- Beat the cream cheese with the butter in a mixer at medium speed, until it is creamy. Gently add the flour and salt and continue mixing for a minute more. Turn dough onto a lightly floured surface and knead for a minute. Form the dough into a ball, wrap in plastic wrap and refrigerate from 15 minutes up to 24 hours.
- After refrigerating, sprinkle flour over the countertop and roll out half the dough until its about 1/4 inch thick. For medium sized empanadas, cut out rounds of 4 to 5 inches in diameter. Continue until all of the dough is used.
- Grease a baking sheet with butter. Preheat the oven to 375 degrees.
- Spoon about 1 1/2 tablespoons of the picadillo filling into the center of each round. Brush the edges of the round with the beaten egg. Fold a side of the circle over the filling across the other side. Press with your fingers as you close. Without breaking the dough, press with a fork over the edges to seal and make a design.
- Place the empanadas on the baking sheet. When you fill the baking sheet, lightly brush their tops with the lightly beaten egg and sprinkle with sesame seeds.
- Bake the empanadas anywhere from 20 to 25 minutes, until the tops have a golden tan and dough is cooked through. Serve hot.
- Heat olive oil in a large saute pan set over medium-high heat. Add onion and saute for a couple of minutes, until it becomes translucent and soft. Incorporate chopped garlic and saute for about a minute until it becomes fragrant. Incorporate the meat and the salt and let it cook for about 8 minutes, until cooked and lightly browned.
- Pour in tomato puree and let it season, stirring often, for 5 to 6 minutes, until it has deepened its color, thickened in consistency and lost the raw flavor. Pour in the chicken broth or water, cumin, cloves and cinnamon. Stir well and let it cook 15 minutes more.
- Add the raisins, almond and olives, mix well and taste for seasoning. Cook for 5 more minutes. If needed, add more salt. The filling should be nice and moist.
- Just remember, once it cools, it will dry a little more as it will absorb the juices. Turn off the heat. You can make the filling up to two days ahead of time, let it cool, cover and refrigerate.

- Bate bien el queso crema untable y la mantequilla en un tazón grande con una batidora. Incorpora poco a poco la harina, mezclando bien después de cada adición. Forma una bola con la masa y refrigérala 1 hora.
- Entretanto, dora la carne con la cebolla en una olla grande. Incorpora el caldo y las especias. Retira la olla del fuego. Añade las papas; mezcla todo bien. Déjalo enfriar completamente.
- Calienta el horno a 400ºF. Estira la masa de queso crema sobre una superficie enharinada hasta alcanzar un grosor de 1/4 pulg. Corta 40 discos con un cortador de galletas o panecillos de 3 pulgs. y vuelve a estirar los recortes de masa hasta usarla toda.
- Pon 1-1/2 cdta. de mezcla de carne al centro de cada disco; barniza los bordes con el huevo. Dobla los discos por la mitad; presiona los bordes con un tenedor para sellar las empanadas. Ponlas sobre una charola (bandeja) para hornear rociada con aceite en aerosol. Hazles unos pequeños cortes para que escape el vapor; barnízalas con el huevo restante.
- Hornéalas de 18 a 20 min. o hasta que estén doradas.

- To make the pastry: In a large bowl, stir the flour, baking powder, curry, salt and turmeric. Cut in the butter and shortening until the mix resembles fine crumbs. Pour water in and make a soft dough. Gather the dough into a ball and wrap in wax paper. Chill for 1 hour.
- To make the filling: In a small bowl, mix the water with the breadcrumbs and let it sit while you prepare everything else. In a large pan, heat the oil over medium heat. Cook the onions and garlic until soft. Place in a small bowl and set aside. Increase the heat to high. In the same pan, cook the beef until it is no longer pink. Drain the fat and stir in the onion mix, curry, salt, thyme, black and cayenne peppers. Cook over medium heat for 3 minutes.
- Assembly: Divide pastry in half and roll 2 long sausage shapes. Slice each roll crosswise into roughly 12 equal pieces. Roll each piece out into a 6" circle. Spoon some filling into the circle. Wet the edges of the circle with a little water and fold in half, making sure the edges meet. Trim into a neat half moon shape and imprint the edges with fork prongs.
- Bake in a preheated 350 degree oven for 28 minutes or until the pastry is lightly brown.

LITTLE MEAT EMPANADAS: EMPANADILLAS DE CARNE

- The beef should be thawed, if frozen, set aside. In a large saute pan, heat the oil. Add the onion, garlic, and pepper and saute. When they're soft, add the oregano, tomato sauce, raisins, and chopped olives. This should be at medium heat from now on. Add the ground beef.
- Pour the wine over the beef mixture and cover to cook through. Add salt and pepper, to taste. Once its almost cooked, uncover, and let dry up to a juicy but dry look to it.
- Never use if it is runny. That's the trick.
- Sift the flour with the baking powder and the salt. Pour this into a large bowl. Pour in the rest of the ingredients. Work this with a fork, trying to bring together all the ingredients but never beating or mixing. Once it?s all "together" and not sticky...you're ready to make Empanadillas.
- ASSEMBLING THE EMPANADILLAS: Prepare your table by spreading some flour to keep the mixture from sticking. You will need a roller, a knife and a fork. Your filling should be at hand. Take a small amount of the flour mixture (a ball that can fit in your hand) and you roll it out in the shape of a plate to a thickness of about 1/8-inch.
- Take a spoonful of the filling and place it in the middle half of the pastry and fold the top over the filling to look like a half moon. Seal the inside of the pastry by wetting your fingers with water and rubbing the border of the half moon. Take a knife and cut a perfect pastry half-moon. Now take the fork and press down the borders of the circular shape to seal. Fry the half moon in hot oil.

- Prepara la masa para empanadas. Envuélvela fuertemente en envoltura plástica; ponla a un lado mientras preparas el relleno.
- Dora la carne en una sartén mediana a fuego medio; escúrrela. Agrega los 6 ingredientes siguientes. Cocínalos y revuelve frecuentemente a fuego medio-bajo durante 10 min.; retíralos del fuego. Incorpora el cilantro.
- Forma 12 bolitas con la masa, usando alrededor de 2 cdas. para cada una. Aplasta cada bolita y forma un disco de 6 pulgadas. Coloca, en el centro de cada disco, alrededor de 1/4 taza de la mezcla con carne. Humedece los bordes con agua. Dobla los discos por la mitad. Presiona suavemente la parte superior para quitar las bolsitas de aire. Sella los bordes con un tenedor.

- Para el relleno: 1. Coloque las papas en cubos en una olla mediana con caldo de pollo, agregue suficiente agua fría para cubrir las papas completamente. Coloque la olla a fuego medio-alto y lleve el agua a hervir, luego reduzca el fuego a medio-bajo. Cocine a fuego lento hasta que las papas estén completamente tiernas por unos 20 minutos, escurra las papas y traslade a la misma olla. Usando un tenedor o machacador de papas, haga ligeramente un puré y deje a un lado. 2. Mientras tanto, caliente el aceite en una sartén grande a fuego medio-alto. Agregue la cebolla, la pimienta y cocine revolviendo ocasionalmente hasta que estén suaves, aproximadamente por 8 minutos. Añada las cebolletas, el cilantro y el ajo. Cocine, revolviendo hasta que comiencen a ablandarse las cebolletas, aproximadamente por 1 minuto. Agregue los tomates y cocine hasta que el agua de los tomates se evapore, por unos 4 minutos más. Añada la carne picada y la carne de cerdo; condimente con el Sazón y el Adobo. Cocine, separando la carne con una cuchara de madera hasta que estén doradas y cocidas, aproximadamente por 8 minutos. - In a skillet heat the oils and brown the meats. Add the seasonings, onion, garlic and jalapeno. Saute until tender. Drain any excess fat. Add the remaining ingredients and simmer until very thick. Cool to room temperature.
- Preheat oven to 425°F.
- Roll the pastry dough out on a floured surface. Cut into 2" rounds. Place 1 tbsp of meat mixture on each round. Fold the round in half and crimp the edges with a fork to seal. Brush the pastry with egg whites. Place on a greased baking sheet and bake for 15 to 20 minutes, or until golden brown.
