Enjoy! Notes: You can substitute fresh/frozen/canned peaches, cherries, blueberries, pineapples, apples, etc. The list and combinations are endless. You can also substitute margarine as my mother always did too.

9 peaches, diced, not peeled
8 ounces fresh blueberries
1 cup whole wheat pastry flour
1 cup sugar substitute (Splenda)
1/2-1 cup butter, cut into 1 tablespoon sections (1 or 2 sticks.)
1/2 teaspoon cinnamon (optional)

Steps:

  • - Put fruit in bottom of 9x13-inch pan.
  • -Mix together flour, Splenda, and butter until it resembles a course meal (cut in with pastry knife or fork).
  • -Sprinkle on top of fruit. Because whole wheat pastry flour can be grainier than all purpose, I melted 1/2 stick of butter and poured over topping for added moisture.
  • -Bake at 350°F for 30 minutes, or as your oven allows.
  • Enjoy!

0.5 (16 ounce) can peaches in juice, drained and patted dry with paper towel
1/2 cup unsweetened applesauce
1/3 cup butter, melted
1/4 cup splenda brown sugar, packed
1/4 cup egg white
1 teaspoon vanilla
1/4 cup milk
1 1/3 cups all-purpose flour
1/3 cup Splenda sugar substitute
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
3 tablespoons sugar-free apricot preserves, with NutraSweet brand sweetener or 3 tablespoons apricot fruit spread
1 teaspoon lemon juice
1 teaspoon cornstarch
1 3/4 teaspoons Splenda sugar substitute
1/4 teaspoon maple extract
1/4 cup sliced almonds, toasted

Steps:

  • Cut peach slices into thirds; arrange in bottom of lightly greased 8-inch cake pan.
  • Mix applesauce,melted butter, Splenda Brown, egg white, vanilla, and milk in small bowl.
  • In another bowl mix together flour, Splenda granulated, baking powder, salt, cinnamon.
  • Stir the wet ingredients into the dry until just mixed.
  • Pour batter over peach in pan.
  • Bake in preheated 350°F oven until cake is browned and toothpick inserted in center comes out clean, about 20 minutes. Invert cake immediately onto serving plate.
  • Spread fruit topping over warm cake and sprinkle with almonds. Serve warm. Makes 8 servings.
  • Fruit Topping: Mix preserves, lemon juice and cornstarch in small saucepan; heat to boiling, stirring constantly. Remove from heat; stir in Equal and maple extract.
  • Food Exchanges: 1 bread, 1/2 fruit.

butter-flavored cooking spray
1 cup sifted cake flour
3/4 cup sugar substitute, such as splenda (or One Spoon)
1/2 tablespoon baking powder
1/4 teaspoon salt
3 tablespoons canola oil
1 large egg, separated
1/4 cup egg substitute
1/4 cup water
3/4 teaspoon vanilla extract
1/2 orange, zest of
1/2 cup egg white, at room temp. (whites of 4 lg. eggs or use refrigerated egg whites)
1/4 teaspoon cream of tartar
1 1/2 cups sugar-free fat-free frozen whipped topping
1 lb fresh peach, peeled and sliced thin, covered with water
1 tablespoon lemon juice, until ready to use

Steps:

  • Preheat oven to 325ºF.
  • Lightly coat a 9-in. cake pan with cooking spray. Place the flour, sugar substitute, baking powder, and salt in a mixing bowl. Mix together, then make a well in the middle. Beat together oil, egg yolk, egg substitute, water, vanilla, and orange zest. Pour into flour mixture and blend well. In a large bowl, combine the 1 egg white with the additional 1/2 cup egg whites. Beat the egg whites and cream of tartar until the whites have stiff peaks. Gently fold into the flour mixture.
  • Place in the prepared cake pan and bake 35-40 minutes until golden brown. Turn out onto rack to cool completely. Using a serrated knife, slice the cake in half horizontally.
  • Cover with 3/4 of the whipped topping. Place the peaches, leaving a few slices for decoration, on top and cover with top of cake. Decorate the center of the cake with rosettes of whipped topping and decorate with remaining peach slices. Refrigerate until ready to serve. Makes 10 servings.

  • In the bowl of an electric mixer, beat ½ cup softened butter. Beat in ⅔ cup sugar, and then add 2 eggs one at a time, beating until thoroughly combined. Beat in the vanilla and lemon zest.
  • Add 1 cup flour, 1 teaspoon baking powder, ¼ teaspoon salt, and ½ teaspoon cinnamon. Stir on low speed until you end up with a smooth, thick batter. Spread the batter evenly into your prepared pan––it will be a fairly thin layer, but it will rise! Arrange the peach wedges over the cake, and lightly press them into the batter.
