ROASTED RED PEPPER SAUCE

Roasted red pepper sauce image

This simple sauce is very versatile - perfect poured over roasted veg as well as chicken

Provided by Good Food team

Categories     Condiment, Dinner

Time 1h10m

Number Of Ingredients 6

2 red peppers
1 ½ tbsp olive oil
1 small garlic clove , crushed
1 small shallot , roughly chopped
85ml vegetable stock
½ tsp sugar , to taste (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Place the peppers on a baking tray and roast in the oven for about 45 mins until the skins are blackened. Remove from the oven and put into a plastic bag - this makes them sweat and the skins slip off more easily. When cool enough to handle, peel off the skins with your fingers. Slice the peppers open, pick out and discard all the seeds and membrane, then roughly chop the red flesh.
  • Heat the olive oil in a frying pan. When hot, fry the garlic and shallot for a few mins. Add the chopped peppers and continue to fry for a few mins, stirring to combine everything. Add the vegetable stock, bring to the boil, then allow it to reduce a little.
  • Pour the contents of the pan into a blender and whizz until smooth. Adjust the seasoning to taste. Depending on the ripeness of the peppers, you shouldn't need any sugar - but if they retain a slightly bitter flavour, return the sauce to the pan, add sugar to taste and let it dissolve over the heat. Serve hot or at room temperature.

  • Place the pine nuts, roasted red peppers, tomato, bread, garlic, leaves from 1 sprig of rosemary, parsley, and balsamic vinegar in the bowl of a food processor. Turn the processor on and stream in 1/4 to 1/3 cup of extra virgin olive oil forming a thick sauce. Set the sauce aside until needed.
  • Place the remaining 2 tablespoons of olive oil along with the remaining sprig of rosemary in a shallow, non-stick skillet over medium to medium-high heat. Let the rosemary heat with the oil while preparing the fish.
  • Season the fish on both sides with either seasoning salt or seafood seasoning. Dredge the fish in flour shaking each piece to remove the excess. Cook in the rosemary-infused olive oil for 7 to 8 minutes until fish is crispy and golden brown on both sides. Do not crowd the pan and cook in two batches if necessary. Remove the fish to a paper towel lined plate to drain.

  • For sauce, in a large skillet cook fresh sweet peppers and garlic in hot oil over medium heat about 20 minutes, stirring occasionally. (Or, if using peppers from a jar, in a 2-quart saucepan cook garlic in oil for 30 to 60 seconds or until light brown. Stir in peppers; remove from heat.)
  • Place the pepper-garlic mixture in a blender container or food processor bowl. Cover; blend or process until very smooth. Add the 1/2 cup water, the basil, tomato paste, vinegar, sugar, salt, and black pepper. Cover and blend or process with several on-off turns until basil is just chopped and mixture is nearly smooth. Transfer to a 1-quart saucepan. Cook and stir sauce over medium heat until heated through.
  • Meanwhile, measure thickness of fish. In a large skillet bring the 1/4 cup water and half of the lemon slices just to boiling. Carefully add fish. Return just to boiling; reduce heat. Cover and simmer until fish flakes easily when tested with a fork. (Allow 4 to 6 minutes per 1/2-inch thickness for fresh fish; 6 to 9 minutes per 1/2-inch thickness for frozen fish.) Remove fish from skillet.
  • To serve, spoon some of the sauce onto 4 dinner plates. Place a fillet on top of sauce on each plate. Garnish with remaining lemon slices and, if desired, basil. Freeze any remaining sauce for another time. Makes 4 servings.
