Time 4h

Yield about 24 cookies

Number Of Ingredients 12

2 cups all-purpose flour, plus more for dusting
1 1/4 teaspoons baking powder
1/4 teaspoon salt
1 stick unsalted butter, at room temperature
1/3 cup packed light brown sugar
1/3 cup granulated sugar
1 large egg
2 teaspoons pure vanilla extract
1 cup dried figs, stems trimmed (about 5 ounces)
1/2 cup raspberry jam
1/2 cup cranberry-raspberry juice or raspberry-apple cider
1 large egg, lightly beaten

Steps:

  • Make the dough: Whisk the flour, baking powder and salt in a medium bowl. Beat the butter, brown sugar and granulated sugar in a large bowl with a mixer on medium-high speed until fluffy, about 3 minutes. Add the egg and vanilla and beat until combined. Reduce the mixer speed to low; add the flour mixture and beat until just combined. Divide the dough in half and shape into two 2-by-6-inch rectangles. Wrap each rectangle in plastic wrap and refrigerate until firm, at least 1 hour.
  • Meanwhile, make the filling: Combine the dried figs, jam and juice in a small saucepan. Bring to a simmer over medium-low heat and cook, stirring frequently, until the juice is syrupy, about 25 minutes. Let cool slightly, then transfer to a food processor and puree until smooth. Set aside to cool completely.
  • Line a baking sheet with parchment paper. Lightly flour 1 piece of dough and roll it out between 2 sheets of parchment paper into a 4-by-12-inch rectangle. Repeat with the remaining dough. Refrigerate until firm, about 30 minutes.
  • Remove the top pieces of parchment and trim the edges of the dough rectangles. Spread the filling lengthwise down the center of each dough rectangle in a 2-inch-wide strip. Brush the long edges lightly with the beaten egg. Fold 1 long side of dough over the filling, then fold over the other long side; press gently to seal. Place both logs seam-side down on the prepared baking sheet, a few inches apart, and refrigerate until firm, about 30 minutes.
  • Preheat the oven to 375 degrees F. Bake the cookie logs until golden brown, rotating the pan halfway through, about 20 minutes. Let cool 15 minutes on the pan. Transfer the logs to a cutting board; slice into 1-inch pieces and transfer to racks to cool completely.

Time 50m

Yield 6 servings

Number Of Ingredients 11

10 fresh figs (about 1 pound), halved lengthwise
6 dried figs, thinly sliced
1 cup fresh raspberries
1/2 cup all-purpose flour
2 1/4 cups heavy cream
1/2 cup sugar
3 eggs
Pinch salt
1/3 cup sliced almonds
2 teaspoons confectioners' sugar
1/4 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F. Arrange the fresh figs, cut side up, in a buttered 2-quart baking or gratin dish. Sprinkle the dried figs and raspberries around and on top of the fresh figs. Set aside. In a blender or food processor, combine the flour, 1 1/4 cups of the cream, the sugar, eggs, and salt. Process until well-mixed, about 30 seconds. Pour the batter over the fruit. Sprinkle the top with the sliced almonds. Bake in the middle of the oven until the top is golden and the batter is slightly firm to the touch, 25 to 30 minutes. Transfer the pan to a rack and let it cool for 15 minutes. In the meantime, combine the remaining 1-cup cream with the confectioners' sugar and the vanilla, and whip until soft peaks form. Spoon the clafoutis onto individual plates, and serve with whipped cream.

FIG AND RASPBERRY CAFLOUTI

Categories     Fruit     Dessert

Yield 6 people

Number Of Ingredients 11

1 pound (about 9) fresh figs, halved lengthwise
1/2 cup raspberries
1/4 cup blanched whole almonds
2 tablespoons all-purpose flour
3/4 cup milk
1/3 cup plus 2 tablespoons sugar
2 large eggs
1 tablespoons Tawny Port
1/4 teaspoons salt
2 tablespoons cold unsalted butter, cut into bits
Whipped cream (as accompaniment if desired)

Steps:

  • Arrange the figs cut side up decoratively in a buttered 11-inch-long gratin pan, 1 1/2 inches deep (5 cups), and sprinkle the raspberries around them. In a blender or food processor grind the almonds finely with the flour, add the milk, 1/3 cup of sugar, the eggs, the Port, and the salt, and blend the custard well, stopping the motor and scrapping down the sides as necessary. Pour the custard slowly over the fruit, dot the fruit with the butter, and sprinkle it with the remaining 2 tablespoons sugar. Bake the clafouti in the middle of a preheated 400 degree oven for 30 to 40 minutes, or until the top is golden and the custard is set, transfer it to a rack, and let it cool for 20 minutes. Serve the clafouti warm with the whipped cream if desired.

MISSION FIG CLAFOUTI

Mission Fig Clafouti image

Clafouti is a country French baked pudding, versatile enough to serve for breakfast, brunch, tea or dinner, and suited to a wide variety of fruits. Figs, cherries and other stone fruits work well, and I've also made savory clafoutis with fresh corn and mushrooms. I think it's charming to cook and serve this from a cast-iron pan - especially mini pans that make individual servings - but you can use decorative porcelain pie pans, individual gratin dishes or any skillet providing it is not nonstick. Clafouti tastes and looks best served directly from the oven, while it's puffy and light. It can also be served at room temperature, but it will settle in the pan as it cools. Michael's notes: If you plan to serve individual clafoutis from mini pans, heat the pans in the oven until quite hot, about five minutes, then divide the cooked fruit among the pans, top with the batter and bake. Cooking time will vary depending on the size of the pans. To make a cherry clafouti, use 1 1/4 cups pitted cherries. Substitute 1 teaspoon grated lemon zest for the cinnamon and Grand Marnier for the grappa.

Time 50m

Yield 6 servings

Number Of Ingredients 13

1/2 cup unbleached all-purpose flour
1/3 cup plus 2 teaspoons granulated sugar
1/4 teaspoon ground cinnamon
Pinch salt
3 eggs, plus 1 egg yolk
1 cup milk
1/4 vanilla bean, split lengthwise
2 tablespoons unsalted butter
1 1/2 cups black mission figs, halved
2 tablespoons granulated sugar
1 teaspoon grappa, Calvados, or other fruit brandy
Confectioners' sugar, for dusting
1/3 cup creme fraiche

Steps:

  • Preheat the oven to 400 degrees F.
  • Make the batter: Sift the flour, granulated sugar, cinnamon and salt into a bowl. In a separate bowl, whisk the eggs, egg yolk, and milk until well blended. Add about 1/3of the egg mixture to the flour mixture and whisk to form a paste, then gradually incorporate the remaining egg mixture. Whisk until well blended.
  • Cook the figs: With the tip of a knife, scrape the vanilla bean seeds from the pod into an ovenproof 10-inch cast iron or stainless steel skillet. Add the pod and the butter and cook over moderately high heat until the butter turns nut brown. Add the figs and cook, stirring often, for about 1 minute to soften them. Remove the vanilla bean pod and discard. Sprinkle the figs with the granulated sugar, reduce the heat to moderately low, and cook until the the sugar has melted and is coating the figs in a light syrup. Add the grappa or other brandy, swirl the pan briefly, then spread the fruit evenly in the pan.
  • Remove the pan from the heat. Working quickly, pour the batter through a sieve evenly over the fruit. Bake until the edges of the clafouti are puffed and browned and the center is set, about 15 minutes. Remove from the oven.
  • Put some confectioners' sugar in a sieve and generously dust the surface of the clafouti. Serve warm directly from the pan with a dollop of creme fraiche.
