Strawberries in an extremely simple, delicious, raspberry and peach sauce. We do a theme Christmas Eve dinner for our family every year. This year (2009) we chose Egypt. In researching recipes we found this on the www.touregypt.net website. They call for passion fruit, but we used peaches instead and were not disappointed.

2 cups raspberries
3 teaspoons caster sugar
2 peaches
4 cups strawberries
8 biscuits (plain finger bisquits-to serve)

Steps:

  • For the best flavor, serve the berries at room temperature.
  • Place the raspberries and sugar in a saucepan and cook over low heat, stirring occasionally until simmering.
  • Cook gently for 5 minutes, then leave to cool.
  • Section the peaches.
  • Blend the peaches and raspberries into a pure'e.
  • Rub the pure'e through a fine nylon sieve to remove the seeds.
  • Fold the strawberries into the sauce, then spoon into 4 stemmed glasses. Serve with plain finger biscuits.
  • NOTE: Crumbling the bisquits into the glass is also delicious!

  • Om Ali (Umm Ali- Egyptian Bread Pudding) This traditional Egyptian dessert doesn’t date back quite to Cleopatra’s time, but it goes as far back as the 13th century.
  • Basbousa. My mom likes to say that just looking at this Egyptian sweet cake is enough to give her diabetes, and while she’s joking, she’s not entirely wrong.
  • Kunafa. It may look like an odd plate of broccoli and cheese, but this dessert is a Middle Eastern favorite, especially during Ramadan when Muslims spend most of the day fasting.
  • Egyptian Feteer Meshaltet. This crispy, layered pastry may look like a deflated croissant, but it tastes pretty amazing. To make it, you’ll only need five basic baking ingredients – salt, unsalted butter, oil, water, and flour.
  • Rice Pudding. We’ve probably all tasted rice pudding, but unless you’re an Egyptian native or descendent, I’m not sure that you’ve ever had rice pudding quite like this.
  • Baklava. Baklava is one of those desserts that most everyone has heard of, but surprisingly, not a lot of people have eaten it. Some people don’t even know what it is other than “some kind of food.”
  • Sweet Couscous. This recipe is the simplest dessert on this entire list to make. All you’ll have to do is boil and fluff your couscous. Then add your powdered sugar and butter to make it sweet, soft, and creamy.
  • Egyptian Ghorayebah (Butter Cookies) Every time I pull out this recipe, I get so tickled at the chef’s insistence that ghee is the only way to go with these cookies.
  • Jalebi/Meshabek. When people first look at this dessert, they see the 15-hour prep time and run screaming in the other direction. A massive chunk of that time, though, involves leaving the batter out to ferment overnight.
  • Egyptian Choux Pastry (Balah El Sham) The best way I know to describe the consistency of these pastries is to say they’re similar to the cinnamon twists served at Taco Bell.

  • Umm Ali. Umm Ali, literally the mother of Ali, is perhaps one of Egypt’s most favored desserts. Easy-to-make and economical, Umm Ali dates back to the Ayyubid dynasty.
  • Basbousa. Basbousa in Egyptian (but Hereessa in Alexandria), Revani in Turkey or Namoura in Syrian, this delicious well known dish can be found in the east of Middle East.
  • Kunafeh. Sweet, rich, crunchy and creamy, Kunafeh or Knafeh can be found in regions that used to be occupied by the Ottoman Empire. This sweet pastry is the Middle Eastern version of the cheese cake.
  • Baklava. Like many Middle Eastern dishes, baklava is said to have developed during the Ottoman Empire. However, this tasty dessert can be found in Albania, Bulgaria, Greece, Armenia, Azerbaijan, Cyprus and Georgia too.
