Steps:
- To cook brown rice in a 30-minute meal it must be soaked for 2 hours. Cover rice with water and allow to soak. To cook, bring rice with water to boil. Reduce heat to simmer; cover and cook rice about 20 minutes, or until tender and water has evaporated.
- Slice onions and put garlic through press. Saute in hot oil until onions are soft, about 5 minutes.
- Wash and slice mushrooms; mince ginger. Add to onions with raisins and spices. Continue sauteing until mushrooms are soft.
- Stir vegetables into rice with cashews. Add vegetable broth; stir to mix well and heat broth. Serve.

A FRAGRANT, SPICY RICE
This recipe is a family favourite. It has wonderful textures; the softness of the rice combined with the crunchy almonds ... it's heaven! The spices can be altered to your tastes... I generally add quite a lot.

Steps:
- In a pot, bring 2 1/2 cups broth to a boil. Mix in green onions and peas. Season with salt, 1 pinch garam masala, 1 pinch turmeric, and cayenne pepper to taste. Stir the basmati rice into the pot. Reduce heat to low, cover, and simmer 20 minutes.
- Melt the butter in a wok over medium-high heat. Cook and stir the mushrooms and garlic in the melted butter until lightly browned. Mix in green bell pepper and red bell pepper. Season with 1 teaspoon garam masala, 1 pinch turmeric, and cayenne pepper to taste. Stir in the lentils and 3/4 cup broth. Reduce heat to low. Cook 20 minutes, stirring occasionally, until lentils are tender.
- In a skillet over medium heat, cook the almonds, stirring frequently, until lightly browned. Remove from heat, and set aside.
- Increase wok heat to medium. Mix the rice into the wok with the vegetables and lentils. Cook and stir until all liquid has evaporated. Garnish with toasted almonds and cilantro sprigs to serve.

- Rinse the rice under cold water. Combine the rice, water, coconut milk, ginger, soy sauce, lemongrass, and curry leaves in a saucepan and stir. Bring to a boil over medium heat; reduce heat to low and simmer uncovered until rice is tender, about 10 minutes. Fold the basil into the rice. Serve immediately.

- Turkey:
- If using a raw turkey breast, sprinkle turkey all over with salt; place on a wire rack set inside a rimmed baking sheet and chill, uncovered, at least 6 hours and up to 1 day. (This will result in tender, flavorful meat.)
- Place turkey, scallions, ginger, and star anise in a stockpot. Pour in water to cover turkey by 1". Bring to a boil, then reduce heat and simmer, skimming foam from surface as needed, until an instant-read thermometer inserted into thickest part of breast registers 150°F, about 75 minutes. Transfer turkey to a cutting board and let sit until cool enough to handle (internal temperature should rise to 165°F while the turkey cools).
- Strain stock through a fine-mesh sieve into a large heatproof bowl; discard solids. Pour 3 cups stock into a large heatproof measuring glass and set aside for sauce; reserve remaining stock for another use.
- Shred turkey with a fork or your hands, removing and discarding skin (or shred along with meat if you prefer).
- If starting with leftover turkey: Preheat oven to 350°F. Spread turkey in an even layer on a rimmed baking sheet, drizzle stock over, and cover tightly with foil. Cook until warmed through, about 15 minutes.
- Sauce:
- Heat lard in a medium saucepan over medium-low. Add shallots (it will not look like enough fat at first) and cook, stirring often, until softened into a single layer, then continue to cook, stirring occasionally, until golden brown, 20-25 minutes total. (Shallots will crisp as they cool.)
- Drain shallots in a fine-mesh sieve set over a heatproof bowl. Transfer shallots to paper towels to drain; set aside. (You don't need to salt them.) Heat shallot fat in a medium saucepan over medium. Add garlic and cook, stirring often, until fragrant and just starting to color, about 3 minutes. Add michiu, soy sauce, sugar, 2 tsp. white pepper, and reserved 3 cups stock (if you are using leftover turkey, use chicken broth instead). Bring to a boil, then reduce heat and simmer, stirring occasionally, until sauce is reduced by half and glossy, about 25 minutes. Taste and add up to 2½ tsp. more white pepper if desired.
- To serve, divide rice among shallow bowls and pile shredded turkey over. Spoon 2-3 Tbsp. sauce over each bowl and top with reserved fried shallots.
FRAGRANT RICE
This recipe came from a book about the healing properties of food. The main healing ingredient is turmeric. I could not tell you why though. My recipe card smells of turmeric from when I make this recipe. I serve this with my Recipe #254228. My husband says this meal cures a sore throat. This is one of my all time favorite meals.

- Heat the oil in a 2 quart sauce pan.
- Toast pine nuts until they are fragrant, about 3 minutes.
- Add onions and cook until soft.
- Add raisins, rice, turmeric and salt.
- Add water until rice is covered. boil and cook until the water has mostly absorbed. Keep this up until the rice is cooked, about 25 minutes (almost like cooking a risotto).
FRAGRANT TURKEY RICE

- Turkey: Trim the heart, cut the liver in half, and season both with salt. Heat a skillet for several minutes until it's smoking hot. Add grapeseed oil, followed by the heart and liver, and sear, 30 seconds. Turn heat to medium, flip heart and liver, and add garlic clove, rosemary, butter, and a pinch of salt. When the butter is foamy, about 15 seconds, baste the offal as it cooks, another 2-2½ minutes. Offal should be firm to the touch and cooked through. Remove from skillet and set both offal and skillet aside, leaving the remaining fat, garlic, and rosemary in the skillet.
- Add butter, celery, onion, garlic, and chili to the same skillet, over medium heat. Sauté until soft, 3-4 minutes. Remove rosemary and set aside. Meanwhile, remove meat and skin from turkey leg. Discard turkey tendons, then roughly chop. Set aside.
- Vinaigrette: Put turmeric, fish sauce, maple syrup, vinegar, and turkey stock in a saucepan over medium heat to warm, 1-2 minutes.
- Assembly: Put sautéed vegetables in a bowl. Chop liver and heart, and add to vegetables along with turkey meat, skin, and juices from resting gizzards. Add cooked rice and toss everything together. Add half of the herbs and ¾ of the vinaigrette. Toss again. Taste for seasoning and add more vinaigrette if necessary. Garnish with remaining herbs and serve.
