8 ounces uncooked fettuccine
3 cups chopped cooked chicken
3 tablespoons olive or vegetable oil
1 teaspoon garlic salt
2 large tomatoes, chopped (2 cups)
Chopped fresh basil leaves, if desired

Steps:

  • Cook and drain pasta as directed on package.
  • Toss pasta and remaining ingredients except basil. Top with basil.

Quick and Easy Chicken and Tomato Pasta image

This is a quick, easy, and delicious chicken and tomato pasta dish for those crazy carpool nights. Also good for lunch leftovers the next day.

½ (16 ounce) package angel hair pasta
olive oil
2 skinless, boneless chicken breast halves - chopped
2 teaspoons garlic and herb seasoning blend
1 (6 ounce) can sliced black olives, drained
1 (8 ounce) can sliced mushrooms, drained
2 (16 ounce) cans diced tomatoes
freshly grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Boil pasta for 8 to 10 minutes, or until al dente. Drain.
  • Heat olive oil in a large skillet over medium high heat. Sprinkle chicken with seasoned salt, and cook for 2 to 3 minutes. Stir in drained black olives and mushrooms. Continue cooking, stirring occasionally, until chicken is golden brown. Strain chicken juices from pan, and reduce heat to low. Stir in tomatoes, cover, and simmer for 15 minutes.
  • Toss the pasta and chicken mixture together, sprinkle with Parmesan cheese, and serve.

8 ounces fettuccini pasta
2 tablespoons butter
3 skinless, boneless chicken breast halves - cut into chunks
8 ounces mushrooms, sliced
1 teaspoon garlic salt
⅛ teaspoon ground black pepper
1 ½ cups heavy cream
¼ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add fettuccine and cook for 8 to 10 minutes or until al dente; drain.
  • In a large skillet, brown chicken and mushrooms in butter until chicken is cooked through. Season with garlic salt and pepper. Add whipping cream and cook until thick, stirring constantly. Add parmesan cheese when at desired consistency. Serve over noodles.

A very light and colorful dinner anyone would enjoy! This is a terrific way to make something truly special (and tasty!) from common ingredients we all have on hand.

16 oz fettuccine, uncooked
2 large chicken breast halves, skinless and boneless, diced
1 medium onion, chopped
4 zucchini (approximately 5 in. long and 1 to 1 1/2 in. in diameter)
4 yellow squash (same size as above)
2 can(s) diced tomatoes w/Italian seasoning, 15.5 oz
1 tsp dried Italian seasoning
1 Tbsp garlic, minced
1 tsp canola oil
1/4 c water
1 c grated Parmesan cheese

Steps:

  • 1. Prepare fettuccine per directions, cooking until al dente. Drain and set aside.
  • 2. Cook chicken on med/high heat in a non-stick skillet until done. Set aside until cool to the touch. Dice chicken into pieces.
  • 3. Chop onion into a large dice. Slice zucchini and yellow squash into 1/4 inch medallions (may have to cut some of the squash medallions in half on larger end).
  • 4. In that same large skillet over medium heat, saute onion in canola oil. When almost translucent, add zucchini and water. Add chicken, yellow squash, garlic, and dried Italian seasoning. Cook until squash and zucchini are desired tenderness. Add both cans of tomatoes and continue cooking until heated through. Add cooked fettuccine and toss to blend. Sprinkle with Parmesan before serving.

6 boneless skinless chicken breast halves (4 ounces each)
1 tablespoon butter
1 tablespoon canola oil
1 medium onion, coarsely chopped
1/2 cup minced fresh basil or 1 tablespoon dried basil
4 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup chicken broth
1/2 cup heavy whipping cream
2 tablespoons dried parsley flakes
2 large tomatoes, diced
1 package (16 ounces) fettuccine

Steps:

  • Flatten chicken to 1/2-in. thickness. In a skillet, brown chicken on both sides in butter and oil; remove and set aside. In the same skillet, saute onion until tender. Add basil, garlic, salt and pepper; cook and stir for 2-3 minutes. stir in broth, cream, parsley an tomatoes. Return chicken to pan. Cover and simmer for 15 minutes or until chicken juices run clear. , Meanwhile, cook fettuccine according to package directions; drain. Arrange chicken over fettuccine; serve with sauce.

Creamy tomato sauce with some chicken and spinach. You can also serve this on a bed of rice, or by itself.

1 pound Chicken, broilers or fryers, thigh, meat only, raw
1 pinch chili powder, or to taste
salt and ground black pepper to taste
1 tablespoon olive oil, or as needed
5 cloves garlic, minced
1 (16 ounce) can tomato sauce
1 cup heavy cream
1 (8 ounce) package fresh spinach
1 tablespoon chopped fresh basil, or to taste
1 (16 ounce) package penne pasta

Steps:

  • Pat chicken dry and season with chili powder, salt, and pepper.
  • Heat oil in a pan over medium-high heat. Sear chicken in the hot oil until browned, about 3 minutes per side. Remove to a clean plate.
  • Place garlic in the leftover juices in the pan and saute over medium heat until aromatic, 30 seconds to 1 minute. Stir in tomato sauce and heavy cream; reduce heat to low. Add spinach and basil and cook and stir until spinach wilts. Add chicken to the sauce and cook until chicken is no longer pink in the centers.
  • While chicken mixture cooks, bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Serve chicken mixture on top of pasta.
