1 lb bulk Italian pork sausage
2 cans (14.5 oz each) diced tomatoes with basil, garlic and oregano, undrained
1 can (8 oz) tomato sauce
1/2 cup assorted small pitted olives
1 package (9 oz) refrigerated fettuccine
1/2 cup shredded Parmesan cheese (2 oz)

Steps:

  • Heat water for cooking fettuccine to boiling. Meanwhile, in 12-inch skillet, cook sausage over medium-high heat 5 to 7 minutes, stirring occasionally, until no longer pink; drain if necessary.
  • Stir tomatoes, tomato sauce and olives into sausage. Reduce heat to low. Cover; cook 10 to 15 minutes, stirring occasionally, to blend flavors.
  • Cook and drain fettuccine as directed on package. Serve sauce over fettuccine. Sprinkle with cheese.

1 (16 ounce) package linguine
3 tablespoons olive oil
1 small sweet onion, thinly sliced
1 teaspoon minced garlic
1 (14.5 ounce) can diced Italian tomatoes
1 (10.5 ounce) can chicken broth
2 cups broccoli florets

Steps:

  • Prepare sausage according to directions. Cool slightly; cut into 1/4-in. slices. Prepare pasta according to package directions.
  • In a large saucepan, saute the onion and garlic in olive oil until tender. Stir in tomatoes and chicken broth. Bring to a simmer. Add the broccoli and cooked pasta. Cook until broccoli is tender, about 5 minutes. Add sausage; toss to combine.

1 pound Italian sausage links
½ pound lean ground beef
1 tablespoon olive oil
1 onion, chopped
1 clove garlic, chopped
1 (16 ounce) can canned tomatoes
1 (15 ounce) can canned tomato sauce
1 teaspoon salt
¼ teaspoon ground black pepper
1 teaspoon dried basil
1 teaspoon dried oregano
1 bay leaf

Steps:

  • Removed casing from sausage links and cut into 1/2 inch slices. In a large skillet, brown sausage over medium heat for about 10 minutes; remove and set aside.
  • In a large skillet, heat ground beef, olive oil, garlic and onion over medium heat until meat is nicely browned; drain.
  • Pour in tomatoes and tomato sauce; mix in salt, ground black pepper, basil, oregano, bay leaf and cooked sausage. Simmer uncovered for 1 hour, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Mix cooked sauce with hot pasta and remove bay leaf from sauce before serving.

Number Of Ingredients 10

500 g fettuccine pasta
500 g italian-style pork sausages
2 tablespoons olive oil
150 g button mushrooms, sliced
2 garlic cloves, crushed
100 g green olives, large, seeded, sliced
1 teaspoon lemon rind, grated
1 tablespoon lemon juice
2 tablespoons parsley, fresh, chopped
300 ml cream

Steps:

  • Bring a large saucepan of water to a boil. (If desired, add a little salt to the boiling water to season it.).
  • Add the pasta and cook till just tender. Drain well.
  • Cook sausages in a dry pan over medium heat, turning regularly, for at least 10 minutes, or until browned and cooked through. Drain on absorbent paper and cut sausages into 1 cm slices.
  • Heat oil in a saucepot and add the mushrooms and garlic. Cook, stirring constantly, for at least 2 minutes or until the mushrooms have softened.
  • Add the sliced sausage, olives, lemon rind, lemon juice, parsley and cream.
  • Allow it to simmer, stirring occasionally, for about 10 minutes or until reduced by one-third.
  • Add pasta and cook, stirring occasionally, for about 3 minutes or until the pasta is heated through.
