1 (9 inch) deep dish pie shells, flute edges high
4 eggs, lightly beaten
1 1/4 cups whipping cream
1 teaspoon salt
1 tablespoon grated yellow onion (or finely chopped)
1 1/2 cups fresh corn kernels
1 cup grated extra-sharp cheddar cheese
paprika
1 tablespoon finely chopped fresh parsley

Steps:

  • Preheat oven to 425º.
  • Prick crust well on bottom and sides with fork, par-bake pastry crust with parchment paper and pie weight beans for 5-7 minutes until firm but not brown. (Remove beans and parchment paper.)
  • Stir together rest of ingredients except paprika and parsley. Pour carefully into pie shell.
  • Sprinkle with a little paprika.
  • Bake 10 minutes, reduce heat to 350º and bake 30 minutes longer or until center is almost firm. Cool about 10 minutes.
  • Garnish with fresh chopped parsley if desired.

1/2 pound fresh chorizo, casings removed (about 2 links), or vegetarian substitute such as Lightlife Plant-Based Italian Sausage
1/2 pound ground beef, or vegetarian substitute such as Lightlife Plant-Based Ground
1 tablespoon tomato paste
2 1/2 teaspoons cumin
1 large onion, grated on a box grater, divided
1-2 medium jalapeños, thinly sliced, seeded if desired, divided
1 3/4 teaspoons kosher salt, divided
2 large beefsteak tomatoes (about 2 pounds), cut into 1/2" cubes
2 cups corn kernels (preferably fresh; from about 3 ears of corn), divided
8 ounces cheddar cheese, grated (about 2 cups)
2 large eggs
6 tablespoons unsalted butter, melted
1/3 cup sour cream, plus more for serving
1 1/4 cups cornmeal
1 teaspoon baking powder

Steps:

  • Preheat oven to 450°F. Heat an 8" cast-iron skillet over high. Pat chorizo and beef dry with paper towels, then press into an even layer in bottom of hot skillet with a spatula. Cook, undisturbed, until a brown crust begins to form on the bottom, about 6 minutes. Turn, break into pieces, and continue to cook until cooked through, about 4 minutes. Add tomato paste, cumin, half of grated onion, half of jalapeño, and 1 1/4 tsp. salt and cook, stirring constantly, until fragrant and well combined, about 1 minute. Remove from heat and stir in tomatoes, 1 1/2 cups corn, and 1 1/2 cups cheese.
  • Whisk eggs, butter, 1/3 cup sour cream, and remaining onion in a medium bowl. Whisk cornmeal, baking powder, and remaining 1/2 tsp. salt in a small bowl. Add dry ingredients to butter mixture and stir to combine, then stir in 1/4 cup cheese and remaining 1/2 cup corn.
  • Dollop cornbread batter over meat mixture, then smooth into an even layer. Top with remaining jalapeños and 1/4 cup cheese.
  • Bake cornbread until golden brown, 15-18 minutes. Serve with sour cream alongside.

1 cup diced peeled potatoes
1/3 cup milk
2 eggs
2 cups fresh or frozen corn, thawed
1 teaspoon sugar
1/2 teaspoon salt
1 package (15 ounces) refrigerated pie pastry

Steps:

  • Place potatoes in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 6-8 minutes or until tender. Drain and set aside. , In a blender, combine the milk, eggs, corn, sugar and salt; cover and process until blended., Line a 9-in. pie plate with bottom pastry; trim pastry even with edge of plate. Spoon potatoes into crust; top with corn mixture (crust will be full). Roll out remaining pastry; make a lattice crust. Seal and flute edges. , Bake at 375° for 35-40 minutes or until crust is golden brown and filling is bubbly.

1 tablespoon butter
1 10-ounce package frozen corn kernels
3 green onions, chopped
2 tablespoons chopped celery leaves
1/3 cup soft herb cheese (such as Boursin)
2 eggs
2 egg yolks
2 tablespoons all purpose flour
1 1/4 cups half and half
1 15-ounce package All Ready Pie Crusts, room temperature

Steps:

  • Preheat oven to 375°F. Melt butter in heavy medium skillet over medium-low heat. Add corn and sauté 5 minutes. Add green onions and celery leaves and toss to heat through. Remove from heat.
  • Mix cheese, eggs, yolks and flour in medium bowl. Gradually add half and half, stirring until mixture is smooth; add corn mixture.
  • Unfold crusts on work surface and press out fold lines. Line 9-inch-diameter pie dish with 1 crust. Spoon filling into crust-lined dish. Arrange second crust over; pinch edges together to seal and crimp decoratively. Cut several slits in top of crust to allow steam to escape.
  • Bake pie until filling is puffed and golden, about 45 minutes. Let stand 15 minutes; serve warm.

This is my mom's corn pie. We grew up eating this and loving it in the heart of Amish country. It is a very hearty dish, and easy to make. Give this one a try before you decide you won't like it. Corn takes on a whole different flavor made this way. Some people add cooked chicken to the pie as well.

1 large potato, peeled and chopped
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can cream-style corn
3 hard-cooked eggs, chopped
salt and pepper to taste
½ cup milk
1 tablespoon butter
1 (15 ounce) package double crust ready-to-use pie crust

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • In a saucepan over medium heat, stir together the potato, whole kernel corn, creamed corn, hard cooked eggs, salt, pepper and milk. Simmer for about 15 minutes.
  • Press one of the pie crusts in to the bottom and up the sides of a 9 inch pie plate. I like to use clear glass so I can check the bottom crust for doneness. Pour the hot filling into the crust. Dot with pieces of butter. Cover with the top crust, and flute the edges to seal. Cut a few slits in the top crust to vent steam. Place on a cookie sheet that has been lined with aluminum foil for easy clean up.
  • Bake for 30 minutes in the preheated oven, then reduce the temperature to 350 degrees F (175 degrees C). Bake for an additional 10 minutes, or until the crust is browned. Serve hot.

A very tasty side dish, that kids of all ages adore. My nephew, who is 33 years old still asks me to make this dish whenever he sees me, after he tasted it for the first time when he was 11 years old! I think I found this recipe in a South African magazine, but I cannot remember as I have been making this for the past 30 years! ***I have updated the recipe - most of the cheese goes into the pie and a little is sprinkled over the top. I have also added microwave instructions for making white sauce

1 (410 g) can sweetcorn
1 1/2 cups milk
2 ounces flour
2 ounces butter
1 cup tasty cheese, grated
2 eggs
1 pinch salt

Steps:

  • Make a white sauce with the flour, butter & milk - see note below.
  • Add egg yolks, sweetcorn & salt & 3/4 cup of cheese.
  • Beat the egg whites until stiff peaks form and fold into corn mixture.
  • Put into a greased ovenware dish , sprinkle with remaining 1/4 cup of cheese, and bake in a 350 degree over for about half an hour until set.
  • Directions for making white sauce in the microwave:.
  • Place the butter in a microwave safe jug and melt on high for 45 seconds.
  • Stir flour through and microwave for 30 seconds.
  • Now stir in the milk a little at a time, then back in the microwave in 60 second increments, stirring in between.
  • This should take 3-5 minutes dependant on the power of the microwave you are using.

  • Melt 1 1/2 tablespoons butter in a medium skillet over medium high heat. Add onion and cook about 4 minutes, until slightly browned at edges. Turn heat down to medium, add garlic, and cook 2 to 3 minutes, until garlic is fragrant but not browned. Combine onion/garlic mixture in a medium mixing bowl with corn, milk, 1 1/2 cup cheese, 1/2 cup panko, salt and pepper, and chives. After stirring, add eggs and mix well. Pour mixture into prepared pan.
  • Melt remaining 1/2 tablespoon butter, let cool slightly, then combine with 1/4 cup panko, 1/2 cup cheese, 1/2 tablespoon chives, and a pinch of salt and pepper. Sprinkle over the pie filling. Bake (on a rimmed baking sheet for easier handling) about 35 minutes, until slightly puffed, set, and beginning to brown. Cool 5 to 10 minutes before serving, topped with a dash of paprika and more chives, if desired.
  • The pie keeps well for a couple days (at least) when prepared and baked in advance. It would be delicious for an end of summer brunch! Just add mimosas.

  • Peel and cube potatoes and boil covered in water on top of the stove about 8 minutes or until fork tender. Boil eggs in a pot, peel and dice. I use a glass 10 inch pie plate to make this pie but you could use a baking dish. If you add ingredients, you will need something bigger than a pie plate because this recipe fills my pie plate to the top.
  • Drain potatoes and put in plate. Add the corn and chopped eggs and mix together. Sprinkle on salt and pepper. Pour milk over ingredients. Cut butter into small pieces on top. Spread pie crust over the filling and cut 3 slits in top of crust. (I used a Pillsbury frozen pie crust in the photo) place my unbaked pie on a baking sheet in the oven.
  • Bake in a preheated 425 degree oven for 30 minutes then reduce heat to 350 for 10 minutes. Serve the pie on a plate or in a bowl and spoon some of the milk in the bottom of the pie plate over the pie. Makes about 6 servings or 1 large pie
