FRENCH APPLESAUCE CAKE
I'm not sure what's French about this cake, exactly, but it's spicy and moist. It's also egg and dairy free and fairly low fat.

Steps:
- Combine first 9 ingredients in a large bowl.
- Heat applesauce and oil slightly in microwave and add to dry ingredients.
- Mix thoroughly.
- Pour into 9x13 pan that has been sprayed with nonstick spray.
- Bake at 350* for 45 minutes.
- (Can also be baked in a bundt pan at 325* for 45 minutes. Cool in pan for about 20 minutes, then turn out and cool on rack.) Can be eaten as is, or dust with powdered sugar or frost with your favorite buttercream or cream cheese frosting.

- Beat 4 minutes at medium speed.
- Pour into a greased and floured Bundt pan.
- Bake at 350 degrees for 50 to 55 minutes.
- Top with glaze.
- Glaze.
- 1 tablespoon hot milk or water.
- 1 cup sifted confectioner's sugar.
- Stir hot milk or water into confectioner's suigar.
CHUNKY FRENCH APPLESAUCE
This will keep covered tightly for up to 4 days ahead, make certain to add in the sugar at the end of cooking, it makes a difference in the texture of the applesauce, the complete recipe can be doubled and the applesauce can be cooled and frozen in 1/2 - 1 cup plastic containers, this applesauce freeze well, use it in cakes and muffin recipes to add moistness, or simply as a dessert, it's much better than the store-bought and much cheaper too!. We love this sprinkled with brown sugar on top!

Steps:
- Melt butter in a large saucaepan over medium heat; add in apple slices, stir for 1-2 minutes until well coated with the butter.
- Add in water or apple juice, lemon juice and cinnamon (if using) cover and cook stirring occasionally until the apples are tender (about 20-25 minutes, if the apples become to dry then add in 1-2 tablespoons water or apple juice).
- Once the apples are tender, stir in 4-6 tablespoons sugar (can use more or less to taste) until dissolved.
- Chill covered in refrigerator or freeze.

- Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. Place pan on a wire rack. Dust with confectioners' sugar if desired. Serve warm or cold.
