16 oz ground pork
1 tsp salt
1/4 tsp garlic salt
1/2 tsp parsley flakes
3/4 tsp ground sage
1/4 tsp ground black pepper
1/4 tsp thyme, dried
1/4 tsp crushed red pepper flakes
1/4 tsp msg
1/8 tsp oregano, dried

Steps:

  • 1. Mix the seasonings into the meat. It's best if you do this ahead of time to give the flavors a chance to incorporate, but it will still taste great if you cook it right away.
  • 2. Once you have your sausage mixed, Then form into patties using your hands. cook as you would Jimmy dean breakfast sausage.
  • 3. We've also used ground turkey in place of the ground pork and had good results . While msg is generally a frowned upon ingredient, it does offer great flavor or it can be left out altogether without any issue.

This breakfast sausage, with multiple variations, will be your new favorite breakfast sausage that tastes better than the store-bought kind!

1 lb ground pork
2 tablespoons brown sugar
1 tablespoon light corn syrup
1 tablespoon apple cider vinegar
2 teaspoons finely chopped fresh thyme
1 teaspoon finely chopped rosemary
1 teaspoon finely crushed fennel seed
1/2 teaspoon finely crushed red pepper flakes
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1/2 teaspoon dried parsley
1/2 teaspoon garlic powder
1/4 teaspoon smoked paprika
1/4 teaspoon ground coriander
2 teaspoons finely chopped fresh sage
1/2 teaspoon cayenne pepper
1 small finely chopped fresno chili pepper
1/2 teaspoon crushed red pepper flakes
3 tablespoons pure maple syrup
1/4 teaspoon maple extract (optional)

Steps:

  • To make the sausage base, in a large bowl, mix together all of the ingredients until well-combined and as smooth as possible. Cover with plastic wrap and chill for at least 3 hours in the fridge, or overnight.
  • Portion out the sausage into rounds and pat out into thick patties. Set a large cast iron skillet over medium-high heat. Cook the sausage in batches, until browned on both sides, about 4 minutes per side.
  • To make sage sausage, add in the chopped sage to the sausage base from above and cook as directed.
  • To make hot sausage, add in the cayenne pepper, chili pepper, and red pepper flakes to the sausage base from above and cook as directed.
  • To make maple sausage, add in the maple syrup and maple extract (if using) to the sausage base from above and cook as directed.

Fresh Hot Breakfast Sausage like Jimmy Dean image

Fresh breakfast sausage can be made using your own meat grinder and using pork butt or picnic roast or with ground pork you buy at the store. Of course if you cut and grind your own pork, it will take longer. This recipe prep-time assumes your pork is already ground. You can add all the ingredients, mix and fry it, but it is better if you let it rest for an hour or more, mix again, and then fry it.

1/4 teaspoon cayenne pepper
1/4 teaspoon rubbed sage
1/4 teaspoon ground black pepper
1/4 teaspoon red pepper flakes
1/4 teaspoon coriander
1/4 teaspoon msg
1/4 cup water

Steps:

  • Place all ingredients in a bowl.
  • Mix well.
  • For better flavor, cover, refridgerate and allow to rest for a minimum of one hour.
  • Mix well.
  • Make suasage balls and place in skillet on medium heat, press flat.
