Easy Flounder & Asparagus Packets image

These Easy Flounder & Asparagus Packets give you both a protein and a veggie in one simple dish; just add some cooked rice (or riced cauliflower) on the side to fill out a complete meal.

1 lb flounder (I used five thin fillets)
1 lb fresh asparagus, woody ends trimmed
1/4 cup butter, melted
1 small lemon
4 cloves garlic, minced
Black pepper, to taste
1 tsp parsley
1 tsp smoked paprika
1/2 cup shredded Parmesan

Steps:

  • Thaw the flounder, if using frozen, and preheat oven to 400 degrees. Combine the melted butter, juice from half of the lemon, minced garlic, pepper, parsley, and smoked paprika in a small bowl.
  • Cut one large piece of foil for each fillet, leaving enough room to fold over both fish and asparagus. Divide asparagus and fish fillets evenly, then place one fillet and a few spears of asparagus side-by-side in the center of each piece of foil.
  • Spoon the seasoned garlic butter mixture evenly over the flounder & asparagus.
  • Fold the foil over each packet and seal it tightly across the top, so that none of the butter leaks out.
  • Place packets on a rimmed baking sheet and bake at 400 degrees for 15 minutes, or until fish is cooked through and flakes evenly with a fork, then open foil and sprinkle Parmesan evenly across the fish and asparagus.
  • Return to oven and broil on high with the foil open for 2 minutes to melt the cheese on nicely, then squeeze on additional lemon juice to taste (it really brightens up the flavor!).
  • Serve the fish and asparagus with its own sauce over either rice, or riced cauliflower.

1 tablespoon butter
1 tablespoon olive oil
1/3 pound mushrooms cut into small cubes
2 teaspoons finely chopped garlic
4 ripe plum tomatoes, cored, peeled and cut into small cubes
1 tablespoon fresh lemon juice
2 sprigs fresh thyme or 1 teaspoon dried
Salt and freshly ground pepper to taste
6 tablespoons sesame seeds
1 1/4 pounds fillet of flounder
2 tablespoons corn or vegetable oil
3 tablespoons chopped fresh parsley

Steps:

  • Heat butter and olive oil in a skillet. Add mushrooms, and cook briefly over medium-high heat, shaking the pan until mushrooms are lightly browned. Add garlic; do not brown. Add tomatoes, lemon juice, thyme and salt and pepper to taste. Cook, stirring, for 5 minutes. Remove from heat and keep warm.
  • Spread sesame seeds on a large platter. Season fillets with salt and pepper. Lay them over the sesame seeds on one side, then on the other to coat them lightly.
  • Heat corn oil in a large nonstick skillet, and place fillets in it without crowding. Cook over high heat until fillets and seeds are lightly browned on both sides. Time will vary depending on thickness of fillets.
  • Spoon sauce onto warmed serving plates. Place fish fillets over sauce, sprinkle with parsley and serve.

4 (8-ounce) flounder fillets
Salt and pepper
1 pound asparagus, trimmed and cut into 1-inch lengths
1 (5.5-ounce) box garden vegetable risotto mix (recommended: Buitoni)
1/2 cup jarred roasted red peppers
1/2 cup alfredo pasta sauce, store bought
Fresh basil, for garnish

Steps:

  • Preheat oven to 450 degrees F.
  • Pour oil into a 13 by 9-inch baking dish. Arrange fish over oil, folding the ends under the middle to create little pockets. Sprinkle fish with salt and pepper. Roast for 5 minutes. Add asparagus to dish and roast for 5 to 7 minutes longer. Remove from oven and keep fish warm. Remove asparagus and reserve.
  • Prepare risotto mix according to package directions, and add asparagus. Meanwhile, puree roasted peppers and alfredo sauce in a blender; transfer to a small saucepan and let simmer. Serve fish topped with sauce and accompanied by asparagus risotto. Garnish with fresh basil sprigs.

2 cups vegetable oil for frying

1 egg

Steps:

  • Place bran cereal in a blender; blend until pulverized. Transfer to a shallow bowl and mix in lemon-pepper seasoning.
  • Heat oil in a deep skillet over medium heat to 350 degrees F (175 degrees C).
  • Place flour in a medium bowl. Whisk egg and milk together in another medium bowl. Dredge a flounder fillet in flour; shake off excess. Dip into egg mixture. 3 tablespoons fresh lemon juice
2 tablespoons finely chopped fresh parsley leaves

1/2 teaspoon coarsely ground black pepper
1 onion, sliced thin
3 carrots, cut into 2-inch julienne strips
1 yellow squash, cut into 2-inch julienne strips
1 zucchini, cut into 2-inch julienne strips
six 6- to 8-ounce flounder fillets, halved lengthwise and seasoned with salt and pepper

Steps:

  • In a bowl whisk together the wine, the lemon juice, the parsley, the oil, the pepper, and salt to taste and add the onion. In another bowl toss together the carrots, the squash, and the zucchini, add about 1/4 cup of the liquid from the onion mixture, and toss the mixture well. Spread the onion mixture in the bottom of a greased glass baking dish, 15 by 10 by 2 inches. On a work surface arrange the flounder fillet halves, skinned sides up, beginning with the narrow end roll up each fillet half jelly-roll fashion, and secure each roll with a wooden pick. Arrange the fish rolls, seam sides down and not touching each other, on the onion mixture, put an oiled sheet of parchment or wax paper directly on them, and bake the mixture in the middle of a preheated 400°F. oven for 8 minutes. Spread the vegetable mixture around the rolls and bake the mixture, the fish covered directly with the parchment, for 7 to 12 minutes more, or until the fish just flakes. Transfer the vegetables to a heated platter, arrange the fish rolls on top of them, and spoon the juices over the top.

2 tablespoons extra virgin olive oil
½ Spanish onion, chopped
2 cloves garlic, chopped

24 kalamata olives, pitted and chopped

6 leaves fresh basil, chopped

  • Preheat oven to 425 degrees F (220 degrees C).

  • Heat olive oil in a skillet over medium heat; saute onion until tender, about 5 minutes. Stir in tomatoes, garlic and Italian seasoning; cook until tomatoes are tender, 5 to 7 minutes. Mix in olives, wine, capers, lemon juice, and 1/2 the basil. Reduce heat, blend in Parmesan cheese, and cook until the mixture is reduced to a thick sauce, about 15 minutes.
  • Place flounder in a shallow baking dish. Pour sauce over the fillets and top with remaining basil leaves.
  • Bake 12 minutes in the preheated oven, until fish is easily flaked with a fork.

1 cup all-purpose flour
Salt and pepper
Pinch of cayenne
1 tablespoon olive oil
4 flounder fillets of equal size, 6 to 8 ounces each
3 tablespoons cold unsalted butter, cut into chunks
1 tablespoon lemon juice
2 tablespoons roughly chopped parsley
1 teaspoon roughly chopped tarragon
A few tarragon leaves, for garnish
Lemon wedges

Steps:

  • Put flour in a low bowl or pie plate and stir in a generous amount of salt and pepper and a pinch of cayenne.
  • Place a large cast-iron skillet over medium-high heat. Add olive oil and tilt pan to coat bottom.
  • Season the fillets lightly with salt and pepper. Dip each fillet quickly into flour mixture, shaking off excess flour.
  • Lay fillets in skillet in one layer. Cook for about 2 minutes per side, until golden. Transfer cooked fish to a warm platter.
  • Leave the heat at medium-high and add cold butter. Let butter sizzle until foamy and brown, but do not let it burn. Add lemon juice, parsley and chopped tarragon and swirl to incorporate.
  • Spoon butter sauce over fish. Garnish with a few tarragon leaves and serve immediately with lemon wedges.

2 teaspoons fresh lime juice
3 teaspoons olive oil
1 cup lump crab meat, picked over for shells

2 tablespoons all-purpose flour
4 3-to-4-ounce flounder fillets or 2 8-ounce fillets, split down the center

Steps:

  • Bring a medium-size pot of water to a boil. Add the asparagus and blanch until tender, but not soft, about 3 minutes. Drain and place under cold running water until cool. In a medium-size bowl, whisk together the lime juice and 2 teaspoons of the olive oil. Toss in the asparagus and crab meat and season with salt and pepper. Set aside.
  • Place the flour on a plate and season to taste with salt and pepper. Lightly dust the flounder on both sides with the seasoned flour. Heat the remaining teaspoon of olive oil in a large, heavy nonstick skillet over high heat. Place the flounder in the pan and saute on one side for about 90 seconds.
