Roasted Corn Salsa image

Roasted Corn Salsa is full of sweet corn, jalapenos, poblano peppers, onion, and garlic. So many fresh flavors in this healthy salsa.

Number Of Ingredients 11

3 ears corn, (husks and silks removed)
1 medium sweet, yellow, or white onion, (cut into 1/2-inch slices)
1 pound plum tomatoes, (cored and cut in half)
1 poblano pepper, (stemmed, halved and seeded)
1 jalapeno pepper, (stemmed, halved and seeded)
2 garlic cloves, (peeled)
1 tablespoon vegetable or olive oil
1 teaspoon salt, (divided)
2 tablespoons lime juice
1/4 teaspoon cayenne pepper
1/3 cup chopped fresh cilantro

Steps:

  • Place the top oven rack about 6 inches from the broiler. Turn the broiler on.
  • On a rimmed baking sheet, toss the corn, onion, tomatoes, poblano, jalapeno and garlic with the oil and 1/2 teaspoon of salt.Turn the tomato halves and peppers so that they are skin side up.
  • Broil until the vegetables are charred well, about 12 to 15 minutes. Watch them carefully because the amount of heat that broilers give off can vary greatly.Let cool 10 minutes and then remove the skins from the poblano and jalapeno. If the tomato skins are black with char, remove them too.
  • Cut the kernels from the corn cobs and place in a large bowl.
  • Place the onions, poblano peppers, and jalapeno peppers in a food processor. Pulse 8 to 10 times. Transfer to bowl with the corn.
  • Add the tomatoes, lime juice, garlic, cayenne pepper, and remaining 1/2 teaspoon of salt to the food processor.Process until mostly smooth.Add to bowl with corn and stir to combine.
  • Stir in cilantro. Cover and refrigerate for 1 hour before serving.

Delicious fresh fire roasted corn salsa, fantastic as a topping for meats, chicken, sea food, Mexican food, as a side, good on shrimp and grits, or just as a dip with tortilla chips. I personally like it as a topping with cauliflower waffles

3 ears of fire roasted corn, shucks removed and corn stripped from cob
3 medium red tomatoes diced
2 medium sweet or banana peppers chopped
2 medium hot jalopeno or hot banana peppers
3 large green onions, tops and bottoms chopped
1 tsp chopped garlic
2 Tbsp olive oil
4 Tbsp red wine vinegar
2 tsp chipotle chili powder
4 Tbsp parsley flakes
2 tsp tajin classic seasoning
1 tsp cumin
1 Tbsp lime juice
salt to taste

Steps:

  • 1. Roast corn in shucks on grill or open fire till black, remove shucks and strip corn from cob (corn should be light brown)
  • 2. Chop tomatoes, peppers, onions, add to bowl with corn.
  • 3. add remaining ingredients, taste, add salt to taste. Chill for at least a hour or longer for ingredients to come together. Enjoy!!!!
  • 4. ***Hint*** Tajin classic spice mix can be found in the produce section of most grocery stores or the spice isle

Tortilla Crusted Salmon with Fire Roasted Corn Salsa image

Number Of Ingredients 16

4 ears fresh corn, roasted on broiler and cleaned off cob
6 tomatillos, peeled, washed and small diced
1 jalapeno, oiled, broiled de-seeded and small diced
1 tomato, cored and diced medium
1 red bell pepper, seeded, pith removed and small diced
1 green bell pepper, seeded, pith removed and small diced
1 ounce cilantro leaves, chopped fine
1/2 cup fresh lime juice
2 cloves garlic, minced
Hot pepper sauce, to taste
Salt and pepper, to taste
Canola oil, for pan frying
1/2 pound blue corn tortillas
4 salmon fillets, 6 ounces each
2 cups salt and peppered flour
6 eggs plus 2 ounces milk, for egg wash

Steps:

  • Mix all ingredients for Salsa and Let sit for 4 hours. Preheat oven to 325 degrees F.
  • Bake Corn Tortillas in a 325 degree oven until crispy, cool. Then grind tortillas in a blender or food processor until pulverized into a dust. Place salmon, skin side up, into flour, then egg wash and finally the tortilla crumbs. After salmon is coated, heat oil in skillet and place salmon, tortilla side down into the hot oil. Pan fry until crust sets and a little browning occurs. Drain oil and flip salmon, then place salmon in a 325 degree oven for 8 to 10 minutes.
  • Heat salsa in a skillet and place over the salmon before serving.
