Eggs Florentine Made Easy image

Eggs Florentine is a classic breakfast or brunch dish. Make the hollandaise in advance, and the rest of the recipe comes together quickly.

1 lb./500 g spinach
1 tbsp. olive oil
1/4 cup/50 mL white wine vinegar
8 eggs (free range)
4 English muffins
8 tbsp. Hollandaise sauce
Black pepper (to taste)
Garnish: nutmeg (freshly grated)

Steps:

  • Gather the ingredients.
  • First, prepare the spinach. Heat up a pan large enough to hold all the spinach.
  • When it is very hot, add a splash of olive oil and throw in the spinach. Turn it over using tongs for 1 to 2 minutes until wilted. Do not overcook the spinach or it will become slimy.
  • Tip the spinach into a colander and press out any excess liquid with the back of a spoon. Return the spinach to the pan and divide into four portions. Keep warm by covering with a lid or a tea towel. Preheat the grill.
  • To poach the eggs, bring a pan of water to the boil and add the vinegar. When simmering, gently crack the eggs and slip them into the water without breaking the yolks. Poach the eggs for about 3 minutes or until the whites are set, but the yolks are still soft.
  • Meanwhile, split the muffins and toast them on both sides on the grill. Butter lightly and place onto warmed plates.
  • Put a portion of spinach on each muffin half and keep warm under the grill.
  • When the eggs are done, lift them out with a slotted spoon and pat dry with kitchen paper. Place one on each muffin half and spoon 1 to 2 tablespoons of hollandaise and grated nutmeg over top and. Serve immediately.

3 large egg yolks
1 tablespoon water
1 tablespoon lemon juice
1/2 cup butter, melted
1/4 teaspoon salt
CASSEROLE:
1 tube (8 ounces) refrigerated crescent rolls
6 large eggs
2 tablespoons 2% milk
1/4 teaspoon onion powder
1/4 teaspoon pepper
8 thick-sliced bacon strips, cooked and crumbled
1 cup shredded cheddar cheese
4 green onions, sliced

Steps:

  • Preheat oven to 350°. In top of a double boiler or a metal bowl over simmering water, whisk egg yolks, water and lemon juice until blended; cook until mixture is just thick enough to coat a metal spoon and temperature reaches 160°, whisking constantly. Remove from heat. Very slowly drizzle in warm melted butter, whisking constantly. Whisk in salt. Transfer to a small bowl if necessary. Place bowl in a larger bowl of warm water. Keep warm, stirring occasionally, until ready to serve, up to 30 minutes. , Unroll crescent dough into one long rectangle; press perforations to seal. Press onto the bottom of a greased 13x9-in. baking dish. Bake 5 minutes. Meanwhile, in a small bowl, whisk eggs, milk, onion powder and pepper; stir in bacon and cheese. Spoon over crescent dough. Bake until golden brown, 10-15 minutes longer. Serve casserole with sauce; sprinkle with green onions.

2 cups milk
12 eggs
1 teaspoon salt
1/4 teaspoon ground red pepper (cayenne)
4 cups lightly packed fresh baby spinach
1 cup diced jarred roasted red bell peppers, patted dry (12-oz jar)
2 cups shredded mozzarella cheese (8 oz)
1 cup shredded Parmesan cheese (4 oz)
1 package (1.25 oz) hollandaise sauce mix
1/3 cup diced tomato

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, beat Bisquick™ mix, milk, 4 of the eggs, 3/4 teaspoon of the salt and the red pepper with whisk until blended. Stir in spinach, bell peppers and cheeses. Pour into baking dish.
  • Bake uncovered 25 minutes. Spray bottom of metal 1/4 cup measuring cup or bottom of small (2-inch diameter) glass with cooking spray; carefully make 8 wells in partially baked mixture in baking dish. Crack an egg into each well. Sprinkle with remaining 1/4 teaspoon salt. Bake 12 to 16 minutes longer or just until yolks are set. Cool 5 minutes.
  • Meanwhile, make hollandaise sauce as directed on package. Drizzle 1/2 cup of sauce over top of casserole. Top with tomato. Serve with remaining sauce.

A classic Eggs Florentine recipe made with two poached eggs on a toasted english muffin with spinach and hollandaise sauce.

4 large eggs
4 English muffins
2 tablespoons white vinegar
2 tablespoons unsalted butter
1/4 cup heavy cream
10 cups baby spinach leaves
salt and pepper (, to taste)
4 tablespoons butter
4 egg yolks
1 tablespoon lime juice
1-2 tablespoons butter
1 tablespoon heavy whipping cream
salt and pepper (, to taste)

Steps:

  • Melt butter. Melt butter in a small sauce pan.
  • Beat egg yolks. In a separate bowl, beat the egg yolks. Add in the lime juice, heavy cream, and salt and pepper.
  • Tempur the eggs. Next you need to tempur the eggs by adding a small amount of the hot butter to the egg mixture. Stir it well and repeat this process, slowly adding one spoonful of hot butter to the egg mixture. We do this to avoid curdling the eggs.
  • Return to saucepan. Finally, add the whole mixture back to the saucepan and cook it for a few more seconds.
  • Heat water. Fill the pot with about 3 inches of water. Heat the water until it starts to steam and bubble (just before boiling point).
  • Add vinegar. Add a splash of vinegar to the water (this helps the egg stay together once it is in the water).
  • Crack egg. Crack one egg in a small dish (I like to use a small measuring cup).
  • Whirlpool. Next, create a gentle whirlpool in the water by taking a large spoon and circling it around in the water. Poor your egg into the center of the swirl.
  • Cook. While it's cooking, make sure to watch the water temperature. You never want the water to boil, so if it gets too hot, you may need to turn down the heat. It should stay just below boing point. How log you cook your poached egg depends on personal preference. I like to cook it for 3-4 minutes for a slightly runny yolk. Remove the poached egg with a slotted spoon!
  • In a large skillet, melt the butter over low heat. Once melted, pour in the heavy cream, and let the mixture simmer for a couple minutes until is starts to thicken slightly.
  • Add baby spinach leaves and cook them for 2 to 3 minutes or until the leaves are wilted. Remove from heat and season with a dash of salt and pepper.
  • Toast the english muffin and lightly butter it. Layer spinach on top of the english muffin and place egg on top of spinach. Top with hollandaise sauce.

1/2 c real mayonnaise
1/2 tsp lemon juice (or to taste)

Steps:

  • 1. Melt the butter (I use 'I can't believe it's not butter' light) in the microwave
  • 2. Whisk in the mayonnaise (I use Hellmann's light) and the lemon juice
  • 3. Let sit at room temperature until veggies are cooked, then pour sauce directly onto them. The heat from the veggies heats the sauce.
  • 4. This is a great quickie sauce for broccoli, asparagus or quick eggs benedict.

2 tablespoons reduced-fat stick margarine
1 tablespoon all-purpose flour
1/2 teaspoon salt, divided
1-1/4 cups fat-free milk
1 large egg yolk
2 teaspoons lemon juice

1/2 pound fresh spinach
1/8 teaspoon pepper
4 large eggs
2 English muffins, split and toasted
Dash paprika

Steps:

  • In a large saucepan, melt margarine. Stir in flour and 1/4 teaspoon salt until smooth. Gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat. , Stir a small amount of sauce into egg yolk; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in lemon juice and zest. Set aside and keep warm., Place spinach in a steamer basket. Sprinkle with pepper and remaining salt. Place in a saucepan over 1 in. of water. Bring to a boil; cover and steam for 3-4 minutes or until wilted and tender., Meanwhile, in a skillet or omelet pan with high sides, bring 2 to 3 in. water to a boil. Reduce heat; simmer gently. Break cold eggs, one at a time, into a custard cup or saucer. Holding the dish close to the surface of the simmering water, slip the eggs, one at a time, into the water. Cook, uncovered, for 3-5 minutes or until whites are completely set and yolks begin to thicken. Lift out of the water with a slotted spoon., Place spinach on each muffin half; top with an egg. Spoon 3 tablespoons sauce over each egg. Sprinkle with paprika. Serve immediately.

3/4 lb unsalted butter
1/4 cup breadcrumbs
4 whole English muffins
6 ounces Canadian bacon
18 large whole eggs
salt
pepper
1/4 teaspoon paprika
1/2 lb unsalted butter
1 cup mayonnaise
1 small lemon, juiced
1/2 teaspoon ground mustard
1 dash cayenne pepper
12 melon, slices (optional)

Steps:

  • FLORENTINE EGG BAKE:.
  • Grease sides and bottom of 9 x 12 casserole pan with butter, in a small sauce pan, melt the remaining part of 1 stick. Dust the pan with an even layer of bread crumbs, shaking out any extra. Cube the English muffins in to 1/2" squares, and line the bottom of the pan. Drizzle the melted butter over.
  • Dice the Canadian bacon, and chop the spinach into small pieces. Saute over medium heat until the spinach is wilted. Set aside to cool.
  • In a large mixing bowl, whisk the eggs. Fold in cooled spinach, bacon mix, salt and pepper, to taste, pour over the muffins. Cover and refrigerate overnight.
  • Preheat oven to 350°. Bake uncovered for 45 minutes, or until toothpick inserted in the center comes out clean. Let stand until no longer bubbling, 10 - 15 minutes.
  • MOCK HOLLANDAISE:.
  • While egg bake is standing, prepare the sauce by melting ½ pound butter in a medium sauce pan add mustard, cayenne, salt and pepper, to taste, lemon juice and mayonnaise. Whisk until creamy.
  • Cut egg bake in to 12 servings. Drizzle each with sauce and garnish with paprika. Serve with fresh melon - optional.
