EXTRA-CHEESY MACARONI AND CHEESE



Extra-Cheesy Macaroni and Cheese image

Yield: 10 to 12 servings

Number Of Ingredients 11

6 tablespoons unsalted butter
1⁄4 cup all-purpose flour
3 cups whole milk
11⁄2 teaspoons salt
1⁄4 teaspoon ground white pepper
1⁄2 teaspoon dry ground mustard
1⁄4 teaspoon ground nutmeg
2 cups shredded mozzarella cheese
5 cups shredded sharp Cheddar cheese, divided
12 ounces pasteurized processed cheese, such as Velveeta, cubed
1 (16-ounce) package elbow macaroni, cooked

Steps:

  • Preheat oven to 450°. Spray a 3-to 4-quart or 13x9-inch baking dish with nonstick cooking spray. Set aside. In a large Dutch oven, melt butter over medium heat. Add flour; cook, whisking constantly, 1 minute. Whisk in milk, salt, pepper, mustard, and nutmeg. Cook, whisking constantly, until thickened, 5 to 6 minutes. Stir in mozzarella, 4 cups Cheddar, and processed cheese until melted. Remove from heat. Stir in cooked pasta. Pour into prepared dish. Bake 10 minutes. Sprinkle with remaining 1 cup Cheddar. Bake until cheese melts, 4 to 5 minutes more.

My Mom has been making mac and cheese this way for as long as I can remember. It gets a cheesy crust on top that the family fights for.

1 1/2 cups extra-sharp cheddar cheese (shredded or sliced)
1 1/2 cups macaroni (cooked)
1 cup milk

Steps:

  • Pre-heat the oven to 400 degrees F.
  • In a 2-quart square baking dish place 1/2 a cup of cooked macaroni in a single layer.
  • Cover macaroni with cheese evenly.
  • Layer another 1/2 a cup of of macaroni on top of the cheese.
  • Cover macaroni with cheese evenly.
  • Layer another 1/2 a cup of of macaroni on top of the cheese.
  • Add the milk.
  • Cover macaroni and milk with cheese evenly.
  • Bake for 20 minutes.
  • Set the oven to broil and and broil mac, milk and cheese 6"-8" away from broiler for 5-7 minutes or until cheese is browned.
  • Warning: HOT, let cool for 5-10 minutes before serving.

1 (16 ounce) box of prince casserole elbow macaroni (they work the best they are extra big and hold the sauce the best)
2 tablespoons butter
2 tablespoons flour
1 pint heavy cream
1/2 cup milk
1/2 lb land o lakes white American cheese
4 -5 slices Velveeta cheese
salt and pepper

Steps:

  • Cook box of macaroni according to directions while cooking, make sauce.
  • melt over medium heat 2 tablespoons butter and then blend in 2 tablespoons of flour with whisk remove from heat.
  • blend in SLOWLY one pint of whipping cream (done a little at a time to prevent lumps). If you cannot get whipping cream you can substitue heavy cream.
  • put back on medium heat stir constantly once hot to touch but not boiling add milk, once this is hot to touch again, add white cheese one slice at a time so it melts break cheese up into pieces, and then add in velveeta also broken up, one slice at a time.
  • Stir constantly so it will not stick or burn.
  • drain macaroni and pour into large pan (deep lasagna size pan 11 x 13) pour melted cheese sauce over it and mix.
  • Cover with tin foil and bake in 375 oven for 30 minutes.

8 ounces shell pasta
1 cup evaporated milk
2 large eggs
2 cups grated havarti cheese (about 6 ounces)
1 1/2 cups grated Colby jack cheese (about 4 ounces)
Pinch of grated nutmeg
1/4 cup sour cream

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Combine the evaporated milk, eggs, havarti, Colby jack, 1/2 teaspoon salt and the nutmeg in a large saucepan over medium heat. Cook, whisking constantly, until smooth and thickened, about 8 minutes. Remove from the heat.
  • Add the pasta and sour cream to the sauce; toss to coat, then let sit 5 minutes so the sauce thickens slightly. Add the reserved cooking water to loosen, if desired.

My son, CJ, is allergic to the powdered orange cheesy stuff that passes for cheese in the boxed mac n cheese dinners, but he loves (like every other kid) mac n cheese. Who am I am kidding so do my husband and I! But to eat those mac n cheese recipes made with cream and full fat cheese,simply is too much on my hips and the hubbi's heart. This is my hypo allergenic lower fat but still tastes great recipe! I use Barilla Plus pasta for the extra protein and added fiber and always opt for no or low fat dairy products. Smart Balanceis a good replacement for butter and offers the addd benefit of omega-3's. I also tend to use extra spices (pepper here) when cutting fat, it helps preventthe recipe from going bland.

1 (16 ounce) box barilla plus elbow macaroni
6 tablespoons smart balance margarine
2 -3 tablespoons flour
2 1/2 cups skim milk
1 teaspoon salt
2 teaspoons black pepper, to taste (I like Lots of pepper)
8 ounces low-fat cheddar cheese, shredded
8 ounces low-fat Velveeta cheese, cubed
4 ounces low-fat cheddar cheese, shredded (optional)

Steps:

  • Preheat oven to 400°F.
  • In a large non stick pot, cook and drain macaroni according to package directions; set aside.
  • In the same pot melt butter. Add flour, stir until well blended.
  • Pour one cup milk in gradually; stirring constantly.Bring to boiling point.
  • Reduce heat to low.
  • Add shredded cheddar and cubed Velveeta a little at a time, simmer until cheese melts into a creamy sauce. (If necessary slowly add up to the other half cup milk to keep cheese sauce thin enough to stir effectively).
  • Turn off flame. Add macaroni to the saucepan and toss to coat with the cheese sauce.
  • Transfer macaroni to a buttered baking dish, cover with tinfoil(spray tinfoil with baking spray so it does not stick).
  • Bake 30 minutes until the top is golden brown.
  • Top with 4 oz sharp cheddar and allow to melt before serving. (Optional).
