DORSET APPLE TRAYBAKE
Simple-to-make apple cake that can be cut into bars or squares for a teatime treat

Steps:
- Heat the oven to 180C/160C fan/gas 4. Butter and line a rectangular baking tin (approx 27 x 20cm) with baking parchment. Peel, core and thinly slice the apples, then squeeze over the lemon juice. Set aside.
- Put the butter, caster sugar, eggs, vanilla, flour and baking powder into a large bowl and mix well until smooth. Spread half the mixture into the prepared tin. Arrange half the apples over the top of the mixture, then repeat the layers. Sprinkle over the demerara sugar.
- Bake for 45-50 mins until golden and springy to the touch. Leave to cool for 10 mins, then turn out of the tin and remove the paper. Cut into bars or squares.

Steps:
- Preheat oven to 350 degrees. Prepare an 8 x 8-inch baking pan with nonstick baking spray.
- Sift together flour, sugar, baking soda and spices.
- In a mixer bowl, put egg, egg whites, vanilla, apple sauce and milk. Mix with electric mixer. Gradually add dry ingredients, blending well. Stir in apples and raisins by hand.
- Pour batter into prepared pan and sprinkle with brown sugar.
- Bake for about 50 minutes.

FAT FREE APPLE TRAY BAKE CAKE

Steps:
- Preheat the oven to 180C. Grease a deep baking tray.
- Mix sugar, yoghurt and eggs in a large bowl.
- Stir in apple and dried fruit.
- Combine flour, bicarb and spice by sifting together into the mixing bowl.
- Gently mix everything together, and then pour into the tin.
- Bake for 25-30 mins until springy and easing away from the edges of the tin.
- Combine icing sugar and juice with a fork and then drizzle runny icing over warm cake.
- Cut into portions as soon as the icing is set. When the cake is cool, store it in an airtight plastic tub.

Steps:
- Using a small to medium sized microwave-proof bowl (with lid if you have one), combine Splenda, cornstarch and cinnamon.
- Add 1/3 cup of cold water & vanilla, and whisk until blended. Add diced apple coat them with the cinnamon mixture.
- Cover the dish and microwave for 2 1/2 minutes - apples should appear translucent and be soft, but not be wrinkled. Microwave temperatures vary, so keep an eye on them.
- Leaving the lid on the bowl, allow sauce to thicken on counter or in microwave and cool for a couple of minutes.
- Enjoy fat-free apple dessert OR top with granola, cool whip and sprinkle with cinnamon if desired!

- Peel and core the apples and process them coarsely, in batches, in the food processor. You could grate them coarsely, but it takes longer. Place them into a wide pan, add the sugar and cook gently until the apples are soft and almost all the released liquid is evaporated.
- It took me about 15 minutes, but you might need a bit longer if your apples are juicier. Add the cinnamon and the cloves and stir well. Leave to cool until you prepare the rest.
- Preheat the oven to 180 degrees Celsius/ 350 degrees Fahrenheit. Line a rectangular baking tray with baking paper.
