Brown rice with spinach and Parmesan cheese is an easy, healthy, one-pot side dish with just a few simple ingredients!

1 tablespoon extra-virgin olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 1/4 cups quick cook brown rice (see notes)
1 tablespoon fresh thyme, chopped
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2 1/2 cups low-sodium chicken or vegetable broth
1 (8 oz.) bag fresh spinach, roughly chopped
1/4 cup grated Parmesan cheese (plus extra for serving)

Steps:

  • Heat olive oil in a large pan over medium heat.
  • Add onion and sauté 5-6 minutes, until softened. Add garlic and sauté another 30 seconds.
  • Add quick cook rice, thyme, salt and pepper and stir to get the rice coated in the oils.
  • Add chicken or vegetable broth and bring to a boil. Then cover, lower the heat to medium low and cook 15-20 minutes, until the liquid is absorbed and the rice is cooked through.
  • Add chopped fresh spinach on top of the rice, then cover and let sit for 5 minutes off the heat.
  • Stir spinach into the rice and add Parmesan cheese. Taste and adjust seasoning and serve hot.

This is a dish I stumbled across while I was in China and tried to emulate. Of all my various original recipes, this is the one of my families favorites. It is simple, requires few ingredients and is easy and fast.

¼ cup canola oil
¼ cup unsalted butter
2 (10 ounce) bags fresh spinach leaves
8 cloves garlic, thinly sliced

Steps:

  • Melt the butter with the canola oil in a large skillet over medium heat until it stops bubbling. This allows the water from the butter to evaporate. Add the garlic; cook and stir for about 2 minutes, until it is just beginning to brown. Put in the spinach leaves and cook for about 5 minutes while stirring, until the leaves are dark and are about 1/4 of their original size.

2 tablespoons olive oil
1/2 cup chopped onion
3/4 cup water
1 tablespoon dried parsley flakes
1/4 to 1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup uncooked instant rice
2 cups fresh baby spinach

Steps:

  • In a saucepan, heat oil over medium-high heat; saute onion until tender. Stir in water, parsley, salt and pepper; bring to a boil. Stir in rice; top with spinach., Cover; remove from heat. Let stand until rice is tender, 7-10 minutes. Stir to combine.

This is an easy to throw together not so "fat" fried rice that give you a way to satisy the craving for "fried"

1 1/2 cups spinach, chopped
2 cloves garlic, minced
1 teaspoon dark sesame oil
1/3 cup white wine
1 cup diagonally sliced celery or 1 cup bok choy
1 cup mushroom, thinly sliced
3 cups cooked long grain brown rice
1/4 cup scallion, sliced
2 tablespoons low sodium soy sauce or 2 tablespoons tamari

Steps:

  • In a wok or large frying pan over medium high heat, saute the spinach and garlic in the oil for 2 minutes, stirring constantly.
  • Transfer to a platter In the same pan, heat the wine and saute the celery or bok choy and mushrooms, stirring constantly, for 3 minutes.
  • Add the rice, scallions and spinach.
  • Heat through.
  • Season with soy sauce or tamari.

2 leeks
1 lb spinach, washed stemmed coarsely chopped
3 cups cold cooked brown rice
1 tablespoon fresh ginger, minced
1 tablespoon fresh garlic, minced
1 cup onion, chopped
2 tablespoons low sodium soy sauce
1 tablespoon lemon juice
1 tablespoon lemon zest
2 teaspoons vegetable oil
2 tablespoons fresh cilantro leaves, minced

Steps:

  • Trim the root ends of the leeks. Cut off and discard the upper green parts, about 2 inches above the white bulbs. Make a slit along one side of each leek.
  • Rinse the leek well under cold running water to remove any sand that has lodged in the layers. Slice them into 1/2 inch lengths. Place into a bowl.
  • Place the spinach and the rice into separate bowls. Combine the soy sauce, lemon juice and zest in another bowl. In the last bowl, combine the ginger, garlic and onion.
  • Heat a nonstick wok or large heavy bottomed skillet over high heat for 2 minutes. Add the oil then the onion mixture. Stir-fry for 30 seconds.
  • Add the leeks and stir-fry for 1 minute. Add the spinach and stir-fry for 1 1/2 minutes.
  • Add the rice and stir-fry for 1 minute to heat through. Use a spatula to break apart the cold rice into smaller pieces while you stir-fry.
  • Add the soy sauce mixture and stir to combine. Add the cilantro and stir well. Remove from wok and serve.
