1/4 cup MAXWELL HOUSE INTERNATIONAL CAFÉ Sugar Free French Vanilla Café
1 Tbsp. hot water
2 cups cold fat-free milk
1 pkg. (1 oz.) JELL-O Vanilla Flavor Sugar Free Fat Free Instant Pudding
1/2 cup thawed COOL WHIP FREE Whipped Topping
1 cup sliced fresh strawberries

Steps:

  • Dissolve flavored instant coffee in hot water in medium bowl. Add milk and pudding mix; beat with whisk 2 min. Stir in COOL WHIP.
  • Spoon half the pudding mixture into each of 6 dessert glasses; cover with layer of strawberries. Top with remaining pudding mixture.
  • Refrigerate at least 1 hour before serving.

In this marvelous make-ahead dessert for two, airy chocolate mousse is layered with crushed store-bought spice cookies and topped with generous dollops of whipped cream.

2 large eggs
1/4 cup sugar
3 ounces semisweet chocolate, finely chopped (2/3 cup)
1 tablespoon Dutch-process cocoa powder
2 teaspoons instant espresso powder
1/4 teaspoon kosher salt
1 tablespoon unsalted butter
1/2 cup heavy cream, plus more, lightly whipped, for serving
4 Belgian spice cookies, such as Lotus Biscoff, lightly crushed, plus more for serving

Steps:

  • Whisk together eggs and sugar in a heatproof bowl set over (but not in) a pot of simmering water until doubled in volume and a thermometer registers 160 degrees (6 to 8 minutes). Remove from heat. Add chocolate, cocoa, espresso powder, and salt. Stir in butter until melted. Let cool slightly.
  • Meanwhile, whip cream to stiff peaks. Stir one-third of whipped cream into chocolate mixture until lightened, then fold in remaining whipped cream. Divide half of mousse between two glasses; sprinkle with crushed cookies. Top with remaining mousse and refrigerate until set, at least 1 hour and up to 1 day. To serve, top with lightly whipped cream and more cookie crumbs.

Delicious and easy, this is a fabulous mix of berries and yogurt! If you like, you can make a thin layer of graham crackers or granola in each vanilla/berry layer. That gives it a little more crunch.

2 tablespoons crushed graham crackers

  • Cover the bottoms of two small glasses with a layer of yogurt. Cover layer with berries. Repeat until both glasses are full, ending with a fruit layer. Sprinkle with graham crackers and nutmeg.

2/3 cup plus 2 tablespoons sugar
2/3 cup water
1/2 teaspoon pure vanilla extract
1 cup heavy cream
8 egg yolks
Raspberry sauce (see recipe)

Steps:

  • Combine the sugar and water in a saucepan. Bring to a boil and add the vanilla. Let simmer briefly.
  • Put the cream in a chilled bowl and beat until stiff. Chill until ready to use.
  • Meanwhile, put the yolks in a heavy saucepan and start beating with a wire whisk. Continue beating vigorously while gradually adding the simmering syrup.
  • Put the saucepan on a heatproof pad and continue beating until the volume increases four or five times the original. Do not let the mixture get too hot or it will scramble. It will resemble a light yellow, frothy but well-thickened custard or a sabayon. This should require four or five minutes of vigorous beating.
  • Pour and scrape the mixture into the bowl of an electric mixer. Beat on high speed until the custard is cooled to room temperature, seven minutes or longer.
  • Scrape the whipped cream onto the yolk mixture. Carefully fold it in until well blended. Pour and scrape the mixture into a decorative crystal or other bowl or serving dish.
  • Place the dish in the freezer and let stand several hours or, preferably, over night until frozen. Serve with raspberry sauce.

  • For the fruit: Combine the blueberries, blackberries, strawberries, honey and vanilla extract in a bowl and stir. Let sit for at least 10 minutes.

1 package (3.4 ounces) instant vanilla or French vanilla pudding mix
1 cup whipped topping
1 pint fresh raspberries

Steps:

  • In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Fold in 1 cup whipped topping. Spoon a third of the pudding into six parfait glasses. , Set aside six raspberries for garnish; divide half of the remaining berries over pudding. Repeat layers. Top with remaining pudding and garnish with the reserved berries.

1 pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding
1-3/4 cups thawed COOL WHIP Whipped Topping, divided

Steps:

  • Pour 2 cups of the milk into medium bowl. Add dry chocolate pudding mix and 1/4 cup of the flavored instant coffee. Beat with wire whisk 2 minutes or until well blended.
  • Pour remaining 1-1/2 cups milk into another medium bowl. Add dry vanilla pudding mix and remaining 1/4 cup flavored instant coffee. Beat with wire whisk 2 minutes or until well blended. Gently stir in 1 cup of the whipped topping.
  • Spoon chocolate pudding evenly into 6 dessert glasses; cover with vanilla pudding mixture. Top with remaining 3/4 cup whipped topping. Refrigerate several hours or until ready to serve.

500 g heavy whipping cream (36% fat)
200 g egg yolks
160 g sugar
500 ml milk
10 g vanilla

Steps:

  • Whip cream until soft peak, set aside and chill.
  • Whisk eggyolk and sugar in a bowl. Set aside.
  • In a saucepan, boil milk. Once boiling, pour some into egg mixture, while whisking constantly (pour gradually because you might cook the eggs) after all milk is poured,.
  • Bring back the mixture into the saucepan, cook until the mixture slightly thickened (or until it coats the back of the spoon).
  • Strain into another bowl, place over ice bath and stir.
  • Once mixture is cooled, fold in the whipped cream, vanilla.
  • Place in containers and freeze.
  • NOTE: i added chopped nougatine to flavor it a bit during the folding.
