LIGHT AND FLUFFY OMELETS



Light and Fluffy Omelets image

Number Of Ingredients 6

1/8 teaspoon salt
Pinch ground white pepper
1 tablespoon unsalted butter, melted
*3 tablespoons grated cheese, such as cheddar or Swiss (optional)
3 large eggs
2 tablespoons heavy cream

Steps:

  • Place the eggs, heavy cream, salt and pepper in the blender and mix until very frothy, about 1 minute. Heat a saute pan over medium heat and, when hot, add the butter to the pan, swirling to coat. Pour the egg mixture into the pan. Using the rubber spatula, stir continuously and scrape down sides so as to evenly cook the mixture. Once the mixture resembles wet scrambled eggs, after about 30 seconds, use the rubber spatula to smooth the eggs so that they are an even depth throughout. Cook until almost set, about 10 seconds longer, and use the rubber spatula to fold the omelet in 1/2. Carefully slide the omelet out of the pan onto the plate.
  • Serve immediately.

This is a delicious, healthy breakfast (or anytime) option for the health-conscious omelette-lover. I make these ALL the time!! They're easy to make and delicious. The ingredients I have listed can easily be customized to fit any taste, and the amount of egg substitute/egg white used depends on the size of the frying pan or how thick you want your omelette to be. cooking spray
1 cup egg substitute (or beaten egg whites)
1/4 cup shredded fat-free cheddar cheese
1/4 cup diced tomato
1/4 cup diced onion
1/4 cup diced green pepper

Steps:

  • Rinse and chop vegetables to desired size.
  • Spray large frying pan lightly with cooking spray, then heat pan under medium-low heat.
  • Pour egg substitute or beaten egg whites into heated frying pan.
  • Add all other ingredients.
  • Cover and let cook; omelette should be flipped when the top part appears to be getting dry.
  • Enjoy!

2 large eggs
4 large egg whites
1/4 cup fat-free milk
1/8 teaspoon salt
1/8 teaspoon pepper
1/4 cup cubed fully cooked ham
1 tablespoon chopped onion
1 tablespoon chopped green pepper
1/4 cup shredded reduced-fat cheddar cheese

Steps:

  • Whisk together first 5 ingredients., Place a 10-in. skillet coated with cooking spray over medium heat. Pour in egg mixture. Mixture should set immediately at edges. As eggs set, push cooked portions toward the center, letting uncooked eggs flow underneath. When eggs are thickened and no liquid egg remains, top 1 half with remaining ingredients. Fold omelet in half. Cut in half to serve.

  • Combine salt, pepper, eggs and milk in a small bowl. Stir with a whisk until just blended (do not overbeat).
  • Heat oil in a large skillet over medium-high heat. Add mustard seeds and turmeric; cook 30 seconds or until seeds pop, stirring frequently. Add onions; cook 30 seconds or until soft, stirring frequently. Add tomato, bell pepper and spinach; cook 1 minute or until very soft, stirring frequently.
  • Lower heat to medium. Pour egg mixture into pan; spread evenly. Cook until edges begin to set (about 2 minutes). Slide front edge of spatula between edge of omelet and pan. Gently lift edge of omelet, tilting pan to allow some uncooked egg mixture to come in contact with pan. Repeat procedure on the opposite edge.
  • Continue cooking until center is just set (about 2 minutes). Loosen omelet with a spatula, and fold in half. Carefully slide omelet onto a plate. Enjoy!
