The Best Meatloaf I've Ever Made image

When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

Number Of Ingredients 14

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

This old-fashioned meatloaf is baked with a topping of ketchup or barbecue sauce. Crushed saltines, onion, and bell pepper are among the ingredients.

1 1/2 pounds ground beef (80/20 or 85/15)
20 saltine crackers, crushed
1/2 cup finely chopped onion
1/4 cup finely chopped green bell pepper
1 large egg
1 teaspoon​ paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/2 teaspoon dried thyme leaves
1/4 teaspoon ground black pepper
1/3 cup ketchup
2 tablespoons milk
1 teaspoon​ Worcestershire sauce
For Topping:
1/2 to 3/4 cup ketchup or barbecue sauce

Steps:

  • Gather the ingredients. Pre-heat the oven to 350 F.
  • Grease an 8 1/2 x 4 1/2-inch loaf pan or line it with foil and then lightly grease it. Alternatively, for a free-form loaf, line a rimmed baking pan with foil.
  • In a large bowl, combine the ground beef with the crushed saltines, onion, green pepper, egg, paprika, garlic powder, salt, thyme, black pepper, 1/3 cup of ketchup , milk, and Worcestershire sauce .
  • Pack the meat mixture into the loaf pan or shape it and place it on the baking pan.
  • Bake the meatloaf for 1 hour. Carefully pour excess grease into a can or jar (dispose of it in the trash after it cools).
  • Spread the meatloaf with 1/2 to 3/4 cup of ketchup or barbecue sauce and continue baking for 15 minutes longer, or until the meatloaf registers at least 160 F on an instant-read food thermometer inserted into the center. (If you have instead swapped ground turkey or chicken for the beef, cook the loaf to an internal temperature of 165 F.)
  • Let the meatloaf rest for ten minutes before slicing so it holds together well. Then, serve and enjoy!

This recipe was found in the 1986 cookbook, The Heritage of Southern Cooking. If you don't have or want to use the smoked ham, increase the pork to 1/2 pound.

1 lb ground beef
1/2 lb ground veal
1/4 lb ground pork
1/4 lb smoked ham, ground, baked (3/4 cup)
1 medium onion, finely chopped
2 1/2 teaspoons fresh thyme leaves (1 1/2 teaspoon dried)
2/3 cup breadcrumbs, soft
2 eggs
1 1/2 teaspoons salt, to taste
1/2 teaspoon ground black pepper, to taste
6 slices lean bacon, smoked, cut in half

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine meats with the onion, thyme, breadcrumbs, eggs, salt & pepper, mixing well with a fork (not with your hands, since that will toughen freshly ground meat), then form into a large loaf.
  • Place 3 to 6 pieces of bacon in the bottom of a baking dish, then lay the loaf on top of the bacon, before covering the top of the loaf with the rest of the bacon (which adds flavor & moisture).
  • Bake about 1 1/2 hours or until the outside of the loaf is golden brown, the juices run clear when the loaf is poked with a skewer, & it feels firm to the touch.
  • Discard all the bacon & serve either hot or cold.

Phase II recipe As one review indicated, this is a bit on the bland side. For those of you not watching your salt intake, the flavor is improved by using tomato paste with the salt included. This is not a recipe to impress dinner guests, but an easy healthy weekday recipe. Its a good way to eat zucchini without realizing you are eating it.

1 (6 ounce) can no-added-salt tomato paste
1/2 cup dry red wine
1/2 cup water
1 garlic clove, minced
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon salt
16 ounces ground turkey breast
1 cup oatmeal
1/4 cup liquid egg substitute
1/2 cup zucchini, shredded

Steps:

  • Preheat the oven to 350. Combine the tomato paste, wine, water, garlic, basil, oregano, and salt in a small saucepan. Bring to a boil, then reduce the heat to low. Simmer, uncovered for 15 minute Set aside.
  • Combine the turkey, oatmeal, egg substitute, zucchini, and 1/2 cup of the tomato mixture ina large bowl. Mix well. Shape into a loaf and place into an ungreased 8"x4" loaf pan. Bake for 45 minute Discard any drippings. Pour 1/2 cup of the remaining tomato mixture on top of the loaf. Bake for an additional 15 minute.
  • Place on a serving platter. Cool for 10 min before slicing. Serve the remaining tomato sauce on the side.

1 (6 ounce) can no-added-salt tomato paste
1/2 cup dry red wine
1/2 cup water
1 garlic clove, minced
1/4 teaspoon dried oregano
1/2 teaspoon dried basil leaves
1/4 teaspoon salt
1 lb ground white turkey meat
1 cup oatmeal
1/4 cup liquid egg substitute
1/2 cup shredded zucchini

Steps:

  • Preheat oven 350°F.
  • Combine the tomato paste, wine, water, garlic, spices in a small saucepan. Bring to boil and reduce heat to low, simmer uncovered for 15 minutes; set aside.
  • Combine turkey, oatmeal, egg, zucchini and 1/2 cup of the tomato mixture in a large bowl. Mix well and shape into loaf and place in an ungreased 8" x 14" loaf pan. Bake for 45 minutes. Discard any drippings. You can either pour 1/2 of the remaining tomato mixture over the top and bake for a further 15 minutes longer and use the remainder as sauce on the side or pour all of it over the loaf and bake for a further 15 minutes.
  • Cool for 10 minutes before slicing.

½ cup milk
1 cup soft bread crumbs
1 ½ pounds ground beef
1 ¼ teaspoons salt
ground black pepper to taste
1 egg, slightly beaten
3 tablespoons steak sauce, (e.g. Heinz 57)
1 onion, chopped
½ cup diced green bell pepper
¼ cup steak sauce, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
  • Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
  • In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
  • Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.
  • Bake in the preheated oven for 1 hour or until done. Allow to stand 5 minutes before slicing.
