I'm not sure what's French about this cake, exactly, but it's spicy and moist. It's also egg and dairy free and fairly low fat.

Number Of Ingredients 11

2 cups flour
1 1/2 cups sugar
1 teaspoon baking soda
2 teaspoons cinnamon
1 1/2 teaspoons nutmeg
1/2 teaspoon salt
1 1/2 teaspoons cloves
3 tablespoons cocoa (e.g. Hershey's)
1 tablespoon cornstarch
1/2 cup oil
2 cups unsweetened applesauce

Steps:

  • Combine first 9 ingredients in a large bowl.
  • Heat applesauce and oil slightly in microwave and add to dry ingredients.
  • Mix thoroughly.
  • Pour into 9x13 pan that has been sprayed with nonstick spray.
  • Bake at 350* for 45 minutes.
  • (Can also be baked in a bundt pan at 325* for 45 minutes. Cool in pan for about 20 minutes, then turn out and cool on rack.) Can be eaten as is, or dust with powdered sugar or frost with your favorite buttercream or cream cheese frosting.

1 (18 ounce) package yellow cake mix
1 (3 ounce) package French vanilla instant pudding
4 eggs
1/3 cup oil
1/3 cup sour cream
1 cup applesauce
1 cup chopped raisins
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Blend all ingredients.
  • Beat 4 minutes at medium speed.
  • Pour into a greased and floured Bundt pan.
  • Bake at 350 degrees for 50 to 55 minutes.
  • Top with glaze.
  • Glaze.
  • 1 tablespoon hot milk or water.
  • 1 cup sifted confectioner's sugar.
  • Stir hot milk or water into confectioner's suigar.

CHUNKY FRENCH APPLESAUCE

This will keep covered tightly for up to 4 days ahead, make certain to add in the sugar at the end of cooking, it makes a difference in the texture of the applesauce, the complete recipe can be doubled and the applesauce can be cooled and frozen in 1/2 - 1 cup plastic containers, this applesauce freeze well, use it in cakes and muffin recipes to add moistness, or simply as a dessert, it's much better than the store-bought and much cheaper too!. We love this sprinkled with brown sugar on top!

6 -8 apples, peeled, cored and thinly sliced (use Golden Delicious or McIntosh, about 3 pounds)
3 tablespoons butter
1/4 cup water or 1/4 cup apple juice
3 teaspoons fresh lemon juice
4 -6 tablespoons sugar (or to taste)
1 -2 teaspoon cinnamon (optional)

Steps:

  • Melt butter in a large saucaepan over medium heat; add in apple slices, stir for 1-2 minutes until well coated with the butter.
  • Add in water or apple juice, lemon juice and cinnamon (if using) cover and cook stirring occasionally until the apples are tender (about 20-25 minutes, if the apples become to dry then add in 1-2 tablespoons water or apple juice).
  • Once the apples are tender, stir in 4-6 tablespoons sugar (can use more or less to taste) until dissolved.
  • Chill covered in refrigerator or freeze.

3/4 cup raisins
1 cup hot water
1/2 cup shortening
2 cups sugar
1 large egg
2-1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon each ground cinnamon, cloves and nutmeg
1-1/2 cups applesauce
1/2 cup water
1/2 cup chopped walnuts
Confectioners' sugar, optional

Steps:

  • Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. Place pan on a wire rack. Dust with confectioners' sugar if desired. Serve warm or cold.

4 eggs
1/3 c oil
1/3 c sour cream
1 c applesauce
1 c chopped nuts or raisins
1/2 tsp cinnamon
1/4 tsp nutmeg
caramel ice cream topping (optional)
GLAZE
1 Tbsp hot milk or water
1 c sifted confectioner's sugar

Steps:

  • 1. Blend all ingredients, except nuts or raisins. Beat 4 minutes at medium speed. Stir in nuts or raisins.
  • 2. Pour into a greased and floured Bundt pan.
  • 3. Bake at 350 degrees for 50-55 minutes.
  • 4. Top with glaze. Glaze: Stir hot milk or water into confectioner's sugar or drizzle with caramel ice cream topping.
