BROILED FLOUNDER WITH BUTTER AND LEMON



Broiled Flounder with Butter and Lemon image

Lemon brings out the natural flavor of mild, light flounder, while chili flakes give it an extra punch.

1 lemon
1/2 tsp. seedless chili flakes
2 tbsp. whole butter
2 tbsp. Extra virgin olive oil
2 fillets of flounder or other similar white fish

Steps:

  • Pre-heat broiler. In a glass baking dish add the lemon juice, chili flake, butter and olive oil. Place in oven for about one minute, just long enough to melt the butter and remove.
  • Season fish lightly with salt and pepper. Dredge the fish in the melted butter-lemon mixture and place under broiler for 6 to 8 minutes. To serve place on a serving plate and spoon the sauce from the dish on top.
  • Note: Broilers that are under the oven can be too hot for this dish. Ideally you want the dish to broil at least ten to twelve inches below the fire. If your broiler is too close to the fish then use the same method except bake the fish in a 500 degree oven for a very similar effect.

8 skinless, boneless fillets of flounder, about 1 1/2 pounds
Salt to taste if desired
Freshly ground pepper to taste
1 egg
2 tablespoons water
1/4 cup flour
2 or more tablespoons corn, peanut or vegetable oil
3 tablespoons butter
1 tablespoon freshly squeezed lemon juice
1 tablespoon finely chopped parsley

Steps:

  • Place the fillets on a flat surface and sprinkle with salt and pepper.
  • Break the egg into a shallow wide dish and add salt, pepper and water. Beat well to blend.
  • Spoon the flour onto a flat dish.
  • Dip the fillets in the flour. Coat well on all sides, but shake off excess flour.
  • Dip the fillets in the egg mixture to coat well on all sides. Drain off excess egg mixture.
  • Heat enough oil in a skillet to coat the bottom lightly. Add a few pieces of fish at one time in a single layer without crowding. Let cook about 1 1/2 minutes or until golden brown on one side. Turn the pieces carefully and cook on the second side about one minute or until golden brown. Carefully transfer the pieces to a warm serving platter.
  • Continue cooking the fish a few pieces at a time, adding more oil as necessary.
  • Wipe the skillet and add the butter. Cook until the butter is melted and starts to brown. Add the lemon juice. Pour the butter over the fish. Sprinkle with parsley and serve.

This is one of the easiest ways to prepare fish. We ate lots of flounder growning up. I say that tongue-in-cheek. We actually did eat lots of fish, but for some reason when she was really little my baby sister declared the only fish she liked was flounder. So whenever we had fish, no matter what kind it was, if somewhat asked what kind of fish it was we always answered, "Flounder (wink,wink)."

4 (4 -6 ounce) flounder fillets
1 tablespoon Old Bay Seasoning
lemon wedge

Steps:

  • Line a shallow baking pan with aluminum foil. Lightly brush foil with small amount of butter.
  • Arrange fish fillets on foil. Brush fillets with remaining butter. Sprinkle Old Bay Seasoning on fillets.
  • Broil five inches from heat 10 minutes or until fish flakes easily when tested with a fork. Squeeze lemon wedges over fillets.

1/4 cup finely chopped green bell pepper
1 garlic clove, minced
2 teaspoons vegetable oil
2 tablespoons fine dry bread crumbs
2 flounder fillets (each about 6 ounces)
2 tablespoons mayonnaise

Steps:

  • In a heavy skillet cook onion, bell pepper, and garlic in oil over moderately low heat, stirring occasionally, until vegetables are softened and stir in bread crumbs and salt and pepper to taste.
  • Preheat broiler.
  • On a work surface arrange flounder skinned sides up and spread top with mayonnaise. Sprinkle flounder with bread crumb mixture and on oiled rack of a broiler pan broil about 6 inches from heat until cooked through, about 6 minutes.

WHOLE ROASTED BABY FLOUNDER WITH SWEET ONION MARMALADE



Whole Roasted Baby Flounder with Sweet Onion Marmalade image

Here I use the sweet onion for a fairly rustic dish. The flounder is both crunchy and tender, and the onions just seem to melt into a sauce. If the onions are too sweet, stir a few drops of lemon juice into the sauce just before serving. Sometimes we serve the flounder with the sauce on top, directly on a bed of mashed potatoes. It's a little messy, but it's a delicious combination.

12 cups finely sliced Wadmalaw Sweets or other sweet onions, such as Vidalia or Maui (about 3 pounds)
1 1/2 cups chicken stock
2 cups heavy cream
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup red wine vinegar
4 12- to 18-ounce dressed baby flounders
1 cup all-purpose flour
1 tablespoon salt
1 tablespoon freshly ground black pepper
1/4 cup peanut oil
8 tablespoons unsalted butter

Steps:

  • To prepare the marmalade, bring the onions and stock to a simmer in a heavy-bottomed saucepan over medium-high heat. Reduce the heat to low, cover, and let gently simmer for 1 hour, stirring occasionally.
  • Meanwhile, put the cream in a small heavy-bottomed saucepan and bring to a simmer over medium heat. Reduce the heat to low and simmer for 30 minutes or until the cream reduces by half.
  • Uncover the onions, add the salt and pepper, and increase the heat to medium. Cook the onions, stirring occasionally, for about 10 minutes or until the liquid begins to get syrupy. The onions should be very slightly browned. Stir in the reduced cream and simmer for about 20 minutes or until the mixture is a little thicker than heavy cream.
  • Add the vinegar, stir to combine well, and simmer for 1 to 2 minutes to meld the flavors. Keep warm while cooking the fish. (Cooled and then tightly covered, the marmalade will keep in the refrigerator for 2 to 3 days.)
  • Preheat the oven to 400 degrees F.
  • Rinse the flounder and pat dry. In a shallow plate, combine the flour, salt, and pepper. Dredge both sides of the flounder in the seasoned flour, shaking to remove the excess.
  • Heat the oil and butter in a large skillet over medium-high heat until the butter begins to sizzle. One at a time, carefully lay the flounder in the skillet, white-skin side down. After 2 minutes, sneak a peak at the bottom side to make sure it is browning without burning, but don't be timid--a nice nutty brown is good. Carefully turn the flounder with a spatula and cook about 2 minutes or until browned. Transfer the fish to a baking sheet large enough to hold them all in a single layer.
  • Roast the flounder in the top third of the preheated oven for 6 to 8 minutes, depending on their size. Look closely: the inside of the fish should be just flaky and opaque. It is important not to overcook them. While the fish are roasting, warm the marmalade to a simmer. Place the fish on warm serving plates, top with the warm sauce, and serve immediately.

10 ounces flounder, cleaned scaled and ready to cook (per person)
1/2 tablespoon lemon juice (per fish)
1/8 teaspoon garlic powder (per fish) or 1/2 garlic clove, small minced (per fish)
1 pinch white pepper (per fish)
1/4 cup balsamic vinegar (for sauce)
1/2 cup virgin olive oil (for sauce)
1/2 cup sugar substitute (for sauce)
3 tablespoons catsup (for sauce)
1/4 teaspoon salt (for sauce)
1/2 teaspoon white pepper (for sauce)

Steps:

  • Sauce: Put all sauce ingredients [everything labeled "for sauce"] together in blender and blend until smooth and refrigerate for 2 hours to "cure" or thicken a bit.
  • Prep: Score top of flounder in diamond pattern, dash carefully with lemon juice, add garlic, and sprinkle with the pinch of white pepper.
  • Brush liberally with sauce and broil for 2 minutes, brushing once more. Return to broil for 2-4 more minutes or until fish is light and flaky when prodded gently with fork.
  • You should have enough sauce for 8 fish, and therefore [depending on how many fish you're baking], will have sauce left over for salad, vegetable dip, etc.

6 ounces Parmesan cheese
Pinch parsley
8 ounces milk
2 cups chicken stock
1/2 cup lemon juice
1/2 cup sugar
4 (6-ounce) flounder fillets
12 (16/20 count) shrimp, cleaned and deveined
Butter, to taste
Lemon juice, to taste
White wine, to taste

Steps:

  • Combine all ingredients and mix well.
  • In saucepan combine all ingredients. Bring to a boil and reduce by 1/2.
  • Preheat Oven: 350 degrees. Dip fillets in batter and cook in a nonstick pan with a small amount of cooking spray. Cook on both sides until fillets are golden brown. Place fillets on oven pan and bake for 5 to 6 minutes. Saute shrimp with a small amount of butter, lemon juice and white wine. Place on top of fillets and serve topped with sweet lemon sauce.

2 lbs flounder fillets or 2 lbs other white fish fillets
2 tablespoons lemon juice (for a nice twist, try lime juice!)
1/2 cup parmesan cheese
1/4 cup butter, softened
3 tablespoons good quality mayonnaise (Best Foods, Hellmann's, or Vegenaise)
3 green onions, chopped
1/4 teaspoon salt
1 dash hot sauce, to taste

Steps:

  • Place fillets in a single layer on a lightly greased or pan sprayed, shallow oven-to-table type broiler pan. Brush with lemon juice.
  • In a small bowl, combine remaining ingredients to make the cheese topping mixture. Set aside.
  • Broil fillets 4 to 6 minutes or until fish flakes easily when tested with a fork. (Time will depend on the thickness of the fillets and temperature of your oven/broiler.).
  • Remove fillets from oven. Spread with Parmesan topping.
  • Broil an additional 30 seconds or until cheese is lightly browned and bubbly (be careful to watch it, or it can burn).
  • Garnish with lemon twists and parsley, if desired.
  • Note: Mushy cooked fish is a result of either 1) overcooking/overheating, or 2) over-marinating (which, science-wise, is another method of partial cooking, depending on the marinade). Since the flounder in the recipe is not marinated, if the fish comes out mushy I suspect the results are the from overcooking. Either the fish was left under the broiler for too long, the temperature of the broiler is too high, or the rack on which the the pan placed under the broiler is too close to the heat.

This is from an old WW cookbook (Weight Watchers 365 Day Menu Cookbook), before they had points, but I think if following the WW flex plan this is about 3 points per serving. I also think this will work for other fish -- although the point value may change along with the cooking time if using a thicker fish. This is good served with baked potatoes and salad for a very low point meal that no one will ever guess is Weight Watchers. Although this serves only 2 - it is easily adjusted to serve as many servings as needed.

My mom passed away before she could give me her recipe, but I think I got it close. It is a simple way to do a great fish, if your lucky enough to get a whole flounder.

1 whole flounder
1/4 cup butter
1 lemon
1 tablespoon Worcestershire sauce
2 garlic cloves, minced
2 teaspoons black pepper
1 teaspoon salt

Steps:

  • Heat brolier on high.
  • Score the fish in two or three spots on the dark side.
  • Melt butter and worcestershire sauce with juce from half a lemon and garlic.
  • Rub fish down with salt and pepper on both sides, depending on the size of your fish you might need more or less salt and pepper.
  • Put fish under the broiler for 3 minuets.
  • Slide the fish out of the broiler and paint it with butter and garlic sauce every minuet or so untill the fish is done. I follow this rule: if you can stick a toothpick into the widest part of the fish, then place the toothpick to your lips and the toothpick is warm, your fish is done.
  • When fish is done drizzle with the juice from the other half of your lemon.
  • I like putting the whole fish on the table and let everybody digin.
