FRESH GRAPE SALSA



Fresh Grape Salsa image

This salsa is wonderful - sweet, sour, and a little spicy. We usually enjoy it with tortilla chips, but it can also be used as an accompaniment to fish or chicken dishes like other fruit-based salsas. It can be made with any color of seedless grapes, but red grapes are especially pretty with the green onions, chilies and cilantro.

2 cups seedless grapes, coarsely chopped
1/2 cup green onion, chopped
1/2 cup anaheim chili, diced
2 tablespoons cilantro, chopped
2 tablespoons vinegar
1 clove garlic, minced
1/2 teaspoon salt
1/8 teaspoon bottled hot pepper sauce

Steps:

  • Combine all ingredients in medium bowl, mix well.
  • Let stand at least 1 hour before serving.
  • Drain off excess liquid before serving.

2 cups coarsely chopped California seedless grapes (use all three colors)
1/2 cup chopped green onions
1/2 cup diced fresh chilies (or diced, canned Anaheim chilies)
2 tablespoons chopped fresh cilantro*
2 tablespoons vinegar
1 clove garlic, minced
1/2 teaspoon salt
1/8 teaspoon bottled hot pepper seasoning

Steps:

  • Combine all ingredients in medium bowl and mix well. Let stand at least one hour before serving. Drain off excess liquid before serving.

3/4 cup red grapes, coarsely chopped
3/4 cup green grape, coarsely chopped
1/2 cup chopped green onion
2 tablespoons chopped fresh cilantro
1 tablespoon olive oil
1 tablespoon lime juice
2 teaspoons finely chopped jalapenos
1/2 teaspoon salt
1/4 teaspoon bottled Tabasco sauce

Steps:

  • Combine all ingredients.
  • Mix Well.
  • Refrigerate for at least 1 hour to allow flavors to blend.
  • Drain well before serving with chips.

Pan-Fried Snapper Fillet With Fresh Grape Salsa image

A delectable recipe that makes for a wonderful lunch or dinner, it all depends when you're in mood for a fish dish that's packed with nutrition and flavour. If you've not tried snapper before, then you're in for a real treat.

Number Of Ingredients 11

6 red snapper fillets
15 ml olive oil
1 pinch salt, to taste
1 pinch pepper, to taste
100 g seedless grapes, cut into discs
100 g cherry tomatoes, cut into quarters
100 g red onions, thinly sliced
1 bunch cilantro or 1 bunch coriander, roughly chopped
1 lemon, juice and zest
25 g garlic, minced finely
2 pieces chili peppers, Thai cored and finely chopped

Steps:

  • Combine all the ingredients for the salsa in a bowl. Lightly macerating some of the grapes to release its juices. Season to taste with salt and pepper. Cover and refrigerate until ready to serve.
  • Brush snapper fillets with lemon juice. Season with salt and pepper on flesh side.
  • Heat olive oil in a non-stick pan. Lay the fillets skin side down. Cook for approximately three minutes.
  • Flip with a metal spatula and cook for another three minutes. Continue cooking if fillets won't release easily from the pan.
  • Arrange onto a serving platter and top with the prepared grape salsa.
