These are beef filled tortilla shells baked in a creamy chicken soup and cheese sauce. My husband absolutely loves these. I served them to guests once with Mexican rice, and they went home with the recipe. Enjoy!

1 ½ pounds lean ground beef
1 bunch green onions, finely chopped
1 diced fresh jalapeno pepper, or to taste
¼ cup water
1 (1.25 ounce) package taco seasoning mix
1 cup plain yogurt
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded mozzarella cheese
6 (6 inch) corn tortillas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium heat, cook the ground beef, green onion, and jalapeno pepper until the beef is evenly brown. Stir in water and taco seasoning. Simmer until water has evaporated.
  • In a medium bowl, mix together yogurt, condensed soup, and cheese.
  • Divide the meat mixture evenly between tortillas. Place a couple of tablespoons of cheese mixture over meat, and roll up. Place in a 7x11 inch baking dish. Repeat for each tortilla. Spoon remaining cheese mixture over the top of the tortillas.
  • Bake in preheated oven for 20 to 30 minutes.

2 cups (500ml) chicken stock / broth (, low sodium)
1 1/2 cups (375 ml) tomato passata OR US 1 can (8 oz) canned tomato sauce (eg Hunts) ((Note 2))
1/4 tsp each salt and pepper
1 tbsp olive oil
2 garlic cloves (, minced)
1 onion (, finely chopped (~1 cup))
1 lb / 500g ground beef ((mince))
400g / 14oz refried beans ((1 can, I use Old El Paso))
400g / 14oz black beans, drained ((1 can, Note 3))
8 tortillas ((or burrito wraps))

Steps:

  • Brown meat and onions in large skillet.

2 cans (10 oz each) Old El Paso™ red enchilada sauce
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 package (8.2 oz) Old El Paso™ flour tortillas for soft tacos & fajitas (6 inch)
1 1/2 cups shredded Cheddar cheese (6 oz)

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) baking dish or pan with cooking spray.
  • In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in 1/2 cup of the enchilada sauce and the chiles.
  • Spread 1/2 cup of the enchilada sauce evenly in baking dish. Spread 1/4 cup beef mixture down center of each tortilla; sprinkle with 1 tablespoon cheese. Wrap tortillas tightly around filling, placing seam side down in baking dish. Top with remaining enchilada sauce. Sprinkle with remaining cheese.
  • Bake 20 to 25 minutes or until hot and bubbly. Let stand 5 minutes before serving.

2 10-oz. cans enchilada sauce (about 2 cups)
1 tsp. kosher salt
1 tsp. ground cumin
1 tsp. chili powder
1 tsp. smoked paprika
1/2 tsp. ground black pepper
1 tbsp. olive oil
1 small white onion, chopped
4 garlic cloves, minced
1 1/2 lb. lean ground beef
1 4-oz. can diced green chiles, drained
8 8-inch flour tortillas
2 c. shredded sharp cheddar cheese
Thinly sliced red onion, for garnish
Chopped fresh cilantro, for garnish
Sour cream, for serving

Steps:

  • Add the enchilada sauce to a small saucepan. In a small bowl, combine the salt, cumin, chili powder, smoked paprika, and pepper. Add 1/2 teaspoon of the spice mixture to the enchilada sauce (reserve the remaining spice mix for the beef). Bring the sauce a simmer over medium heat; Remove from the heat and set aside.
  • In a large skillet, heat the oil over medium heat. Add the onion and garlic; cook, stirring occasionally, until softened, about 5 minutes. Add the beef and the remaining spice blend. Cook, stirring often, until the beef is browned and crumbly, about 8 minutes. Stir in the green chiles and 1/2 cup of the warmed enchilada sauce; cook 2 minutes more. Remove from the heat, and let cool slightly.
  • Place the tortillas on a microwave-safe plate and cover with a damp paper towel. Microwave for 30 seconds on high to soften. Leave the paper towel over top of them to keep them moist and pliable.
  • Preheat the oven to 375°. Spoon 1/2 cup of the warmed enchilada sauce into the bottom of a 13x9-inch baking dish. Working with one tortilla at a time, spoon 1/2 cup of the beef mixture down the center of a tortilla; sprinkle with 2 tablespoons cheese. Roll the tortilla up to enclose the filling, and place in the baking dish seam-side down. Repeat with the remaining tortillas and filling. Spoon the remaining sauce over the enchiladas. Top with the remaining 1 cup cheese.
  • Bake until the cheese is golden and bubbly and the tortillas are toasted, 20 to 25 minutes. Let cool 10 minutes; top with red onion and cilantro just before serving with sour cream, if you like.

¼ onion, finely chopped
1 cup shredded Cheddar cheese
½ cup sour cream
1 tablespoon dried parsley
1 tablespoon taco seasoning
1 teaspoon dried oregano
½ teaspoon ground black pepper
2 ½ cups enchilada sauce
1 ½ teaspoons chili powder
1 clove garlic, minced
½ teaspoon salt
8 flour tortillas
1 (15 ounce) can black beans, rinsed and drained
1 (4 ounce) can sliced black olives, drained
¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef with onion in a skillet over medium heat until meat is crumbly and no longer pink, about 10 minutes. Drain grease. Stir 1 cup Cheddar cheese, sour cream, parsley, taco seasoning, oregano, and black pepper into the ground beef until cheese has melted. Mix in enchilada sauce, chili powder, garlic, and salt; bring to a simmer, reduce heat to low, and simmer until meat sauce is slightly thickened, about 5 minutes.
  • Lay a tortilla onto a work surface and spoon about 1/4 cup of meat sauce down the center of the tortilla. Top meat sauce with 1 tablespoon black beans and a sprinkling of black olives. Roll the tortilla up, enclosing the filling, and lay seam-side down into a 9x13-inch baking dish. Repeat with remaining tortillas. Spoon any remaining meat sauce over the enchiladas and scatter any remaining black beans and black olives over the top. Sprinkle tortillas with 1/4 cup Cheddar cheese.

1 tablespoon flour
1 teaspoon powdered cumin
1 teaspoon minced garlic
1 cup diced canned tomato
1/4 cup tomato sauce
1 cup water
cooking oil
3 tablespoons flour
2 cups water
3 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon minced garlic
salt
12 corn tortillas
4 -6 cups shredded cheese
1 cup finely chopped onion

Steps:

  • Meat Filling: Spray skillet with Pam. Cook meat until well done. Drain. Add flour to cooked meat stir to mix well. Add remaining ingredients and cook about 20 minutes. Set aside while sauce is prepared.
  • Sauce: Spray skillet with Pam, add cooking oil and flour to warm skillet. Mix well until flour browns lightly. (DO NOT BURN -- FLOUR WILL BROWN QUICKLY). Turn burner off. Add chili and water too skillet, mix well. Add cumin,garlic and salt. On low heat stir until sauce thickens. Once thickened dip corn tortillas (a couple of seconds only or they will break) with tongs. Transfer too large plate. In center of tortilla add a tablespoon of meat filling, also sprinkle shredded cheese and onions on top of meat. Roll and place seam side down in baking dish. Once all tortillas are filled sprinkle remaining cheese, onions and meat on top of rolled tortillas. Add remaining sauce over them. But not too much.
  • Bake in 350°F oven or until cheese is melted.
  • Set on cooling rack or cutting board about 5-10 minutes.

1 3-pound beef brisket
4 teaspoons chili powder
1 tablespoon ground cumin
1 teaspoon dried oregano, crushed
2 medium onions, thinly sliced
1 14-ounce can beef broth
1/4 teaspoon cider vinegar
8 tortillas

Steps:

  • Preheat oven to 325°F. Trim fat from brisket. In a bowl, combine chili powder, cumin, and oregano. Sprinkle spice mixture evenly overall sides of brisket; rub with your fingers. Place brisket in a shallow roasting pan. Top with onions; pour broth and vinegar over meat. Roast, covered, for 3 hours or until meat is fork-tender. Let meat stand in cooking liquid for 15 minutes. Remove meat. Using a slotted spoon, remove onions and set aside, reserving cooking liquid. Halve meat crosswise. When meat is cool enough to handle, use forks to pull meat apart into shreds. Place shredded meat in a serving bowl. Stir onions into meat. Stir in enough of the reserved cooking liquid (1/2 to 1 cup) to moisten meat. If desired, use remaining cooking liquid to make Chile Enchilada Sauce (recipe below) To assemble: Pre-heat oven to 350F In the center of each tortillas place about 1/3 cup filling, then carefully roll up the filled tortilla. Place sauce, enchiladas, and cheese in a 3-quart rectangular baking dish. Bake enchiladas, covered, in a 350F oven about 25 minutes or until heated through. Uncover and cook another 5 minutes for browning cheese. CHILE ENCHILADA SAUCE In a bowl, combine two 10-ounce cans enchilada sauce and 1/4 cup reserved cooking liquid from Shredded Chicken Filling or Shredded Beef Filling (see recipes, left) or Vi cup vegetable broth. Stir in one 4-ounce can diced green chile peppers. Spread V2 cup sauce in a 3-quart rectangular baking dish. Add enchiladas and top with remaining sauce. Cover; bake in a 350°F oven until heated through. Sprinkle enchiladas with l/2 cup cheese; bake, uncovered, for 5 minutes more or until cheese is melted or Cotija cheese, if using, is softened and lightly browned. Makes 8 servings.
