CANDIED PECANS

These candied pecans are perfect to serve with cocktails or toss over salads, and the best part is that they take just 15 minutes to make!

Yield Makes 2 cups

Number Of Ingredients 5

½ cup Confectioners' sugar
¾ teaspoon kosher salt
½ teaspoon cayenne pepper
4 teaspoons water
2 cups pecans

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the Confectioners' sugar, kosher salt, cayenne pepper, and water.
  • Add the pecans to the sugar mixture and stir until the nuts are evenly coated.
  • Transfer the pecans to the prepared baking sheet and arrange in a single layer. Do your best to make sure the nuts are evenly spread out (if they are clumped together, they won't cook evenly). Scrape out every last bit of glaze from the bowl and drizzle over the nuts. Bake for 10 to 12 minutes, until the pecans are caramelized and the caramel on the baking sheet is a rich brown color but not burnt. (The nuts around the edges will darken first; watch closely so they don't burn.)
  • Immediately slide the parchment off of the hot baking sheet and allow the pecans to cool completely on the countertop (this stops the cooking process and prevents the nuts from burning). Once cool, remove the pecans from the parchment, breaking apart any clusters if necessary, and store in an airtight container for up to two weeks.
  • Note: If the nuts are sticky after cooling, that means they are a bit undercooked. Pop them back in the oven for a few minutes and let cool again.

This 3-ingredient Roasted Pecans recipe is a healthy snack that can be made sweet or savory! It takes less than 20 minutes to prepare the best roasted pecans in your oven or on the stove.

2 cups raw pecans
1/2 tbsp avocado oil (or butter flavored coconut oil (can sub with ghee or butter if not dairy-free))
1/4 tsp fine sea salt
1/2 tsp optional seasonings (cinnamon, pumpkin pie spice, apple pie spice or gingerbread spice)
1/2 tsp optional herbs (dried rosemary or dried thyme)

Steps:

  • Preheat the oven to 375°F. Line a large baking sheet with parchment paper. Add the pecans on the baking sheet and drizzle with oil, tossing well to coat.
  • Sprinkle with sea salt and desired seasonings or herbs, mix to combine and spread out evenly into a single layer.
  • Bake for 6-8 minutes, until fragrant and toasted.
  • Remove pan from oven and allow to cool for at least 10 minutes.
  • Transfer to a bowl or store in a glass jar or airtight container.
  • In a large skillet, heat oil or butter flavored coconut oil over medium heat.
  • Add pecans and stir to coat. Sprinkle with salt and desired seasonings or herbs. Toss until combined.
  • Cook for 3-5 minutes, stirring occasionally, until fragrant and toasted.
  • Allow to cool before serving.

Number Of Ingredients 4

1 cup sugar
1/2 cup water
1 teaspoon red food coloring, optional
2 cups raw Spanish peanuts with skins (no substitutes)

Steps:

  • In a heavy saucepan, combine the sugar, water and food coloring if desired. Bring to a boil over medium heat; stir in peanuts. Cook, stirring occasionally, for 12 minutes or until peanuts are coated and no syrup remains. Spread peanuts into an ungreased 15x10x1-in. baking pan; separated with a fork. Bake at 300° for 30 minutes, stirring every 10 minutes. Cool. Store in an airtight container at room temperature.
