This is a recipe that is infamous among Tongans. We call it Tongan Pie but it is more like a jelly roll. Use your favorite jelly or jam, peach/pineapple and grape are popular favorites. Also can roll out the dough & use biscuit cutter to make tarts instead. I'm submitting here so I won't lose the recipe again!

Number Of Ingredients 6

5 cups flour
1 cup sugar
3 teaspoons baking powder
1 1/4 cups margarine (cold)
3 eggs
1/2-3/4 cup milk (cold)

Steps:

  • Mix flour, sugar & powder well.
  • Cut margarine in small cubes (cut long ways then short ways for tiny cubes).
  • Throw margarine cubes into flour, then work it into flour until evenly broken up--much like making a pie crust.
  • Add eggs (mix first in separate bowl) and rub together until even.
  • Add milk & mix until not sticky but balls up.
  • Roll out on floured surface about 1/4-1/3" thick.
  • Spread with jam or jelly on entire surface leaving 1/2 " space along edges.
  • Roll dough into one large log & fold ends under to keep jelly from oozing out.
  • Transfer to foil lined cookie sheet.
  • Bake at 275 degrees for 45 minutes.

There is no need to go out and buy a special jelly roll pan to make a classic roulade. As this recipe proves, a standard rimmed baking sheet will do just fine! The basic sheet cake is also easier to make than the usual cake -- called a genoise -- but holds up just as well. Pre-rolling the cake while it is still hot and before it is filled is the key to ensuring it doesn't crack.

Nonstick baking spray, for the baking sheet
4 large eggs, cold (see Cook's Note)
1 cup granulated sugar
1 teaspoon baking powder
1 teaspoon kosher salt
1/2 cup unsalted butter, melted and cooled to room temperature
1 tablespoon pure vanilla extract
1 1/2 cups all-purpose flour, sifted (see Cook's Note)
Confectioners' sugar, for dusting
2 1/2 cups strawberry jam, at room temperature

Steps:

  • Position an oven rack in the center of the oven and preheat it to 375 degrees F. Lightly coat an 18-by-13-inch sheet pan with nonstick baking spray. Line the bottom with parchment. Set aside.
  • Beat the eggs, granulated sugar, baking powder and salt in a stand mixer fitted with the whisk attachment on high speed until the mixture is pale and very thick (enough to hold a pattern in the wake of the whisk), about 10 minutes see Cook's Note). Reduce the speed to medium-high and drizzle in the butter and vanilla until just combined, about 10 seconds. Reduce the speed to low and add the sifted flour all at once. Beat until just combined, about 5 seconds. Gently fold the batter once or twice using a rubber spatula, then scrape it into the prepared sheet pan. Spread it evenly with the spatula, using broad, gentle strokes to keep the batter airy.
  • Bake, rotating the pan halfway through, until the top is set but still pale, about 15 minutes. Make sure not to overcook the cake or it will crack when you roll it.
  • While the cake is still hot, sift a thin layer of confectioner's sugar over the top. Run a sharp paring knife around the edges of the cake to loosen it. Lay a clean kitchen towel over the cake and carefully flip the sheet pan onto a work surface. Gently peel off the parchment. Starting at one of the short ends, gently roll the still-warm cake and the towel together. (This must be done while the cake is hot to keep it from cracking.) Wear oven mitts, if needed.
  • Allow the rolled-up cake to cool completely.
  • Gently unroll the cake and spread the strawberry jam evenly over the cake using an offset spatula. Re-roll the cake this time without the towel and place on a platter seam-side down. Dust the top with more confectioner's sugar. Slice and serve.

1/4 cup water
1-1/2 cups sugar, divided
1 teaspoon vanilla extract
1 teaspoon lemon extract
1-1/4 cups cake flour

Confectioners' sugar
1 jar (12 ounces) strawberry, raspberry or currant jelly

  • Place egg whites in large bowl; let stand at room temperature for 30 minutes. Line a greased 15x10x1-in. baking pan with waxed paper; grease the paper and set aside. , Preheat oven to 350°. In a large bowl, beat egg yolks and water on high speed 5 minutes or until thick and lemon-colored. Gradually beat in 1 cup sugar. Stir in extracts. Sift flour, baking powder and salt together twice; gradually add to yolk mixture and mix well (batter will be very thick)., Add cream of tartar to egg whites; with clean beaters, beat on medium until soft peaks form. Gradually add remaining sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved. Continue beating until soft glossy peaks form. Fold a fourth of the egg whites into batter, then fold in remaining whites. Spread evenly into prepared pan. , Bake 15-18 minutes or until cake springs back when lightly touched. Cool 5 minutes. Invert onto a kitchen towel dusted with confectioners' sugar. Gently peel off waxed paper. Roll up cake in the towel jelly-roll style, starting with a short side. Cool completely on a wire rack. Unroll cake; spread evenly with jelly. Roll up; dust with confectioners' sugar.

This is a homemade sponge cake filled with your favorite jelly or jam that even a novice baker can make.

1 cup sifted cake flour
1 ½ teaspoons baking powder
¼ teaspoon salt
2 eggs
¾ cup white sugar
½ teaspoon vanilla extract
2 tablespoons 2% milk
½ cup confectioners' sugar for dusting
1 cup strawberry jam

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a 10x15 inch jellyroll pan with parchment paper.
  • Sift together the flour, baking powder and salt. Set aside. In a large bowl, beat eggs and sugar with an electric mixer until thick and pale, about 5 minutes. Stir in the vanilla and milk. Stir in the dry ingredients gradually. The batter will be thin. Pour into the prepared pan.
  • Bake for 8 to 10 minutes in the preheated oven, until the center springs back when pressed lightly. Don't over bake, or it may crack.
  • Generously dust a clean dish towel with confectioners' sugar. Turn the cake out onto the towel, and peel off the parchment paper. Gently roll up the cake using the towel, and let cool for about 10 minutes.
  • Unroll the cake, and spread an even coating of jam onto the top. Roll the cake back up into a tight spiral, and remove the towel. Dust with confectioners' sugar before serving.

These deep-fried pastries, which are known as "doigts de fatima" in French, are named after the prophet Muhammad's daughter and her delicate fingers. They are commonly eaten to break the fast during Ramadan, but are also enjoyed year round, especially at weddings. While this particular recipe is Tunisian, many North African and Middle Eastern countries have their own versions. They are typically made with thin, delicate malsouka pastry sheets, but spring roll wrappers are used here instead. The fillings are wide-ranging (you may find versions with tuna, shrimp, ground beef or vegetables) and flexible: Feel free to omit the chicken in this recipe for a tasty vegetarian snack.

2 tablespoons olive oil
1 boneless, skinless chicken breast (about 8 ounces), cut into 1/2-inch cubes
1/2 small yellow onion, cut into 1/4-inch pieces
1 garlic clove, minced
1/2 teaspoon ras el hanout
1/8 teaspoon ground turmeric
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
2 small white potatoes (about 6 ounces total), peeled and cut into 1/2-inch pieces
2 eggs
1 cup shredded mozzarella (about 4 ounces)
2 tablespoons chopped fresh parsley
12 square spring roll wrappers
1 egg, beaten for egg wash
About 2 cups vegetable or canola oil, for frying
1 fresh lemon, for garnish

Steps:

  • Bring a pot of water to a boil over high heat. Meanwhile, prepare the filling: Heat the olive oil in a large skillet over medium-high. Add the chicken and sauté until golden brown, about 4 minutes. Add the onion and garlic and sauté until the onion is translucent, about 2 to 3 minutes.
  • Add the ras el hanout, turmeric, salt and pepper to the pan and cook, stirring occasionally, for another 2 minutes. Transfer mixture to a large bowl and set aside to cool.
  • Once the water comes to a boil, add the potatoes and cook until tender, 5 to 10 minutes. Using a slotted spoon, transfer potatoes to another bowl to cool. Let the water continue to boil.
  • Prepare the hard-boiled egg: Add 1 egg to the boiling water, reduce the heat to medium and let it cook for 10 minutes. Remove the hard-boiled egg from the water and let cool. Peel the egg and chop it into small pieces.
  • To the chicken mixture in the large bowl, add the cooled potatoes, chopped egg, mozzarella, parsley and the remaining 1 uncooked egg. Stir to combine the filling.
  • Prepare the rolls: Working with one at a time, place one spring roll wrapper on a flat surface. Add a scant 1/4 cup of the chicken filling in the wrapper in one corner, arranging the filling a 4- to 5-inch log. Starting from the same corner, roll the wrapper twice around the filling. Fold in the sides and continue rolling toward the furthest corner. Brush egg wash on the last corner to seal, then roll until the parcel is fully sealed and forms a tight cylinder.
  • Add the vegetable oil to a medium saucepan and heat over medium-high until the oil reaches about 350 degrees. Working in batches, add about 3 rolls to the oil and cook, rotating frequently until golden brown and cooked through, 4 to 5 minutes. (If you prefer to avoid deep frying, you can bake the rolls on a rack-lined sheet pan at 375 degrees until golden brown, about 25 minutes, turning them halfway through.) Place cooked rolls on a paper towel for a few minutes to absorb oil before transferring to a serving platter. Serve warm with fresh lemon wedges to squeeze on top.
