This refreshing salad is nice enough to serve as a light dessert. A mild dressing made with peach nectar adds a hint of sweetness to the pretty assortment of fresh fruit. -Peggy West, Georgetown, Delaware

Yield 13 servings (3/4 cup each).

Number Of Ingredients 10

1 medium cantaloupe, peeled, seeded and cubed
2 large navel oranges, peeled and sectioned
2 cups cubed fresh pineapple
2 medium kiwifruit, peeled and sliced
1 cup green grapes
1 cup red grapes
3/4 cup peach or apricot nectar
1/4 cup honey
2 tablespoons lemon juice
2 tablespoons balsamic vinegar

Steps:

  • In a large bowl, combine the first six ingredients. In a small bowl, whisk the peach nectar, honey, lemon juice and vinegar; drizzle over fruit and toss to coat. Chill until serving.

Number Of Ingredients 4

1 cup whole milk
4 large eggs lightly beaten
1 cup all purpose flour
1 teaspoon salt

Steps:

  • With a whisk, beat eggs and milk together and add the salt. Gradually, a tablespoonful at a time, whisk in flour and beat until smooth. Heat a 6inch skillet and butter it lightly. Pour in enough batter to make a thin pancake. (If batter is too thick, add water to thin) Pour out excess back into the batter and don't worry if a "tab" forms on the side of the pan.
  • Cook the blintz on one side only until the top blisters and it looks dry around the edges. Turn the blintz upside down onto a clean towel. Rebutter the skillet if need be, every 2 or 3 blintzes, and proceed until all the batter has been used up.
  • Make assorted fillings, roll up and fry, or bake or freeze for another day.

Easy 'n Elegant Fruit Cocktail image

This one is sooooooooo easy! Less than a half hour to make and it tastes yummy and presents beautifully. Have only tried this with fresh fruit, but would be interested in knowing how canned or frozen works as well. Being that I am not an overt fan of the typical "fruit cocktail", this one was really different and GOOD!

3/4 cup diced fresh strawberries
3/4 cup diced fresh pineapple
2 oranges, peel removed,cut in segments and diced
2 tablespoons white rum
2 tablespoons sugar
1/2 teaspoon lime zest
sugar or pink tinted sugar (optional)
red food coloring (optional)
lime slice (optional)

Steps:

  • Mix the strawberries, pineapple, oranges, rum, the 2 tablespoons sugar and lime peel in a large bowl.
  • Let stand, tossing occasionally until sugar dissolves. About ten minutes.
  • Spread about 2 tablespoons of sugar on a plate.
  • Add one or two drops of red food coloring and blend until tinted.
  • OR, just spread the pink tinted sugar on a plate.
  • Dip rim of martini glass in water, then the sugar, to coat the rim.
  • Spoon in fruit and juice.
  • Slit a lime slice to garnish the side of the glass.

This is a lovely company salad course or dessert. We especially love it for the warmer holidays and celebrations. It's very flavorful and refreshing. Cook time refers to freezer time and will vary depending upon how you freeze it. (quantity wize)

1 (12 ounce) can orange juice concentrate
1 (12 ounce) can lemonade concentrate
1 -2 can frozen strawberries
1 (20 ounce) can crushed pineapple with juice
1 can 7-Up soda
2 -3 sliced bananas
1/4 cup sugar

Steps:

  • Mix together all ingredients.
  • Freeze.
  • Let partially thaw.
  • Scrape or shave to serve.
  • You can also freeze this in ice cube trays then use a blender to slush it.
