MAKE-AHEAD FREEZER PIZZAS
Steps:
- In bowl of stand mixer fitted with dough hook, or in large bowl if you plan to knead by hand, mix 2 cups of the flour, the yeast and salt.
- In 1-quart saucepan, heat honey, water and olive oil over medium-low heat 3 to 4 minutes or until honey is melted and mixture is smooth. Pour into bowl of dry ingredients. Mix until combined.
- With mixer on low speed, begin adding the remaining flour 1/4 cup at a time until dough clears the bowl and is only slightly sticky to the touch. You may not need all 4 cups of the flour. Continue to knead dough 5 to 7 minutes or until smooth and elastic.
- Place dough in greased bowl, and cover with plastic wrap. Let rise in warm place until doubled, about 1 hour.
- Gently punch down dough, and knead by hand a few times. Let rest 10 minutes.
- Line large cookie sheet with cooking parchment paper. Divide dough in half; roll each half into 10-inch circle. Transfer to cookie sheet. Cover with plastic wrap, and let rise while you heat oven to 450°F.
- Bake 3 to 5 minutes or until puffed and top appears dry but not at all browned. Cool completely.
- Top as desired, then double wrap in plastic wrap. Store in freezer up to 2 months.
- When ready to bake, remove from freezer and remove plastic wrap. Place on cookie sheet lined with cooking parchment paper, and bake at 450°F 12 to 15 minutes or until crust is golden and cheese is melted.

- Make up the bread dough following pack instructions, and transfer to an oiled bowl to rise for about 1 hr.
- Knock back in the bowl by squashing all the air out of the dough with your fist. Divide the dough into 6 and roll each one on a lightly floured surface to a circle about 18cm in diameter. Put dough you're not using under a damp tea towel or oiled cling film to stop it drying out.
- Put the pizza bases on large oiled baking sheets - you may need 2 or 3. Spread 1 tbsp sauce or passata on each base, then scatter on the basil, tomatoes, mozzarella and Parmesan (or whatever you fancy). You can freeze the pizzas now, if you like, on the baking sheet, wrapped in cling film. Or if eating straight away, heat oven to 240C/220C fan/gas 9. Cook for 8-12 mins, until crisp and golden. To cook from frozen, remove the cling film and heat oven to 220C/200C fan/gas 7. Bake for 10-14 mins until crisp and golden.

HOMEMADE FREEZER PIZZA
Instead of buying one of those freezer pizza's that you can't really choose the toppings on why not make a few yourself and have ready in the freezer! This tried-and-true method preserves a fresh, crisp crust even through the freezing process! The secret's in the cheese; when applied to the crust before any toppings or sauce, the cheese seals the crust against the moisture in the sauce. Do not thaw before baking!

Steps:
- Put in automatic bread machine: place ingredients in container in following order: water, olive oil, flour, sugar, salt and yeast.
- Select Dough setting and press Start.
- Spray pizza pan with non-stick cooking spray or brush with olive oil.
- Gently stretch pizza crust to fit pan, forming raised edge at lip.
- Sprinkle crust with grated mozzarella cheese.
- Dot with browned sausage, ground beef, pepperoni and chopped and sautéed onion.
- Gently spread marinara sauce to cover cheese and toppings.
- Sprinkle with parmesan cheese and salt to taste.
- To freeze: flash freeze pizza in pan.
- When frozen, wrap in aluminum foil.
- To prepare: do not thaw pizza.
- Heat oven to 400°.
- Bake frozen pizza for 20 to 25 minutes, until crust is browned, sauce bubbles and cheese is fully melted.

- Preheat oven to 350 degrees. In large bowl, combine the butter and cheese spread and blend well. Crumble the sausage into a large skillet and cook over medium heat together with the onion until sausage is cooked and onion is tender. Drain well on paper towels. Mix the cooked sausage mixture with the cheese mixture. Spread mixture generously on split side of muffin halves. Place on an ungreased cookie sheet and bake at 350 degrees for 10-15 minutes. Eat right away, if you like.
- Cool the ones you want to freeze and freeze individually on trays. Wrap well and place in heavy duty ziplock freezer bags. To prepare, microwave each pizza for one to two minutes on high power until pizzas are hot and the cheese is melted. 24 pizzas.
