Around the holidays, saucy cocktail meatballs are always the first appetizer to go. In this dish, the sweet flavor of the fig glaze goes perfectly with the pork and tangy goat cheese. Serve hot from the skillet or gently reheat them for a make-ahead appetizer. -Kim Banick, Turner, Oregon

Number Of Ingredients 12

1 cup panko bread crumbs
2 large eggs, lightly beaten
2 pounds bulk Italian sausage
1 log (4 ounces) fresh goat cheese
1 cup red wine vinegar
1/2 cup sugar
1 cinnamon stick (3 inches)
4 whole cloves
1 whole star anise
1 cup dried figs, chopped
1 cup water
Chopped fresh chives, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine bread crumbs and eggs. Add sausage; mix lightly but thoroughly. Divide into 36 portions. Shape each portion around 1/2 teaspoon cheese to cover completely. Place meatballs on a greased rack in a 15x10x1-in. baking pan. Bake until cooked through, 25-30 minutes., Meanwhile, in a large saucepan, bring vinegar, sugar, cinnamon, cloves and star anise to a boil. Reduce heat; simmer 5 minutes. Discard cinnamon, cloves and star anise. Add figs; cook until softened, 8-10 minutes. Remove from heat; cool slightly. Transfer to a blender. Add 1 cup water; process until almost smooth. Serve with meatballs. If desired, top meatballs with chopped chives. Freeze option: Freeze cooled meatballs and sauce in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, stirring gently; add a little water if necessary.

¼ cup canola oil
1 large yellow onion, cut into thin slices
¼ cup small dried Mission figs
6 ounces goat cheese, softened
40 crackers

Steps:

  • Heat a skillet over medium heat; add oil. Add onion; cook and stir until onion has softened and turned translucent, about 5 minutes. Reduce heat to low and continue cooking and stirring until onion is very tender and dark brown, about 40 minutes more. Remove from heat and cool.
  • While the onion is cooling, cut the figs lengthwise into 1/4-inch rounds.
  • Layer 1/4 teaspoon goat cheese, 1/4 teaspoon caramelized onions, and 1 or 2 fig slices on each cracker.

After cooking meatballs in the air fryer, I will never bake them in the oven again. The insides stay nice and tender while the outsides get a slight crisp on them. The best part is that you can make them ahead of time and freeze for later use. I have included those directions in the notes. Dip meatballs in marinara, if desired.

16 ounces lean ground beef
4 ounces ground pork
1 teaspoon Italian seasoning
½ teaspoon salt
2 cloves garlic, minced
1 egg
½ cup grated Parmesan cheese
⅓ cup Italian seasoned bread crumbs

Steps:

  • Preheat the air fryer to 350 degrees F (175 degrees C).
  • Combine beef, pork, Italian seasoning, salt, garlic, egg, Parmesan cheese, and bread crumbs in a large bowl. Mix well until evenly combined. Form into 16 equally-sized meatballs using an ice cream scoop and place on a baking sheet.
  • Place 1/2 of the meatballs in the basket of the air fryer and cook 8 minutes. Shake the basket and cook 2 minutes more. Transfer to a serving plate and let rest for 5 minutes. Repeat with remaining meatballs.

100g log rind-on goat's cheese
30g honey
20g pistachios, finely chopped
a few small thyme sprigs, roughly chopped

Steps:

  • Arrange the figs on a tray, cut-side up. Slice the goat's cheese into eight rounds, then cut each round in half.
  • Gently push the goat's cheese pieces into the cut sides of the figs, then season with a little salt and pepper, drizzle with the honey and scatter with the pistachios and thyme.

oil , for brushing
6 figs
200g soft goat's cheese
1head radicchio
85g walnut pieces
6 tbsp olive oil
3 tbsp balsamic vinegar

Steps:

  • Preheat the oven to fan 160C/conventional 180C/gas 4. Unless the baking sheet is non stick, line it with foil, then brush the foil lightly with oil.
  • Cut the figs into quarters, from the top almost to the base, and arrange on the foil. Slice the goat's cheese and arrange in the centre of the figs. Bake for 10-15 minutes until the cheese is melted and tinged brown.
  • Meanwhile, whisk the dressing ingredients with some seasoning. Put a couple of good radicchio leaves on each serving plate. Remove the figs from the oven and place on the radicchio leaves. Scatter the walnuts on top. Drizzle with the dressing and serve warm or at room temperature.

2 ounces, approximately, of soft, fresh goat cheese
1 tablespoon good balsamic vinegar
12 fresh figs, washed and drained

Steps:

  • Use your fingers to roll the goat cheese into 24 1/2 teaspoon-sized balls.
  • Cut figs in half. Press a cheese ball into the center of each fig. Plate them and drizzle with vinegar. Serve within an hour.
