1/2 teaspoon Dijon mustard
1/4 teaspoon honey
1 teaspoon kosher salt

1 tablespoon minced shallot
4 ounces (5 cups) mesclun mix

Steps:

  • In a small bowl, whisk together the oil, vinegar, mustard, honey, salt, pepper and shallots until the vinaigrette is emulsified.
  • Toss the greens with enough dressing to moisten and serve immediately.

Whisk in the mustard, then add the oil in a very slow, thin, steady stream, whisking constantly until the dressing is emulsified. Season with fine sea salt and freshly ground black pepper. This totally reminds me of something I've eaten in a restaraunt...it's so good, and ended up being my favorite part of the entire meal! Best served over a bed of mixed organic baby greens. There aren't a lot of ingredients, so substitutions are not recommended.
