Erõleves (hungarian Consommé) image

Pronounced E-ru-le-vesh. After trying this you may never again get away with opening a can of condensed broth and pretending it's the real thing.

1 lb soup meat (such as beef short ribs or rack of lamb)
1 -2 lb soup bones, in 3 " pieces (marrow bones)
cold water
2 cloves
1 onion
1 cabbage, quartered
2 carrots
2 parsnips or 2 turnips
2 small kohlrabi
1 -2 leek
2 half stalks celery (leafy halves)
2 sprigs parsley
2 garlic cloves
12 peppercorns
2 bay leaves
1 tablespoon salt
1 1/2 cups fine egg noodles (uncooked)

Steps:

  • Wash the meat and bones, and thoroughly clean the vegetables.
  • Put the meat and bones in a large pot, cover them with cold water and slowly bring to a simmer over low heat, uncovered (removing the scum as it forms) (Do NOT allow to boil, it will break up the scum and fat changing the taste and appearence of the broth); continue simmering and skimming for about an hour.
  • Stick the cloves into the onion, and add it and all other remaining ingredients to the soup except for the noodles.
  • Cover partially and let simmer at least until meat is tender (1-2 hours or more).
  • Strain the broth into a large bowl, and set aside to cool.
  • Remove the marrow from the bones.
  • Mash and lightly salt it, and serve it on rye bread or white toast (it might sound a little odd, but it's a traditional delicacy).
  • Discard the bones, onion and cloves, celery, parsley, garlic, peppercorns, bay leaves, and any loose bones or fat from the meat.
  • Cut up the remaining vegetables and meat.
  • Degrease the broth and taste for seasoning (it may need a lot more salt).
  • Return the broth to a simmer and drop in the noodles.
  • Let cook for 10 minutes, then add the meat and vegetables and let simmer until the noodles are done.
  • Serve hot.

1 lb margarine
1 lb cream cheese
2 lbs powdered sugar
2 teaspoons lemon juice
2 teaspoons vanilla extract

Steps:

  • Allow margarine and cream cheese to reach room temperature.
  • Beat cream cheese and margarine together in a bowl with a mixer.
  • Slowly add in all powdered sugar.
  • Once all of the sugar is in the bowl mix for at least an additional 12 minutes.
  • When almost done, add in the extracts.
  • Enjoy!

1 potato, boiled, peeled, & grated
1 cup flour
1/2 teaspoon salt
1 egg
1/8 cup water (approximately)
2 tablespoons butter
2 tablespoons flour
1/4 teaspoon black pepper
1/4 teaspoon nutmeg (ground)
2 tablespoons parsley, chopped
4 cups veal stock (I usually use veal stock) or 4 cups vegetable stock (I usually use veal stock)
2 teaspoons salt
1 teaspoon sugar
1/2 teaspoon brandy or 1/2 teaspoon almond extract
1 lb asparagus, cleaned & cut on the bias into 1-inch pieces
1/2 cup half-and-half or 1/2 cup milk

Steps:

  • In a large pot, boil the potato in water until tender; then grate.
  • Mix flour, potato, and salt together thoroughly.
  • Make a well and drop in the egg, then beat with a wooden spoon.
  • Add as much cold water as needed to hold the dough together (about 1/8 of a cup).
  • Mix vigorously until the dough starts to blister and come away from the sides of the bowl.
  • Let rest for at least 45 minutes, then turn out on a wet cutting board and using a knife to cut off pieces about 1/2-inch long and approximately the width of a pencil.
  • Drop the pieces into a large pot of boiling water (the same pot you used to boil the potato).
  • A few seconds after they float to the surface remove them with a slotted spoon and let them drain.
  • Make roux by heating butter in a saucepan and stirring in the flour, pepper, nutmeg and parsley; continue stirring constantly for 3-5 minutes then dilute with stock, blending thoroughly to be sure that there are no lumps.
  • Add salt, sugar, and brandy or extract and bring to a boil.
  • Add the asparagus and simmer, uncovered, just until the asparagus is tender (5-10 minutes).
  • Mix in cream.
  • Taste for seasonings and simmer for 5 more minutes.
  • Drop dumplings into the soup just before serving.

1 head cauliflower, chopped (approx. 3 cups)
4 cups chicken stock or 4 cups veal stock
2 cups milk
1 teaspoon salt
2 tablespoons butter
1 -2 garlic clove, minced
2 tablespoons flour
1 1/2 tablespoons parsley, chopped
1 teaspoon white pepper
1/2 cup sour cream

Steps:

  • Place cauliflower in a pot with stock, milk, and salt and bring to a boil.
  • Cook until stalks can be easily pierced with a knife, but are still firm (7 minutes).
  • In a small saucepan, make a roux, by heating the butter and mixing in the garlic and flour, stirring constantly until flour turns golden beige (3 minutes) (be careful not to scorch the flour and not to get any on you).
  • Add the parsley and white pepper.
  • Thin the roux with 1/2 cup of the cauliflower broth and slowly pour back into the soup.
  • Simmer until cauliflower is done and soup no longer tastes floury (10 minutes).
  • Let cool thoroughly.
  • In a small bowl stir a little of the soup into the sour cream until smooth; return this to the remaining soup.
  • Reheat before serving.

1/2 lb dried navy beans (or use quick soak method below) or 1/2 lb pinto beans, soaked in cold water overnight (or use quick soak method below)
1 teaspoon salt
1/4 teaspoon pepper
1 carrot, sliced
1 leeks or 1/2 onion, very finely chopped
2 garlic cloves, pressed
1/2 lb smoked bacon or 1/2 lb smoked ham hock
4 cups smoked ham stock or 4 cups water
2 tablespoons cooking oil or 2 tablespoons lard
2 tablespoons onions, chopped
1 teaspoon Hungarian paprika
3 tablespoons flour
1 tablespoon parsley, chopped
1/4 cup sour cream
1 teaspoon vinegar

Steps:

  • Quick soak method - Boil beans for 5 minutes in enough water to cover them completely, then cover pan and let soak for 1 hour.
  • Drain and rinse the beans and put them in a large pot.
  • Add the salt, pepper, carrot, leek, garlic, and meat.
  • Add stock plus enough water to cover 2" above the beans and meat; bring to a simmer.
  • Simmer, partially covered, until the beans are tender (2 1/2 - 3 hours), adding water as needed to keep the beans covered; then remove meat to a separate plate.
  • In a heavy saucepan, melt fat or warm oil and sauté onions until they wilt.
  • Mix in the paprika and then the flour.
  • Gently fry, stirring constantly until flour turns golden beige (2-3 minutes) (be careful not to scorch the flour and not to get any on you).
  • Add the parsley.
  • Thin roux with 1/2 cup to a cup of the broth from the soup; mix well, then slowly pour back into the soup.
  • Let simmer for 10 minutes (then if soup is too thin simmer for 5-10 more minutes; if too thick slowly add hot water and simmer for 2-3 more minutes).
  • Remove from heat and let cool.
  • Blend some soup into the sour cream to keep it from curdling when you add it, then add it to the soup.
  • Mix in the vinegar and taste soup for seasonings.
  • Cut the meat into bite sized pieces and return them to the soup.
  • Reheat soup before serving.
