FAT-FREE BANANA FUDGE BROWNIES
A fat-free alternative to a classic dessert. I used cake meal to weigh down the texture of the brownies, which sometimes fluff up too much when oil or butter isn't used. It also gives the brownies a rich, deep, sweetness and retains moisture better. Also, the course kosher sea salt (preferably Mediterranean sea salt) is a must. The flavor of the chocolate is really dependent on the salt in this recipe, so using good quality course sea salt makes a huge difference.

Steps:
- Preheat oven to 350 degrees F. Grease 13x9-inch baking pan.
- Mash the bananas with a potato masher until smooth with fine lumps.
- Combine sugars and mashed banana in a large bowl.
- Stir in egg whites and vanilla extract.
- Combine flour, cake meal, cocoa, baking powder and salt in a medium bowl and whisk until completely incorporated.
- Stir slowly into sugar mixture.
- Spread into baking pan evenly.
- Bake for 20-25 minutes.
- When center is nearly done cooking, remove and allow to cool.

- Position the rack in lower third of the oven and preheat to 350°F Spray the pan with vegetable oil spray.
- Stir together flour, cocoa, salt, and baking powder with a whisk.
- Melt butter in medium saucepan. Off the heat, stir in the sugar until combined (texture will remain sandy). Add the egg, egg whites, vanilla, and dissolved espresso powder. Beat with a wooden spoon about 40 strokes, scraped side of pan as necessary.
- Add the dry ingredients and beat for another 40 strokes, or until completely mixed. Scrape mixture into prepared pan. Spread evenly.
- Bake 20 to 25 minutes or until a toothpick inserted into the center comes out a little gooey. Cool on a rack. Cut into 16 squares.

EASY BANANA BROWNIES
A small banana is added to a basic made-from-scratch brownie for a hint of banana flavor. This is a fudgy brownie and it does not rise much. Add 1/2 cup chopped nuts or mini chocolate chips for more flavor. No mixer required!

- Preheat an oven to 325 degrees F (165 degrees C). Grease an 8 inch square pan.
- Melt butter in sauce pan over medium-low heat. Remove from heat, add chips, and stir until melted. Set aside to cool for 5 minutes.
- Lightly beat the egg in a medium bowl. Stir in the brown sugar, banana, vanilla, and salt. Pour the melted chocolate mixture into the banana mixture, and stir until well combined. Add the flour, stirring just until incorporated. Spread the batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted near the center comes out with moist crumbs, about 30 minutes. Don't over bake. Remove, and cool pan on wire rack before cutting.
