Family favorite. They don't last long. Taste great from the oven. I like to freeze leftovers the same day. Great for breakfast or lunch pails. Freeze ripe bananas until you're ready to do some baking.

- Preheat oven to 350 degrees F (175 degrees C). Line 2 muffin tins with paper liners.
- Mash bananas in a bowl. Add brown sugar, butter, white sugar, and eggs; mix well. Add all-purpose flour, whole wheat flour, flax seeds, baking soda, and baking powder. Scoop batter into the prepared tins.
- Bake in the preheated oven until tops spring back when lightly pressed, about 20 minutes.

- Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper liners.
- Mix whole wheat flour, oat bran, flaxseed meal, cinnamon, baking soda, baking powder, nutmeg, and cloves together in a large bowl.
- Beat egg using an electric mixer in a separate medium bowl; add canola oil. Whisk until smooth. Add pumpkin pie mix, applesauce, and brown sugar. Mix together until smooth. Add to flour mixture and combine until blended.

FLAX SEED WHOLE-WHEAT MUFFINS
I adapted this recipe from Runner's World. Next time I make this, I might put in additional brown sugar. This recipe makes a not-too-sweet muffin that is nice and light. I added hazelnuts instead of raisins. Raisins would have increased the sweetness. These are good with butter.

- Preheat oven to 400°F.
- Spray a standard sized muffin tin with non-stick spray.
- Add all the dry ingredients to one bowl, except for the hazelnuts, and mix thoroughly.
- Beat the egg substitute or the 2 eggs with the milk and honey (or molasses) and add to the dry ingredients mixing until the dry ingredients are just moistened throughout.
- Fold in the hazelnuts.
- Fill the muffin cups until they are 3/4 full into the greased cups, or use muffin liners to prevent sticking.
- Bake for 20-25 minutes or until a toothpick inserted into the muffin comes out clean.

FLAX SEED MUFFINS
I got this recipe from a flax seed site and it is one I make often. The recipe says it makes 12 muffins, but because it has so much flax in it, I make 18. I have only made this with freshly ground flax seed as that is all I use. This has a very nutty flavor and is great with dried fruit. Please Note: Only eat one a day!!!! THESE ARE SUPER POTENT!!!
