Delicious Stuffed French Toast is just what weekends were made for! Classic French Toast fried to golden perfection and stuffed with fresh strawberries and cream cheese takes this easy breakfast to the next level. A sweetly satisfying breakfast dish that is perfect for brunch!

3 eggs
1/2 cup half and half (you can also use whole milk)
1 tsp vanilla extract
2 tsp ground cinnamon
1/4 tsp ground nutmeg
2 tbsp brown sugar
10 slices Brioche or any thick cut artisan type bread (the thicker the better (about 8-10 slices))
8 oz cream cheese (softened)
3/4 cup powdered sugar
1/2 tsp fresh lemon zest
1 cup fresh strawberries (sliced thin)
2 tbsp granulated sugar
1 tbsp fresh lemon juice (about half of one lemon)
8 tbsp butter (for frying (bacon fat is also good here))

Steps:

  • Combine eggs, half & half, vanilla, cinnamon, nutmeg and brown sugar in a shallow bowl.
  • Whisk well until all of the ingredients are fully incorporated. Set aside.
  • In a separate bowl, stir together strawberries, sugar, and lemon juice until just combined. Set aside.
  • In a small bowl beat together cream cheese, powdered sugar, and fresh lemon zest until smooth and well combined, about 1 minute.
  • Take two slices of bread and spread about 1 1/2 tablespoons of the cream cheese mixture onto each piece of bread keeping clear of the edges.
  • Pat strawberries dry with a paper towel to soak up any excess juices. Layer strawberries in a single layer on one piece of bread and place the other piece of bread on top..
  • Melt 2 tablespoons of butter in a large skillet over medium heat.
  • Dip each "sandwich" in egg mixture until fully coated. Quickly transfer French toast to the hot, greased skillet.
  • Cook each side for about 2 to 3 minutes, or until each golden brown.
  • Serve warm with powdered sugar, maple syrup fresh strawberries, or whipped cream (or top with everything!).

This is a nice change from ordinary French toast. I make this more than the standard recipe. Although this is my family's favorite version, it is very versatile. You can substitute peanut butter for the cream cheese, use different jams or preserves, different extracts or spices - the options are practically limitless! Serve with maple syrup and sprinkle with powdered sugar.

½ cup seedless raspberry jam
5 eggs, beaten

One 8-ounce package cream cheese, softened
1/3 cup fruit jam, such as sour cherry
1/4 cup slivered almonds, plus for garnish
1 loaf challah bread
4 eggs
1 teaspoon almond extract
1 tablespoon light brown sugar
1 cup milk
2 tablespoons butter
Maple syrup, for serving

Steps:

  • Preheat a cast-iron griddle over low heat; preheat the oven to 300 degrees F.
  • Combine the cream cheese, jam and slivered almonds in a small bowl and beat with an electric mixer.
  • Slice the challah into 2-inch-thick slices. With a pairing knife, make a 1/2-inch horizontal slit in the bottom crust of each slice to form a pocket.
  • Using a butter knife, fill each slice with some of the cream cheese mixture. Set aside.
  • Whisk together the eggs, almond extract, brown sugar and milk in a large baking dish. Dip the stuffed challah slices into the egg mixture, turning to fully coat each slice.
  • Increase the temperature on the preheated griddle to medium heat; add the butter, let it melt, and then place the stuffed and dipped challah onto the griddle. Cook until golden brown, about 4 minutes per side. Transfer to a baking sheet fitted with a baking rack, and hold in the oven to keep warm. Serve with slivered almonds and maple syrup.

Steps:

  • Batter:
  • Combine all ingredients in a large bowl, mixing well until incorporated. Keep refrigerated until ready to use.
  • Filling:
  • Fold all ingredients together in a bowl until well incorporated but not completely smooth.
  • Syrup:
  • Combine all ingredients in a saucepan over medium-high heat. Stir until sugar dissolves. Bring to a boil and let reduce by 1/3.
  • French Toast:
  • Preheat oven to 350 degrees F.
  • Heat a large saute pan and then add butter. Dredge the bread in the batter and place in the pan. Cook until golden brown on both sides, approximately 2 minutes. Remove from pan and let cool. Divide filling between 2 pieces of the bread top with the remaining 2 pieces of bread. Transfer French toast to oven and bake for 8 minutes.
  • Cut each French toast in half and serve with the cinnamon syrup and, if desired, a large scoop of vanilla ice cream and fresh berries.

2 eggs
1 cup milk
1 pinch salt
6 tablespoons cream cheese
1 pinch cinnamon
1 teaspoon sugar
1/2 teaspoon vanilla extract

1/2 cup sour cream
1/2 cup strawberry, cut up

Steps:

  • Cut each slice of bread in half.
  • Beat eggs with milk and pinch of salt.
  • In separate bowl, mash cheese until smooth with cinnamon, sugar, and vanilla, adjusting to taste.
  • Spread one-fourth of cheese filling evenly over four slices of bread.
  • Top with unspread slices of bread to form half-sandwiches.
  • Dip and soak each sandwich in egg-milk mixture, turning so both sides of each sandwich absorb liquid.
  • Let excess drip off.
  • Heat unsalted butter in 10 inch skillet, and when hot but not brown, add sandwiches.
  • Reduce heat and fry slowly for 5 to 7 minutes, or until first side is golden.
  • Turn and brown second side over low heat.
  • If sandwiches fry too quickly, filling will not be warm.
  • Serve immediately, allowing 2 halves to each portion.

½ cup white sugar

1 ½ cups milk
2 tablespoons vanilla extract

Steps:

  • Set a rack in the lower third of the oven and preheat to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Place apples in a saucepan; cover with water. Bring to a boil; allow to cook for 2 to 3 minutes. Drain apples and toss with white sugar and cinnamon. Set aside.

Whenever you have a little extra time to simmer berries into a simple compote, do - then try stuffing it into hearty French toasts and dusting them with confectioners' sugar. They'll almost remind you of a jelly doughnut, even more so if you use brioche hamburger buns as your bread of choice. (But regular white sandwich bread, challah or any other enriched bread works, too.) You can adjust the sugar in the berries, depending on how sweet they are, and, if you prefer a smoother compote, press the cooked fruit through a mesh sieve once cooled to remove any seeds.

1 pint/285 grams fresh or frozen blackberries, raspberries or blueberries (about 2 heaping cups)
1/3 cup plus 3 tablespoons/100 grams granulated sugar
1 tablespoon lemon juice
Kosher salt

1/4 cup/60 milliliters whole milk
1 to 2 tablespoons dark rum, bourbon or brandy
2 teaspoons vanilla extract
8 slices brioche or white sandwich bread (each about 1/2- to 3/4-inch thick)
Unsalted butter, for frying
Confectioners' sugar, for dusting

Steps:

  • Place the berries, 1/3 cup/70 grams granulated sugar, the lemon juice and 1/4 teaspoon salt in a small saucepan. Roughly crush the berries with the back of a fork to help release some of their juices.
  • Bring to a boil over high heat, then reduce heat to medium-low, cover with a lid and cook at a strong simmer, stirring occasionally to ensure the berries never stick to the bottom and burn, until the sauce has thickened and reduced by half, about 20 minutes. Remove from the heat and allow to cool and thicken for another 10 minutes.
  • In a large mixing bowl, whisk to combine the eggs, milk, rum, vanilla, a pinch of salt and the remaining 3 tablespoons/30 grams granulated sugar; set aside.
  • Lay 4 pieces of bread out on a plate or tray, and divide the cooled fruit across the bread (about 2 to 3 tablespoons each), leaving roughly 3/4-inch of space around the edges of the bread. Top with the remaining 4 slices of bread, and press down lightly to adhere.
  • Heat a large frying pan or griddle over medium-high and melt enough butter to coat the bottom. Just as the butter begins to bubble, float a sandwich on top of the egg batter for 3 seconds, then flip to soak the other side for 3 more seconds. Hold the sandwich over the bowl for 10 seconds to allow any excess batter to drip off, then transfer it to the hot pan. Repeat with as many sandwiches as will fit in your pan; you may need to do this in batches. Cook until deep golden brown, 1 to 2 minutes per side, adding butter to the pan as needed. Transfer to plates and dust generously with confectioners' sugar.
