EINKORN SODA BREAD
Use einkorn flour - one of the earliest forms of wheat eaten by humankind - to make this soda bread. It delivers a lovely rich and nutty flavour

- Heat the oven to 200C/180C fan/gas 6. Sprinkle a little of the einkorn flour over a baking sheet, then tip both flours, the bicarbonate of soda, salt and sugar into a bowl and stir to combine. Whisk the yogurt and egg together in a jug.
- Make a well in the centre of the dry ingredients and pour in the wet mixture. Swiftly mix the ingredients together to create a slightly sticky dough. Form into a round, about 4-5cm thick and put in the middle of the baking sheet. Dip the handle of a wooden spoon into some flour, then lightly press into the top to create a cross. Lightly dust with a little more einkorn flour.
- Bake in the oven for 40-45 mins or until slightly risen with no grey, uncooked patches in the cross. Set aside to cool, then serve with salted butter, if you like.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Stir melted butter and sugar together in a bowl. Add eggs, milk, and vanilla extract and mix well.
- Combine sifted einkorn flour, cinnamon, baking soda, baking powder, and salt in a separate bowl. Stir into the butter mixture until smooth. Fold walnuts and mashed bananas into the batter until well mixed. Spread batter evenly into the prepared pan.
- Bake in the preheated oven until an instant-read thermometer inserted into the center of the loaf reads 195 degrees F (90 degrees C), about 55 minutes. Cool loaf in the pan for 10 minutes, then remove from the pan and transfer to a wire rack until completely cooled.

- Preheat oven to 375 degrees then line a baking sheet with parchment paper and spray lightly with cooking spray. In a large bowl, sift together flour, sugar, baking soda, baking powder and salt. NOTE: We strongly recommend you weigh your einkorn flour, if possible, for better accuracy. If you don’t have a scale, fluff the flour with a fork before you measure it in a cup.
- In a separate smaller bowl, combine buttermilk with beaten egg. Make a well in the center of dry ingredients and pour buttermilk and egg mixture along with the melted butter into the well and stir just until a ball of dough forms.
- Form dough into a cohesive ball and place on prepared baking sheet. Pat dough into about an 8"–9" round loaf (the loaf will be 3"–4" thick in the center). Use a sharp knife to cut an X into the top of the dough.
- Combine 2 Tbsp melted butter with 2 Tbsp buttermilk and brush entire amount onto the dough, covering the entire loaf. Bake 40–50 minutes or until a toothpick comes out clean. Remove from oven and cool until warm or room temperature, slice and serve.
