FIERY STUFFED POBLANOS

Fiery Stuffed Poblanos image

I love southwest-inspired cuisine, but the dishes are often unhealthy. As a dietitian, I try to come up with nutritious twists on recipes, which is how these stuffed peppers were born. -Amber Massey, Coppell, Texas

STUFFED POBLANO PEPPERS

Stuffed Poblano Peppers image

I love spicy foods, and this is one of many variations of stuffed peppers that we eat around here. Perfect with steaks.

Provided by Kelly

Categories     Vegetable

Time 40m

Yield 4 stuffed peppers, 4 serving(s)

Number Of Ingredients 4

4 poblano peppers
8 ounces monterey jack pepper cheese, shredded
1 lb ground beef
1 (1 1/4 ounce) burrito seasoning mix, packet

Steps:

  • To Prepare Peppers:.
  • Preheat broiler. Fill large bowl or sink with ice cold water.
  • On a foil covered rack in broiler, arrange peppers about a 1/2 inch from each other and broil about 2 inches from heat, turning peppers occasionally with tongs until skins are blistered and lightly charred, about 20 minutes. Place roasted peppers straight from the broiler into the ice cold bowl water. Turn your oven off of broil and your oven on at 400 degrees.
  • While peppers are broiling, shred jack cheese and place in refrigerator until ready to stuff peppers.
  • Remove peppers from water and peel the blistered skin. Once all skin is removed and discarded, cut the tops off peppers and remove the stems and seeds and slice down one side to create a opening for stuffing. Place peppers on cookie sheet and set aside while preparing your ground beef taco meat.
  • To Prepare Filling:.
  • Heat a heavy skillet over moderate heat unit hot, but not smoking and brown ground beef. Drain the browned ground beef, and place back into the heated skillet, add the burrito season (lawry's is preferred) and follow the instructions on the back of the package, will take about 15 minutes.
  • To Stuff Peppers:.
  • Keep peppers on cookie sheet while stuffing.
  • Place about 3 tablespoons full of ground beef on bottom of peppers and a thin layer of shredded jack cheese on top of ground beef and repeat (you should have 1 layer meat 1 layer cheese 1 layer meat and 1 layer cheese) Pull sides of peppers together until they lap over each other (appearing closed). Now place peppers in the 400 degree oven for 20 minutes or until cheese is completely melted.

FIRE-ROASTED POBLANO SALSA

Fire-Roasted Poblano Salsa image

Roasting the veggies over an open fire brings a nice smoky flavor to this quick salsa. Excellent with tortilla chips or served over fish tacos. Can easily be adjusted to be mild or spicy by leaving in or removing the jalapeno seeds.

Provided by France C

Time 25m

Number Of Ingredients 9

1 medium poblano pepper
1 medium jalapeno pepper
2 (14.5 ounce) cans fire-roasted diced tomatoes
1 small white onion, raw
1 clove garlic, minced
½ cup cilantro, minced
1 medium lime, juiced
¼ teaspoon chipotle powder
salt to taste

  • Roast peppers and onion on the preheated grill, turning occasionally, until all sides are charred and blistered, 6 to 8 minutes.

STUFFED POBLANO PEPPERS (OAMC)

Stuffed Poblano Peppers (Oamc) image

This is my recipe. I love chile relleno, but I wanted something with a little extra something and this is what I came up with. My DH and Sister absolutely love them as do my nephews. I usually do this in two steps (days) as it makes assembly easier. These freeze great so make a lot when peppers are in season.

Categories     Peppers

Time 55m

Yield 6 peppers, 6 serving(s)

Number Of Ingredients 14

4 -6 large poblano peppers
1 lb sausage (Breakfast mild)
6 ounces chorizo sausage
2 green onions
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
3 ounces cream cheese, softened
1 1/2 cups Mexican blend cheese (shredded)
1 cup flour
1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs, seperated (whites beaten to white foam)

Steps:

  • Roast peppers either on a gas burner or in the broiler. I prefer the broiler because you can do all the peppers at once. Broil until skin is bubbly and starts to turn black, turn and broil all sides.
  • Take out of broiler and put into a paper sack roll top down to seal and set aside.
  • Fry sausages and drain. Add to other mixture ingredients and mix together.
  • Cut stem out of peppers try to keep hole as small as possible and remove seeds by rinsing.
  • Take mixture insert into hole on top of pepper, then use fingers to press to bottom of peppers. Do not pack too tight our you will tear the peppers. After all peppers are filled chill for 1 hour.
  • Up to this step can be done ahead of time even up to 2 days ahead. You will want to take peppers out of fridge for 1/2 hour if they have been in there for longer than 3 hours.
  • Mix batter ingredients, folding in eggs whites at the very last.
  • Roll peppers in flour before dipping in batter.
  • Heat oil in large skillet to 350°F or until batter dropped in bubbles and cooks slowly. Turn to make sure all sides are fried.
  • If oil is too hot, batter will cook but inside will not get melty and gooey. If this happens take pepper and wrap in foil and place in oven at 350 for 10 minutes or so. Cooking time is per pepper.
  • OAMC: Fry and then freeze. I wrap each individual pepper in foil. To reheat let thaw, place peppers in a cold oven and turn to 350°F Let cook about 30 minutes then unwrap foil to crisp up batter and cook for another 15 minutes. Just as good this way, maybe even better.

  • Char the outside of the pepper under the broiler, on the grill, or on the gas flame if you have a gas stove.Place the roasted peppers in a bowl and cover so the steam will allow the skin to soften and can be peeled off. Peeling back all of the skin isn't necessary, it's really your preference how much you take off.
  • Chop the onions, bell pepper, and tomatoes into a medium dice. Set aside. (optional, for a pop of color on the top of your stuffed peppers, you can hold back a few pieces of the chopped tomato and place them on top of the stuffed peppers once they're in the baking dish. After chopping them, set aside a few of the brighter pieces if you want to do this)
  • Peel away as much charred skin from the roasted pepper as you prefer. Carefully slice a T shape down one side of the pepper (I look for a flat side). Remove the interior portion of the stem but leaving the exterior intact if you can. Remove the seeds.
  • Cover your dish with foil and bake at 375F for 20 minutes, then uncover and bake an additional 10-15 minutes longer or until bubbly and the cheese is browning.
