Ingredients

3/4 cup dry bread crumbs
3/4 cup grated Parmesan cheese
1/2 cup all-purpose flour
1/4 cup dried parsley flakes
3 tablespoons cornmeal
1 tablespoon dried minced onion
3/4 teaspoon garlic powder
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons shortening
ADDITIONAL INGREDIENT:
4 bone-in chicken breast halves

Steps:

Combine the first 10 ingredients in a bowl; cut in shortening until mixture resembles fine crumbs. Store in an airtight container in a cool, dry place or freeze for up to 6 months. Yield: 6 batches (3 cups total). , To prepare chicken: Place 1/2 cup coating mix in shallow bowl or large resealable plastic bag. Add chicken and toss to coat. Place in an ungreased 13x9-in. baking dish. Bake, uncovered, at 400° for 40-45 minutes or until juices run clear.

Ingredients

1 1/2 cups cornmeal
1/4 cup flour
1 tablespoon lemon pepper seasoning
2 teaspoons salt
1 teaspoon onion powder
1/2 teaspoon paprika
fish (fillets work best)
buttermilk
oil

Steps:

Combine first 6 ingredients. This may be stored in an airtight container in the freezer. Mix before using to redistribute the seasonings.
To make fried fish; dip fish in buttermilk, then roll in coating mix. Heat approximately 3" oil in a large skillet to 375°F Fry one piece at a time until golden brown, 4-6 minutes.

84 finely-crushed salted crackers (such as "Christie's Premium Plus )
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 teaspoon granulated sugar
1 teaspoon pepper

Steps:

Place crushed crackers and seasonings in a plastic bag;Shake well to combine.
Makes 2 1/2 to 3 cups,enough to coat 6 pounds of chicken pieces.
Store unused portion of crumbs in airtight container in refrigerator.
