The BEST Fried Rice. This fried rice is loaded with veggies and only takes 20 minutes to make!

Number Of Ingredients 11

2 tablespoons butter (divided)
3 eggs (whisked)
2 medium carrots (small dice)
1 small onion (small dice)
3 cloves garlic (minced)
1 cup frozen peas (thawed)
4 cups cooked and chilled rice ((I either use white or brown rice))
3 tablespoons low sodium soy sauce
2 tablespoons oyster sauce
1 teaspoon sesame oil
sliced green onions for garnish (if desired)

Steps:

  • Heat 1 tablespoon of butter into a large skillet.Add the eggs and scramble until fully cooked. Remove them from the pan and set aside.
  • Add the remaining tablespoon of butter into the pan. Add carrots and onion to the pan and cook until tender, 3-4 minutes. Stir in garlic and cook for an additional minute.
  • Add in the cold rice and peas and sauté for 3-4 minutes. The rice should brown up a bit.
  • Add the eggs back to the pan and stir in soy sauce, oyster sauce and sesame oil. Cook for 1-2 minutes to heat through.Serve immediately with green onions for garnish, if desired.

With this no-fail formula, you're only five ingredients away from the most satisfying fried rice.

1 1/2 cups uncooked brown rice
3 cups Progresso™ chicken broth (from 32-oz carton)
4 eggs, beaten
1 lb ground sausage
1 bag (12 oz) frozen sweet peas

Steps:

  • In large covered pot, heat rice and chicken broth to boiling over high heat. Reduce heat to low; cover, and cook 35 to 40 minutes or until rice has absorbed all of the broth.
  • Heat large wok or skillet over medium-high heat. If not nonstick, add 2 teaspoons vegetable or canola oil. Cook eggs in wok until set but still a bit runny. Transfer to bowl; season with salt and pepper to taste, and set aside. In same wok, cook sausage, breaking up with wooden spoon. If wok is dry (this shouldn't be the case if you're using full-fat sausage), add 1 tablespoon oil, and then fold in hot rice, eggs and frozen peas. Spread evenly around wok, and cook 3 to 5 minutes. Continue to cook a few more minutes, folding, so peas cook through and everything blends together. Taste and adjust season-ings as desired.

2 teaspoons oil
½ cup carrot, diced
1 tablespoon garlic, minced
½ cup onion, diced
½ cup bell pepper, diced
½ cup broccoli floret
½ cup pea
⅓ cup corn
3 eggs, beaten
3 cups white rice, cooked
2 tablespoons soy sauce
1 tablespoon sesame oil
pepper, to taste

Steps:

  • In a wok or deep skillet, heat up the oil over high heat and cook carrots, onions, and garlic until onions are translucent.
  • Add bell peppers and broccoli and cook an additional 3-4 minutes. Push all of the cooked vegetables to the side of the pan.
  • Beat the eggs and pour into the cleared half of the pan. Scramble the eggs and mix with the rest of the vegetables.
  • Add peas, corn, rice, soy sauce, sesame oil, and pepper. Mix well and let the rice cook until slightly crispy.
  • Enjoy!
