BAKED CHICKEN THIGHS

Baked Chicken Thighs image

The best Baked Chicken Thighs! They bake up juicy and tender with the most delicious seasonings and crispy skin. This easy chicken recipe is a favorite, loved by adults and kids alike.

Provided by Kristine Rosenblatt

Categories     Main Course

Time 45m

Number Of Ingredients 9

1 tablespoon Italian seasoning (or dried oregano)
2 teaspoons brown sugar
2 teaspoons paprika
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon coarse Kosher salt (or ½ teaspoon table salt)
½ teaspoon black pepper
3 pounds skin-on bone-in chicken thighs (8 bone-in thighs, see note below about boneless)
2 tablespoons olive oil

Steps:

  • Preheat oven to 400° F. Set out a 13x9-inch or similar baking dish or line a rimmed baking sheet with foil or parchment paper.
  • In a small bowl, whisk together the seasonings until well combined.
  • Pat the chicken thighs dry with paper towels and place them in the baking dish.
  • Rub both sides of the chicken with olive oil. Sprinkle the seasoning mixture over the chicken, rubbing it on both sides of the chicken thighs. Try to rub some of the rub underneath the skin as well as on top of the skin for the most flavorful chicken. Arrange the chicken thighs skin side up on the pan.
  • Bake in the preheated oven, without moving or turning, until the internal temperature of the thickest part of the chicken (not touching the bone) reaches at least 165° F. This will take about 30-40 minutes, depending on the size of your chicken thighs.
  • If desired, you can broil the chicken for a few minutes to get the skin extra crispy. Be sure to use a broiler-safe baking dish/pan and do not put parchment paper under the broiler.

Time 1h

Number Of Ingredients 13

8 chicken thighs, (bone in, and leave the skin on but trim excess fat)
Kosher Salt
3 medium yellow onions, (halved and thinly sliced)
1 vine ripe tomato, (sliced into rounds)
For the chicken rub
5 tablespoons tomato paste
1/3 cup extra virgin olive oil, (more as needed)
1 lemon, juice of
4 garlic cloves (minced)
1 teaspoon dry oregano
1 teaspoon smoked paprika
1 teaspoon cumin
1 teaspoon black pepper

Steps:

  • Heat oven to 425 degrees F.
  • Season the chicken thighs with kosher salt on both sides and underneath the skins. Set aside briefly.
  • Make the rub. In a small bowl or measuring cup, combine the rub ingredients. Whisk until everything is well-incorporated.
  • Rub the chicken with the tomato rub on both sides, applying underneath the skins first.
  • Prepare a 9" X 13" baking dish. Brush the bottom of the dish with extra virgin olive oil. Arrange most of the sliced onions on the bottom. Arrange the chicken on top of the onions. Now add the rest of the onions and the sliced tomatoes between the chicken thighs. Pour in about 1/4 cup of water from the sides of the baking dish.
  • Bake in the middle of your heated rack for 40 minutes or so, then, for crispy colored skin, put it under the broiler for a couple of minutes (watch carefully).

BAKED CHICKEN THIGHS

Baked Chicken Thighs image

How to make baked chicken thigh! My guide for making juicy and tender oven baked chicken thighs the old-fashioned way. Easy & healthy!

Provided by Erin Clarke / Well Plated

Categories     Dinner     Main Course

Time 1h15m

Number Of Ingredients 11

2 1/4 pounds bone-in, skin-on chicken thighs (about 4)
3 garlic cloves (minced (about 1 tablespoon))
3 tablespoons extra-virgin olive oil (divided)
2 teaspoons Italian seasoning
1 teaspoon dried rosemary
1 lemon (zest and juice)
1 1/2 teaspoons kosher salt (divided)
1/2 teaspoon ground black pepper (divided)
2 small or 1 extra large onion
1/2 tablespoon sherry vinegar or red wine vinegar
Chopped fresh parsley (or tarragon or thyme, plus additional for serving)

Steps:

  • Pat the chicken dry and place in a large bowl or large ziptop bag. Add the garlic, 2 tablespoons oil, Italian seasoning, rosemary, lemon zest and juice (zest the lemon right over the bag or bowl), 1 teaspoon salt, and 1/4 teaspoon pepper. Toss the chicken (or seal the bag and turn to coat). Let sit at room temperature for at least 30 minutes and up to 1 hour or cover and refrigerate for up to 12 hours.
  • When ready to bake, preheat the oven to 425 degrees F. Thinly slice the onions and place in a 9x13 or similarly sized roasting pan or casserole dish.
  • Drizzle the onions with the remaining 1 tablespoon oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Toss to coat.
  • Remove the chicken from the marinade and shake off any excess. Clear some spaces in the onions for the chicken, then nestle it in.
  • Bake the chicken thighs for 15 minutes. Remove the pan and toss the onions to promote even cooking (I use a fork to stir them around a bit). Return to the oven and bake for 10 to 20 additional minutes (that's 25 to 35 minutes total), until the internal temperature of the chicken reaches 155 to 160 degrees F (chicken is considered cooked at 165 degrees F, but its temperature will continue to rise as it rests). If you'd like to brown the chicken skin further, at the end of the cooking time, place the pan under the broiler for 1 to 2 minutes (watch closely!).
  • Remove the chicken to a serving plate. Cover and let rest 10 minutes. Stir the onions in the pan, spread them into an even layer, then return them to the oven to roast further while the chicken rests. The onions will become jammy and a few might look a little crispy.
  • Remove the onions from the oven, then stir the vinegar into them. If desired, return the chicken to the pan and place under the broiler for crispy skin.
  • Serve the chicken thighs warm, with onions spooned over the top. Sprinkle with fresh herbs.

FLYING JACOB - OVEN BAKED CHICKEN THIGHS

Flying Jacob - Oven Baked Chicken Thighs image

Chicken gratin with bananas and nuts: Kids love this recipe which is based on a swedish traditional dish invented by Ove Jacobson, a guy working in the freight industry. I adapted it for RCS#15 but i have been making this for some time and my family loves it. I am not sure about the name but this dish will give you wings. It is super easy to prepare and comes with a side dish which you can prepare while the chicken is getting ready in the oven.
