GRILLED TURKEY SAUSAGE WITH CUCUMBER RELISH



Grilled Turkey Sausage with Cucumber Relish image

Number Of Ingredients 13

2 teaspoons granulated sugar
2 tablespoons white wine vinegar
1/2 teaspoon ground cumin, plus more for sprinkling
1/2 teaspoon dried dill
1/2 teaspoon ground turmeric, plus more for sprinkling
1/4 teaspoon crushed red pepper flakes
2 cups halved and thinly sliced kirby cucumbers
1/4 cup thinly sliced shallot
2 tablespoons extra-virgin olive oil, plus more for brushing
Sea salt and freshly ground black pepper
4 turkey sausages
4 pieces naan bread
2 tablespoons low-fat sour cream, optional

Steps:

  • In a bowl, combine the sugar, vinegar, cumin, dill, turmeric and red pepper flakes and stir together until the sugar is dissolved. Add the cucumbers, shallots and olive oil. Toss well and season to taste with salt and pepper.
  • Prepare a grill for cooking over medium heat.
  • Grill the turkey sausages until seared on both sides and cooked through, about 10 minutes per side. Brush the naan with some oil and sprinkle with cumin and turmeric on one side to add color. Grill , turning once, until warmed, 1 to 2 minutes total.
  • Spread each naan with 1/2 tablespoon sour cream, if desired, and top with some of the cucumber relish. Top with the grilled sausages. Serve extra cucumber relish on the side.

6 cups mixed baby greens
6 radishes, thinly sliced
1 small zucchini, very thinly sliced
1 small summer squash, very thinly sliced
2 cups green beans, trimmed
2 carrots, thinly sliced
4 links of turkey or other low-fat sausage
Four 3/4-inch-thick slices of country sourdough bread (optional)
4 tablespoons Buttermilk Dressing

Steps:

  • Prepare a stove-top griddle or an outdoor grill.
  • In a large bowl, combine all of the vegetables and set aside.
  • Grill the sausage until golden brown, about 5 to 7 minutes. Transfer to a cutting board and cut into 1/4-inch pieces. Grill the bread until golden, about 2 minutes.
  • Toss the sausage into the salad bowl, drizzle the Buttermilk Dressing over, and toss to incorporate. Place a slice of grilled bread on each of 4 dinner plates and arrange the salad over each piece.

1 1/4 pounds lean Italian turkey sausage
2 tablespoons extra-virgin olive oil
3 assorted bell peppers, thinly sliced
1 bulb fennel, trimmed and chopped
1 large onion, cut into wedges
Kosher salt
3 cloves garlic, minced
1 teaspoon chopped fresh rosemary
1/2 teaspoon red pepper flakes
1/2 teaspoon fennel seeds (optional)
1 15-ounce can no-salt-added diced tomatoes
12 basil leaves, chopped, plus more for topping

Steps:

  • Preheat the broiler. Pierce the sausages all over with a fork, arrange on a baking sheet and broil, turning halfway through, until golden brown, about 8 minutes (they will not be fully cooked). Transfer to a cutting board and cut in half on the diagonal.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the bell peppers, fennel and onion and cook, stirring, until they soften slightly, 3 minutes. Add 1/2 teaspoon salt, the garlic, rosemary, red pepper flakes and fennel seeds. Cook, stirring, 1 more minute.
  • Stir in 1/2 cup water, the tomatoes and basil. Reduce the heat to medium; cover and cook until the vegetables are tender, 5 minutes. Uncover; add the sausages and cook through, 3 to 4 minutes. (Add a splash of water if the sauce gets too thick.) Top with more basil.

1 tablespoon sun-dried tomato oil
1 medium red onion, sliced
1 medium bell pepper (any color), sliced

1 ½ teaspoons balsamic vinegar
1 teaspoon dried basil
1 teaspoon dried oregano
salt and freshly ground black pepper to taste
4 (6 inch) hoagie rolls, split lengthwise

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place sausages on the preheated grill. Grill until browned and cooked through, turning occasionally, 10 to 16 minutes. Your cooking time will depend on your grill and how close the sausages are to the heat. An instant-read thermometer inserted into the center should read 165 degrees F (73 degrees C) for well done.
  • Meanwhile, heat sun-dried tomato oil in a skillet over medium heat. Add red onion, bell pepper, and sun-dried tomatoes. Saute, stirring occasionally, until veggies are tender-crisp, 3 to 4 minutes. Drizzle balsamic vinegar over the veggies, then sprinkle with basil, oregano, salt, and pepper; stir until well combined.
  • Place turkey sausages in the rolls and evenly distribute the vegetable mixture over the top.

1 pound new potatoes, halved
1 tablespoon water
2 pounds smoked turkey sausage
3 medium onions
1 medium green bell pepper
1 medium red bell pepper
1 medium yellow bell pepper
10 metal skewers
2 tablespoons olive oil, or as needed
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place potatoes into a microwave-safe bowl with water, cover, and cook on high power until tender, about 8 minutes.
  • Cut each smoked sausage rope into 5 pieces. Chop each onion and bell pepper into 10 chunks. Separate the onion chunks in half.
  • Thread onion, potato, sausage, 3 bell peppers, sausage, potato, and onion onto a metal skewer, in that order. Repeat with remaining skewers. Add remaining potatoes to each skewer.

1 pound garlic summer sausage, casing removed and quartered lengthwise
2 small zucchini, cut in half lengthwise
2 yellow summer squash, cut in half lengthwise
1 medium sweet red pepper, halved and seeded

2 tablespoons olive oil
1/2 teaspoon salt

1/2 English cucumber, chopped

ANNIE'S TURKEY SALAD



Annie's Turkey Salad image

This recipe can be made with leftover turkey, or a turkey breast. It is my great-grandmother's recipe. The cook time will not include the baking of the turkey, just making the salad. Keeping the salad somewhat chunky is part of what makes it good. No food processors, please. I serve this on a bed of red leaf lettuce and garnish with red and green seedless grapes and pecan halves. Cubed jellied cranberry sauce is very good with it, so I place that on the plate around the salad. Serve with assorted crackers or breads.

6 cups cooked turkey meat
1 (16 ounce) jar sweet pickles, chopped
1 ½ (10 ounce) jars mustard-mayonnaise blend
¾ cup mayonnaise

Steps:

  • Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
