HOT DOG CASSEROLE

When our children were small and I was busy trying to get all those extra things done that are part of a mom's normal schedule, I would make this quick hot dish. Kids love it.-JoAnn Gunio, Franklin, North Carolina

Number Of Ingredients 9

3 tablespoons butter
2 tablespoons all-purpose flour
1 to 1-1/2 teaspoons salt
1/4 to 1/2 teaspoon pepper
1-1/2 cups 2% milk
5 medium red potatoes, thinly sliced
1 package (1 pound) hot dogs, halved lengthwise and cut into 1/2-inch slices
1 medium onion, chopped
1/3 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350°. In a small saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir until thickened and bubbly, 2 minutes. , In a greased 2-1/2-qt. baking dish, layer with a third of the potatoes, half of the hot dogs and half of the onion. Repeat layers. Top with remaining potatoes. Pour white sauce over all., Bake, covered, for 1 hour. Uncover; sprinkle with cheese. Bake until potatoes are tender, 10-15 minutes longer.

So easy, so fast, and so tasty. You'll do better with this recipe using real cheese, not cheese food product. From the Wisconsin Dutch chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

12 hot dogs
12 slices bacon
1/2 lb American cheese

Steps:

  • Preheat broiler.
  • Cut a lengthwise slit in each hot dog.
  • Cut a strip of cheese the length of the slit about 1/4" thick; fill the slit with cheese and wrap a slice of bacon around the hot dog, securing the ends with a toothpick.
  • Broil slowly, turning often, until the bacon and hot dogs are cooked through and browned.

3/4 cup macaroni
6 frankfurters
1/3 cup onion, chopped
1/3 cup green pepper, chopped
2 tablespoons butter
3 tablespoons flour
1 teaspoon Worcestershire sauce
1/2 teaspoon mustard
1 cup milk
1 1/2 cups cream-style cottage cheese

Steps:

  • Cook macaroni according to package directions; drain well.
  • Thinly slice four of the frankfurters; set aside.
  • Cook onion and green pepper in butter till tender but not brown.
  • Blend in flour, worcestershire, mustard, 1/4 teaspoons salt and dash of pepper; add milk all at once.
  • Cook and stir till thickened and bubbly.
  • Stir in the sliced franks, cooked macaroni, and cottage cheese; mix well.
  • Turn into a 1 1/2 quart casserole.
  • Bake, uncovered at 350 for 20 minutes, stirring once.
  • Cut remaining 2 franks diagonally into thirds; arrange atop casserole.
  • Bake till heated through, 15 minutes more.

1 ½ pounds bulk pork sausage
3 ½ cups milk, divided
8 eggs
¾ teaspoon dry mustard
8 slices bread, torn into small squares
2 cups shredded mozzarella cheese
1 (10.75 ounce) can condensed cream of mushroom soup

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Beat 2 1/2 cups milk, eggs, and mustard in a large bowl.
  • Spread bread squares into the bottom of a baking dish. Layer mozzarella cheese atop the bread and top with sausage. Pour the egg mixture over the entire dish. Cover the baking dish with plastic wrap and refrigerate 8 hours to overnight.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Stir cream of mushroom soup and 1 cup milk together in a bowl. Remove and discard plastic wrap from baking dish. Pour soup mixture over the 'bake.'
  • Bake in preheated oven until hot in the center, about 90 minutes.

2 (8 ounce) cans refrigerated crescent rolls

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease the bottom of a 9x11 inch baking dish.
  • Cook the sausage in a skillet over medium heat until crumbly and beginning to brown; drain. Stir the cream cheese into the cooked sausage.
  • Roll the dough from one can of crescent rolls into the bottom of the prepared baking dish without separating. Bake in the preheated oven for 5 minutes.
