- 1. Preheat the oven to 350°F. Spray a 9 x 13-inch baking pan with nonstick spray. 2. Combine the flour, sugar, cocoa, baking soda, and salt in a large bowl. Combine the milk, applesauce, egg substitute, and vanilla in another bowl. Add the milk mixture to the flour mixture. Add the zucchini and stir until just blended. 3. Pour the batter into the pan. Bake until a toothpick inserted in the center comes out clean, about 30 minutes. Cool the cake in the pan on a rack 10 minutes; remove from pan and cool completely on rack. Cut into 24 pieces. - Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour, baking powder, baking soda, salt, cinnamon and cocoa powder. Set aside.
- In a large bowl, cream together the butter, oil and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. In a small bowl, combine shredded zucchini with milk. Beat in the flour mixture alternately with the zucchini mixture. Pour batter into prepared pan.
- Bake in the preheated oven for 55 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

- In a medium bowl, stir together the flour, sugar, cocoa, baking soda, baking powder, salt and cinnamon. Add the eggs and oil, mix well. Fold in the nuts and zucchini until they are evenly distributed. Pour into the prepared pan.
