THAI CRUNCH SALAD WITH PEANUT DRESSING



Thai Crunch Salad with Peanut Dressing image

Inspired by California Pizza Kitchen's recipe, this Thai crunch salad with peanut dressing always satisfies.

¼ cup creamy peanut butter
2 tablespoons unseasoned rice vinegar
2 tablespoons fresh lime juice, from one lime
3 tablespoons vegetable oil
1 tablespoon soy sauce (use gluten-free if needed)
2 tablespoons honey
2½ tablespoons sugar
2 garlic cloves, roughly chopped
1-inch square piece fresh ginger, peeled and roughly chopped
1 teaspoon salt
¼ teaspoon crushed red pepper flakes
2 tablespoons fresh cilantro leaves
4 cups chopped Napa cabbage or shredded coleslaw mix (I like to toss in a little shredded red cabbage for color)
1 cup prepared shredded carrots
1 red bell pepper, thinly sliced into bite-sized pieces
1 small English cucumber, halved lengthwise, seeded and thinly sliced
1 cup cooked and shelled edamame
2 medium scallions, thinly sliced
½ cup loosely packed chopped fresh cilantro

Steps:

  • For the dressing, combine all of the ingredients except for the cilantro in a blender and process until completely smooth. Add the cilantro and blend for a few seconds until the cilantro is finely chopped. Refrigerate until ready to serve.
  • For the salad, combine all of the ingredients in a large bowl and toss to combine. If serving right away, drizzle the peanut dressing over top and toss; otherwise, serve the dressing on the side so the salad doesn't get soggy.

1 package (14 ounces) coleslaw mix
1/3 cup sesame ginger salad dressing
2 cups cubed cooked chicken
1/2 cup Thai peanut sauce
1 medium sweet red pepper, julienned
1/2 cup chow mein noodles
2 green onions, chopped

Steps:

  • In a large bowl, combine coleslaw mix and salad dressing. Transfer to a serving platter. Combine chicken and peanut sauce; place over coleslaw mixture. Top with red pepper, noodles and onions.

This is a great summer salad. I bring it to barbecues and potlucks and it always vanishes quickly. The Chinese Style Sausage may be found at any asian market.I found this in Thai Cooking Made Easy and played with it a little.If you don't have fresh chilies red pepper chips work well.

2 Chinese sausage
1 tablespoon fish sauce
1 tablespoon lime juice
1 tablespoon seasoned rice vinegar
1 teaspoon sugar
1 teaspoon minced chili
1 cup thinly sliced cucumber
1/2 cup thinly sliced red onion
2 tablespoons shredded gingerroot
cilantro

Steps:

  • Cook sausages, thinly slice on the diagonal set aside.
  • Mix next four ingredients then add all ingredients with sausage.
  • It is best to serve when the sausage is still warm and the cucumber and red onion is cool.

A classic wintry salad topped off with tasty sausage and onion

1 tbsp olive oil
400g pack good quality sausages
1 red onion , roughly chopped
1heaped tbsp wholegrain mustard
1 tbsp light muscovado sugar
16 cherry tomatoes
2 Little Gem lettuces
1large avocado
¼ cucumber
1 tbsp red wine vinegar
crusty bread , to serve

Steps:

  • Heat the oil in a wok or deep frying pan. Using scissors, snip the sausages into quarters straight into the pan. Throw in the onion, and fry for a minute or two, stirring every now and then to brown everything. Spoon in the mustard and sugar, tip in the tomatoes and cook for a few minutes more, stirring occasionally, until the tomatoes are just beginning to split and the mixture is coated in the sweet mustard glaze.
  • Meanwhile, separate the lettuces into leaves, peel, stone and slice the avocado and halve and slice the cucumber. Mix them together and pile onto a platter. Spoon the hot sausage mixture on top. Add the vinegar and 1 tbsp water to the pan and stir it over the heat to dislodge all those tasty flavourings from the pan. Spoon the pan juices over the salad and serve with crusty bread.

1 (14-ounce) package stir-fry rice noodles
1 (14 ounce) package Hillshire Farm® Smoked Sausage, cut crosswise into 1/2-inch-thick slices
2 tablespoons vegetable oil
½ pound peeled and deveined small shrimp
6 green onions, chopped into 1-inch pieces
2 cloves garlic, finely chopped
3 tablespoons soy sauce
3 tablespoons fresh lime juice
3 tablespoons brown sugar
2 teaspoons fish sauce
¼ cup chopped fresh cilantro leaves
½ cup chopped roasted salted peanuts

Steps:

  • Cook noodles according to package directions. Rinse well with cold water to prevent sticking and set aside.
  • Heat a large skillet over medium heat. Add the smoked sausage in a single layer. Cook on both sides until browned, about 6 minutes total. Remove to a plate.
  • Add the vegetable oil to the skillet, then the shrimp, green onions, and garlic. Cook 3 to 4 minutes, until shrimp is opaque.
  • Meanwhile, in a small bowl, whisk together the soy sauce, lime juice, brown sugar, fish sauce, and 2 tablespoons water.
  • Add the noodles and smoked sausage to the skillet, then the soy mixture. Stir well to combine. Increase heat to medium-high and cook 2 to 3 minutes, or until noodles are hot. Mix in 1/2 of the cilantro and peanuts. Ladle pad Thai into serving bowls and top with remaining cilantro and peanuts.
