4 cups bread, cubes
2 cups skim milk, hot
2/3 cup brown sugar (try SugarTwin Brown)
1/2 cup raisins
2 apples, sliced thin
1/2 teaspoon cinnamon
1 teaspoon vanilla
3 egg whites (Just Whites or Egg Beaters)

Steps:

  • Preheat oven to 350 degrees F.
  • Spray 1-1/2 quart baking dish with cooking spray.
  • Combine bread, raisins and apples in a large bowl.
  • Add milk and sugar; mix well.
  • Pour mixture into baking dish.
  • Let stand for 20 to 30 minute.
  • Beat egg whites until foamy.
  • Add vanilla and cinnamon to egg whites, mix well.
  • Pour egg mixture over bread in baking pan.
  • Bake uncovered for 45 minutes to 1 hour until set and lightly browned.

6 slices day-old bread (better if low in fat)
1 tablespoon oil (can use butter or margarine)
1/2 cup raisins (optional)
8 egg whites
2 cups low-fat milk
1/2 cup white sugar (or sweetner)
1 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Break bread into small pieces into an 8 inch square baking pan.
  • Drizzle melted oil over bread.
  • If desired, sprinkle with raisins.
  • In a medium mixing bowl, combine egg whites, milk, sugar, cinnamon, and vanilla Beat until slighty foamy.
  • Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
  • Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.

2 cups skim milk
3 large eggs
5 tablespoons sugar
2 teaspoons vanilla
1/4 teaspoon salt
12 ounces cinnamon-swirl bread, about 12 slices cut into 3/4 inch pieces
1/4 teaspoon cinnamon
3 tablespoons vanilla pudding mix

Steps:

  • Adjust oven rack to middle position and heat oven to 375. Whisk milk, eggs, 4 T sugar, pudding mix, vanilla and salt in large bowl til combined. Stir in bread. Let stand, tossing occasionally, until liquid is absorbed, about 10 minutes.
  • Combine cinnamon and remaining sugar in small bowl. Grease 8" square dish. Transfer bread mixture to prepared pan and sprinkle with cinnamon sugar. Bake until pudding is just set and surface is golden brown, 35-40 minutes. Let cool 30 minutes.

1 (15 ounce) can pumpkin
1 (1 1/3 ounce) box sugar-free vanilla pudding mix
1 teaspoon pumpkin pie spice
1 cup water

Steps:

  • Mix the water and pudding mix together until there are no more lumps.
  • Bring to a slow boil in a saucepan.
  • Stir frequently.
  • Remove from heat and fold in pumpkin and spices.
  • Pour into 8 small serving cups.
  • Refrigerate 2 hours until firm.
  • Top with fat free whipped topping to serve.
  • I tried something a little new based on some suggestions in the comments. This year I used butterscotch pudding (fat free, sugar free instant) and did half water and half light eggnog! Whipped those together REALLY well before folding in the pumpkin. It added about 16 calories a serving, but was WAY creamier and just delicious!
