VEGETARIAN ESCARGOTS WITH PERSILLADE BUTTER



Vegetarian Escargots with Persillade Butter image

Daniel Boulud says, "Escargot is 50% butter." If you want a way to enjoy that foamy, nutty, herbal flavor without the snails, try using mushrooms. When cooked, they have a meaty, springy texture similar to escargots. Sizzle them in Persillade Butter with juicy tomato slices for a tasty, unique appetizer.

Number Of Ingredients 13

12 tablespoons unsalted butter, cubed, at room temperature, 1½ sticks
4 cloves garlic, peeled and halved
2 shallots, peeled, trimmed, and roughly chopped
3 cups flat-leaf parsley, leaves only, loosely packed
1 bunch chives, finely chopped, about ¾ cup
1/4 cup almond flour
1 teaspoon Sea salt
1/2 teaspoon Freshly ground white pepper
1 pinch cayenne pepper
4 medium button mushrooms
4 medium cherry tomatoes
Persillade Butter
Baguette, for serving

Steps:

  • Preheat oven to 475 degrees F. Prepare the Persillade Butter: In the bowl of a food processor, add butter, garlic, shallots, parsley, chives, almond flour, salt, pepper, and cayenne. Blend until bright green and uniformly combined, stopping to scrape down the sides of the bowl and push down the parsley as needed. Makes 1 cup.
  • Cool the butter: If you plan to use it immediately, transfer Persillade Butter to a bowl, place in the refrigerator, and chill for 15 minutes to allow the butter to set. If storing for later use, place Persillade Butter on a square of plastic wrap. Roll into a log about the same diameter as the divots of the escargot dish; then wrap tightly, removing as much air as possible. Place in the refrigerator. (Persillade Butter can be stored in the refrigerator for up to 2 days and in the freezer for up to 1 month.) While the butter is chilling, prepare the mushrooms and tomatoes.
  • Vegetarian Escargots: Use a paper towel or clean dish cloth to wipe any dirt from the mushrooms. Cut off and discard the stems, then slice each mushroom in half. Place one mushroom half upright in each divot of the escargot baking dish. Slice each tomato in half, and place one in each divot along with the mushrooms. Nestle the remaining mushroom and tomato halves in the center of the dish.
  • Place escargot dish on a rimmed baking sheet lined with parchment paper. Place a heaping teaspoon of Persillade Butter on top of each mushroom-tomato combo. Bake until butter is foamy and vegetables are cooked, 8-10 minutes.
  • Remove from oven. Serve hot with baguette slices.

An easy way to prepare escargot that doesn't require shells. I recommend Roland brand snails. They are sold in a can which is typical for escargot.

24 large snails
1 -2 tablespoon garlic, depending on taste
1 tablespoon fresh parsley, finely chopped
3 tablespoons butter
1 soft crusted baguette

Steps:

  • Melt butter on low heat in sauté pan.
  • When butter is melted add parsley and garlic and let sit over low heat uncovered for 10 to 15 minutes. This allows the butter garlic and herbs to all blend together.
  • Pat snails dry and add to butter.
  • Increase heat of butter and sauté for 5 minutes stirring constantly. Turn off heat, remove snails from butter and set to side.
  • Slice baguette at an angle so you have 12 slices of desired thickness. I recommend 1/2 inch thickness.
  • Place the bread one side down in the melted butter that was used to saute snails so that one side of each slice is buttered.
  • Place butter on baking sheet and place under broiler for 2-3 minutes or until very lightly toasted.
  • Place two snails on each slice of lightly toasted bread and out back under broiler for 2 more minutes. Keep an eye on it to make sure the bread doesn't burn.
  • Remove from oven, place on serving platter and enjoy!

EASY GARLIC ESCARGOTS

These tender escargots in mushroom caps are smothered with wine sauce and cheese. Nothing big and fancy, but I liked how it turned out, so I thought I'd share. They're easy to make too!

1 (7 ounce) can escargots, drained
6 tablespoons butter
1 clove garlic, minced
20 mushrooms, stems removed
⅓ cup white wine
⅓ cup cream
1 tablespoon all-purpose flour
1 pinch ground black pepper to taste
¼ teaspoon dried tarragon
¼ cup grated Parmesan cheese

Steps:

  • Place escargots in a small bowl, and cover with cold water; set aside for 5 minutes. This will help to remove the canned flavor they may have.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch baking dish.
  • Drain the water from the escargots and pat dry with a paper towel. Melt butter with the garlic in a large skillet over medium-high heat. Add the escargots and mushroom caps; cook and stir until the mushroom caps begin to soften, about 5 minutes.
  • Whisk together wine, cream, flour, pepper, and tarragon in a small bowl until the flour is no longer lumpy. Pour this into the skillet, and bring to a boil. Cook, stirring occasionally until the sauce thickens, about 10 minutes.
  • Remove the skillet from the heat, and use a spoon to place the mushrooms upside down into the prepared baking dish. Spoon an escargot into each mushroom cap. Pour the remaining sauce over the mushroom caps and into the baking dish. Sprinkle grated Parmesan cheese overtop.
  • Bake in preheated oven until the Parmesan cheese has turned golden brown, 10 to 15 minutes.

1 pound helix snails, without shells
4 cloves garlic, minced
1 teaspoon minced fresh parsley, or to taste
½ cup shredded Parmesan cheese
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter over medium-low heat in a saucepan. Add snails, garlic, and parsley; cook and stir for 3 to 4 minutes.
  • Place 1 snail along with some sauce in each cup of an escargot pan. Sprinkle tops with Parmesan cheese, salt, and pepper.
  • Bake in the preheated oven until cheese is melted, bubbling, and lightly browned, about 10 minutes.

1 shallot, chopped, plus 1 shallot chopped
1 tablespoon butter, plus 1 tablespoon, plus 2 tablespoons
1 cup sliced oyster mushrooms
1 cup sliced morels
1 cup sliced shiitakes
20 jumbo snails, poached in lightly salted water and removed from their shells
1 tablespoon sliced garlic
1/2 cup Cognac
2 cups Cabernet Sauvignon
1 bay leaf
2 sprigs thyme
1 cup veal stock
1 drop truffle oil
1 cup chopped chives
Salt and freshly ground black pepper

Steps:

  • Saute 1 chopped shallot with 1 tablespoon butter until the shallots are soft. Add the sliced mushrooms and saute until the mushrooms have released their liquid and it has evaporated. Set aside and keep warm.
  • In a separate pan, saute the remaining chopped shallot in 1 tablespoon butter. Add the snails and the garlic to the pan and toss. Remove the pan from the heat and add the Cognac. Ignite the Cognac with a lighter or by tilting the pan carefully towards the open flame and letting it catch. Flambe the Cognac until it is almost reduced. Add the Cabernet, bay leaf, and thyme, and reduce the liquid in the pan by two-thirds. Pour the veal stock into the pan and let the sauce simmer for 5 minutes.
  • After the snail mixture has simmered for 5 minutes, add in the mushrooms and remove from the heat. Whisk in the remaining butter and stir in the truffle oil. Adjust seasoning with salt and pepper and top with chives. Serve the snails divided between warm shallow bowls.

CROUSTADA OF ESCARGOTS WITH MACADAMIA NUT BUTTER

4 (2-inch) puff pastry cups, baked
8 tablespoons macadamia nut escargot butter, recipe follows
12 escargot, from Bourgogne, cleaned
1 teaspoon Pernod
Bouquet fresh herbs
1/8 cup toasted macadamia nuts
1 stick unsalted butter
2 teaspoons lemon juice
2 cloves garlic
2 tablespoons chopped fresh parsley leaves

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat up 1 tablespoon of escargot butter in a non-stick frying pan. When the butter has melted, put in the escargot and sweat for 5 minutes. Remove from the heat and add the Pernod. Carefully return to the heat and tip the pan towards the flame to flambe. When the flames subside, add the remaining escargot butter. Let simmer 5 minutes
  • Warm the puff pastries in the oven.
  • Arrange the puff pastries in the center of the plate. Fill them with 3 pieces of escargot. Brush them generously with macadamia nut escargot butter and garnish with a bouquet of fresh herbs.
  • Place the macadamia nuts in a food processor and grind finely. Add the remaining ingredients and pulse until well combined.

ESCARGOTS WITH PERSILLADE BUTTER

Chef Boulud will show you how to stuff the canned snails into shells with the butter, which will melt in the oven to transform into an irresistible sauce.   • Escargots, part 2: Use an offset spatula to pack each snail shell with about 1 tablespoon of the Persillade Butter. Neatly level off the butter at the opening and place in the escargot dish, opening side up. (As the escargots bake, some of the butter will melt out of the shells and into the dish.)Without shells: It's best to use well-chilled Persillade Butter for escargots without shells. Unwrap the log of butter and slice about 1 tablespoon of butter per snail. Cover each snail with a slice of butter. Use a paring knife to trim away the top and bottom of each cherry tomato; then cut in half. Top each snail with a slice of cherry tomato. Place both escargot dishes on a rimmed baking sheet lined with parchment paper (for easy clean-up). Roast in the oven until butter is foaming, 8-10 minutes.
  • Remove escargots from oven. Serve hot with escargot forks (optional) and baguette slices.
