PARSNIP GRATIN



Parsnip Gratin image

Tender parsnips nestled in a cheesy Gruyère cream sauce with hints of leek and sage and a crispy bread topping!

Number Of Ingredients 10

3 pounds parsnips (,peeled and sliced to ¼"-inch thickness)
1 cup chopped leeks (,(about 1 large leek))
12 ounces Gruyère cheese, shredded (, or Swiss cheese)
½ cup heavy cream ((divided into thirds for each layer))
1 tablespoon butter (, to grease baking dish)
1½ teaspoons ground sage ((divided into thirds for each layer))
1 teaspoon salt ((add ⅓ teaspoon to each layer))
1 teaspoon white pepper ((add ⅓ teaspoon to each layer))
½ cup breadcrumbs (optional) (, for crispy topping)
2 tablespoons butter (optional) (, for crispy topping)

Steps:

  • Preheat oven to 375ºF
  • Butter baking dish; set aside
  • Peel parsnips; rinse and slice into ¼"-inch slices
  • Layer the smaller pieces of parsnips in the prepared baking dish (See Recipe Notes)
  • Sprinkle ⅓ of the leeks over the parsnips
  • Sprinkle ⅓ of the cheese over the leeks
  • Season with ⅓ of each of the following: salt, white pepper and sage
  • Drizzle ⅓ of the heavy cream over the parsnips
  • Repeat process two more times, ending up with cheese on the top
  • Cover with foil and bake for 50 minutes or until parsnips are fork tender; remove from oven
  • If you want to add a crispy breadcrumb topping do so now. Melt butter and combine with breadcrumbs; sprinkle over parsnips; if you don't want to add breadcrumbs, go to the next step
  • Turn oven to broil; remove foil from dish; return parsnips to oven and broil for 3-5 minutes until the cheese (and/or breadcrumbs) are golden brown
  • Let dish rest for 5 minutes before serving

CREAMY PARSNIP & MUSTARD GRATIN



Creamy parsnip & mustard gratin image

This luxuriously creamy bake is the perfect partner to Sarah's veggie pie

800g parsnip , peeled
400ml milk
200ml double cream
200ml vegetable stock
4 tsp wholegrain mustard
4 tbsp grated Twineham Grange cheese (see Know-how, below)
whole nutmeg , for grating

Steps:

  • Slice enough parsnips thinly lengthways to cover the surface of a small ovenproof dish, then slice the rest thinly into rounds. Combine the milk, cream, stock, mustard and half the cheese in a large, lidded saucepan and bring to the boil. Add a good grating of nutmeg and some seasoning - the sweet parsnips can take a bit of salt - then tip in the parsnips. When the cream is simmering again, cover and cook for 6 mins.
  • Using tongs, fish out the long slices of parsnip and set aside. Tip the rest into your dish, then arrange the long slices over the top. Scatter with the rest of the cheese and another grating of nutmeg. Can be chilled for up to 24 hrs.
  • To serve, heat oven to 180C/fan 160C/gas 4 and bake for 1 hr, then turn up to 200C/fan 180C/gas 6 and brown for 15 mins more - you can do this while the pie is resting.

4 large potatoes, peeled and thinly sliced
4 medium onions, thinly sliced
3 large parsnips, peeled and thinly sliced
1-1/2 cups shredded Gruyere or Swiss cheese, divided
1 tablespoon all-purpose flour
3/4 teaspoon salt
1/4 teaspoon pepper
2 cups heavy whipping cream

Steps:

  • Layer the potatoes, onions, parsnips and 3/4 cup cheese in a greased 13x9-in. baking dish; set aside. In a small saucepan, combine the flour, salt, pepper; gradually whisk in cream. Bring to a gentle boil, stirring occasionally. Remove from the heat; pour over vegetables. Sprinkle with remaining cheese., Cover and bake at 375° for 30 minutes. Uncover; bake 20-25 minutes longer or until vegetables are tender and top is golden brown.

Each recipe below is based on a given root, but feel free to mess around. Bake beets instead of celeriac; make creamy potato soup, braise carrots, braise parsnips and so on.

1 pound parsnips
1 pound potatoes
Enough hot cream to come about 3/4 of the way up the vegetable layers
1 to 1 1/2 cups of grated Gruyere
A sprinkling of salt
A sprinkling of pepper
A sprinkling of thyme

Steps:

  • Heat oven to 375.
  • Put 2 or 3 cups of cream in a pot and heat until it's hot.
  • Peel and slice 1 pound each of parsnips and potatoes, and grate 1 to 1 .5 cups Gruyere
  • Layer the parsnips, potatoes and cheese in an ovenproof dish, sprinkling every other layer with salt, pepper and thyme.
  • Pour in enough hot cream to come about 3/4 of the way up the vegetable layers.
  • Cook in the oven, undisturbed, until the vegetables are tender and easily pierced with a fork, 45 to 50 minutes. The top should be nicely brown.
  • Let stand for a few minutes, then serve.

Parsnips are underappreciated but are by far the tastiest of winter vegetables, sweet and deep-flavored. Here, they are parboiled and splashed with cream, then baked with an unlikely but delicious combination: turmeric, cumin and feta.

Number Of Ingredients 8

3 pounds parsnips
Salt and pepper
2 tablespoons butter, for greasing dish
2 cups heavy cream
½ teaspoon turmeric
½ teaspoon toasted and ground cumin
Pinch of cayenne
4 ounces feta cheese, crumbled

Steps:

  • Bring a large pot of salted water to a boil. Peel parsnips and quarter lengthwise. With a paring knife, remove and discard hard central core. Cut parsnips into 3-inch batons. Parboil for 2 minutes, then drain and spread out on a baking sheet to cool briefly.
  • Butter a 9-by-12-inch shallow earthenware baking dish. Arrange parsnips in dish in one layer. Heat oven to 400 degrees.
  • Whisk together cream, turmeric and cumin. Season with salt and pepper and add a small pinch of cayenne.
  • Pour cream mixture over parsnips and sprinkle with feta. Bake for about 30 minutes, until bubbling and nicely browned.

4 ounces bacon slices, chopped
2 pounds parsnips (about 11 medium), peeled, trimmed, thinly sliced lengthwise
1/2 cup hazelnuts, chopped, toasted, divided
2 cups whipping cream
1 cup low-salt chicken broth
1 1/2 teaspoons kosher salt
1 teaspoon ground black pepper
2 tablespoons minced fresh sage

Steps:

  • Preheat oven to 400°F. Sauté bacon in heavy medium skillet over medium-high heat until golden brown, about 6 minutes. Using slotted spoon, transfer bacon to large bowl. Stir in parsnips and 1/4 cup hazelnuts. Arrange mixture in even layer in 2-quart baking dish. Combine whipping cream, broth, salt, and pepper in medium bowl. Pour over parsnip mixture in dish.
  • Bake gratin 30 minutes. Press down on parsnips with spatula to moisten evenly. Continue baking until parsnips are tender and liquid bubbles thickly, about 35 minutes longer. Let stand 10 minutes. Sprinkle with remaining hazelnuts and sage.
