CHRISTINE'S THICK HOT DOG MEAT SAUCE
I came up with this recipe from combining many other recipes. I was in search of a thick great tasting hot dog meat sauce with lots of flavor. This hot dog sauce may be a bit spicy so you may want to reduce the spicy spices. This is also a sweet hot dog sauce so you may want to reduce the brown sugar amount. My family loved this and we served our dogs with melted Cheez Whiz drizzled over the hot dog sauce.

Steps:
- Cooking over medium heat brown the ground beef with the garlic cloves and dried minced onion.
- Do not drain.
- Once the ground beef has completely browned add the tomato sauce, mustard, ketchup, vinegar, worcestershire sauce, and brown sugar to the ground beef stirring till combined.
- Then stir in the paprika, cumin, chili powder, salt, cayenne pepper, black pepper, garlic powder, and onion powder stirring until combined.
- Continue cooking on medium heat until thick.

- Heat the shortening in a large saucepan over medium-high heat. Add the onions and garlic and cook, stirring frequently, until the onions are soft. Add the ground beef to the pan and cook, stirring to break up the meat. Cook until the meat is no longer pink. Add the chili powder, crumbled bay leaf, and cumin and stir well. Stir in the consomme and bring the meat mixture to a simmer. Cook for 30 minutes or until thick, stirring occasionally. Adjust the seasoning with salt if needed then serve over hot dogs in buns.

- In a large saucepan, bring water to a boil. Carefully crumble beef into water. Add onion. Boil until meat is no longer pink; drain. Add the tomato sauce, brown sugar, chili powder, salt and pepper. Simmer, uncovered, for 15 minutes or until heated through. Serve over hot dogs in buns.

FIREHOUSE TOMATO SAUCE
We were shopping at a local grocery store near the firehouse trying to decide on dinner and I decided to make some pasta with tomato sauce and meatballs. I used only what was available in this store and it came out fantastic. The San Marzano canned tomatoes are a little bit pricier but you seriously can taste the difference and it's worth it. The cola sounds weird but it's an old tip from a culinary instructor and I prefer it to straight sugar. For me adding meat to this in the last hour really makes the flavor better but I'll post that later under another recipe. On it's own its still a great sauce. I adapted this to a gluten free version for my girlfriend, for those interested check it out.

- Preheat oven to 400°F.
- Heat oil in a skillet under low heat add onions and shallot. Saute until lightly translucent and soft.
- Slice Plum tomatoes lengthwise, sprinkle with salt and olive oil. Bake for 10mins on each side or until browned.
- Add garlic, stir often and be very careful to watch for burning, about 2 minutes If you see spots of garlic getting brown add small splashes of water over them. Once the garlic is done add the tomato paste, herbs, pepper flakes, salt, pepper, and mix until the paste and onions are blended, another 2-3 minutes.
- Add tomatoes, roasted plum tomatoes, cola, water and butter. Bring to a light simmer for 3 hours Do net let it boil. After 2 hrs taste and adjust seasoning if necessary, before that the flavors have not concentrated. For texture I mashed it with a potato masher, if you prefer it chunky disregard.
- Serve with your favorite pasta and enjoy.
HUNAN BEAN CURD IN HOT MEAT SAUCE
Because I am a vegetarian, I leave out the pork. Also, I have made this by sauteeing fresh broccoli rabe, then adding the sauce ingredients and proceeding as written, since I didn't have any peas. Watch out--this is HOT! But very, very good!!

- Marinate the pork in a mixture of the white wine and 1/2 teaspoon cornstarch for a few minutes.
- Then fry in a hot wok containing the vegetable oil.
- Cook for just a moment, and then add the bean curd cubes.
- Add the hot bean sauce, ginger, garlic, soy sauce, peas, and hot pepper oil or cayenne.
- Stir-fry for about 1 minute.
- Add the chicken broth and optional salt, and stir over high heat until mixture comes to a boil.
- Thicken the sauce with the cornstarch mixture.
- Garnish with the black pepper, scallions, and sesame oil.
- Serve hot.

HEAVENLY HOT DOG SAUCE
This is my family's favorite hotdog sauce. It originates from West Virginia. We like it with a bite, but you can adjust it to your taste. We top the hotdogs with ketchup, mustard, the hotdog sauce, and finally some chopped onions...YUM! This recipe makes enough for freezing and using later.
