A classic Eggs Florentine recipe made with two poached eggs on a toasted english muffin with spinach and hollandaise sauce.

4 large eggs
4 English muffins
2 tablespoons white vinegar
2 tablespoons unsalted butter
1/4 cup heavy cream
10 cups baby spinach leaves
salt and pepper (, to taste)
4 tablespoons butter
4 egg yolks
1 tablespoon lime juice
1-2 tablespoons butter
1 tablespoon heavy whipping cream
salt and pepper (, to taste)

Steps:

  • Melt butter. Melt butter in a small sauce pan.
  • Beat egg yolks. In a separate bowl, beat the egg yolks. Add in the lime juice, heavy cream, and salt and pepper.
  • Tempur the eggs. Next you need to tempur the eggs by adding a small amount of the hot butter to the egg mixture. Stir it well and repeat this process, slowly adding one spoonful of hot butter to the egg mixture. We do this to avoid curdling the eggs.
  • Return to saucepan. Finally, add the whole mixture back to the saucepan and cook it for a few more seconds.
  • Heat water. Fill the pot with about 3 inches of water. Heat the water until it starts to steam and bubble (just before boiling point).
  • Add vinegar. Add a splash of vinegar to the water (this helps the egg stay together once it is in the water).
  • Crack egg. Crack one egg in a small dish (I like to use a small measuring cup).
  • Whirlpool. Next, create a gentle whirlpool in the water by taking a large spoon and circling it around in the water. Poor your egg into the center of the swirl.
  • Cook. While it's cooking, make sure to watch the water temperature. You never want the water to boil, so if it gets too hot, you may need to turn down the heat. It should stay just below boing point. How log you cook your poached egg depends on personal preference. I like to cook it for 3-4 minutes for a slightly runny yolk. Remove the poached egg with a slotted spoon!
  • In a large skillet, melt the butter over low heat. Once melted, pour in the heavy cream, and let the mixture simmer for a couple minutes until is starts to thicken slightly.
  • Add baby spinach leaves and cook them for 2 to 3 minutes or until the leaves are wilted. Remove from heat and season with a dash of salt and pepper.
  • Toast the english muffin and lightly butter it. Layer spinach on top of the english muffin and place egg on top of spinach. Top with hollandaise sauce.

Easy kale feta egg toast is my fast and healthy version of eggs florentine. Sautéed kale and creamy feta served on toast with a fried egg.

2 slices English Muffin Bread
3 teaspoons olive oil (divided)
3 cups chopped kale (stems removed)
1 teaspoon minced garlic ((2 small cloves))
1/8 teaspoon salt (plus additional for seasoning)
1/8 teaspoon pepper (plus additional for seasoning)
1/8 teaspoon red pepper flakes
2 large eggs
2 ounces feta cheese (crumbled)

Steps:

  • Toast bread in a toaster, toaster oven, or beneath a broiler. Set aside.
  • Heat 2 teaspoons olive oil in a large skillet over medium. Add the kale, stir to coat, then cook, stirring occasionally, until the kale begins to soften, about 5 minutes. Add the garlic, salt, pepper, and red pepper flakes. Stir and cook for 1 additional minute. Remove from heat, stir in the feta cheese, then cover to keep warm.
  • In a small skillet, heat the remaining teaspoon of olive oil over medium heat. Gently crack the eggs into a skillet and season, to taste, with salt and pepper. Cook until whites are nearly set, about 1 minute. Cover skillet, remove from heat, and let stand until whites are set but yolks are still soft, about 3 minutes.
  • To serve, place half of the kale mixture on top of each toast, then top with a fried egg. Serve immediately.

Eggs Florentine is a classic breakfast or brunch dish. Make the hollandaise in advance, and the rest of the recipe comes together quickly.

1 lb./500 g spinach
1 tbsp. olive oil
1/4 cup/50 mL white wine vinegar
8 eggs (free range)
4 English muffins
8 tbsp. Hollandaise sauce
Black pepper (to taste)
Garnish: nutmeg (freshly grated)

Steps:

  • Gather the ingredients.
  • First, prepare the spinach. Heat up a pan large enough to hold all the spinach.
  • When it is very hot, add a splash of olive oil and throw in the spinach. Turn it over using tongs for 1 to 2 minutes until wilted. Do not overcook the spinach or it will become slimy.
  • Tip the spinach into a colander and press out any excess liquid with the back of a spoon. Return the spinach to the pan and divide into four portions. Keep warm by covering with a lid or a tea towel. Preheat the grill.
  • To poach the eggs, bring a pan of water to the boil and add the vinegar. When simmering, gently crack the eggs and slip them into the water without breaking the yolks. Poach the eggs for about 3 minutes or until the whites are set, but the yolks are still soft.
  • Meanwhile, split the muffins and toast them on both sides on the grill. Butter lightly and place onto warmed plates.
  • Put a portion of spinach on each muffin half and keep warm under the grill.
  • When the eggs are done, lift them out with a slotted spoon and pat dry with kitchen paper. Place one on each muffin half and spoon 1 to 2 tablespoons of hollandaise and grated nutmeg over top and. Serve immediately.

1/4 cup grated Parmesan
Six 1/2-inch-thick slices crusty bread
2 tablespoons unsalted butter, softened, plus more to fry eggs
6 large eggs
6 to 8 ounces steamed and drained baby spinach (about 1 cup)
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • In a bowl, combine the ricotta and Parmesan. Place the bread slices on a baking sheet and spread with the softened butter and equal amounts cheese mixture. Bake until the cheese is bubbly and the bread is crisp, 8 to 10 minutes.
  • While bread is baking, fry the eggs sunny-side up.

2 tablespoons fat-free mayonnaise
1 teaspoon Dijon mustard
1 teaspoon lemon juice
1 teaspoon olive oil
1 medium onion, chopped (1/2 cup)
4 cloves garlic, finely chopped
1 bunch (8 oz) fresh kale, ribs removed, leaves thinly sliced (6 cups)
1/4 teaspoon salt
1/4 teaspoon pepper
2 light English muffins, split
4 slices reduced-sodium deli ham (from 10-oz container)
4 eggs
2 tablespoons water
1/4 cup shredded Monterey Jack cheese (1 oz)

Steps:

  • Heat oven to 400° F. In small bowl, mix mayonnaise, mustard and lemon juice; set aside.
  • In 10-inch nonstick skillet, heat oil until hot. Add onion; cook about 5 minutes, stirring frequently, until soft. Add garlic; cook and stir about 30 seconds or until fragrant. Add kale, salt and pepper; cook and stir about 5 minutes or until wilted. Reduce heat to low; stir in mustard mixture. Cover to keep warm.
  • Place English muffin halves on ungreased cookie sheet; top each with ham slice. Bake 5 to 8 minutes or until muffins are slightly toasted and ham is warm.
  • Heat 8-inch nonstick skillet over medium-high heat. Carefully crack eggs into pan to avoid breaking the yolks. Once edges of eggs have set, pour water around outside edges of eggs; cover pan. Reduce heat to low; cook 1 to 2 minutes or until whites are set and water has evaporated, but yolks are still soft.
  • To serve, place 1 English muffin half on each plate. Using slotted spoon, transfer egg to top of ham on each. Top with kale mixture. Sprinkle with cheese.

Vegetable oil cooking spray
4 thin slices prosciutto
3 tablespoons olive oil
1 small onion, finely chopped
3 cloves garlic, minced
5 cups (5 ounces) baby spinach
1/4 teaspoon ground nutmeg
3/4 cup heavy cream
2/3 cup grated Pecorino Romano
1 tablespoon kosher salt, plus extra for seasoning
Freshly ground black pepper
1 tablespoon fresh lemon juice
4 eggs, at room temperature
2 beefsteak tomatoes, trimmed and cut into 1-inch thick slices

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Spray a baking sheet with vegetable oil cooking spray.
  • Arrange the prosciutto in a single layer on the prepared baking sheet and bake until crispy, about 6 to 8 minutes. Remove from the oven and cool completely before crumbling into small pieces.
  • In a medium skillet, heat the olive oil over medium-high heat. Add the onion and cook, stirring frequently, until soft, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the spinach and nutmeg and cook until the spinach has wilted, about 1 to 2 minutes. Stir in the heavy cream and bring the mixture to a simmer.   • Fill a small saucepan with 3 inches of water. Add 1 tablespoon salt and the lemon juice. Bring the water to a simmer over medium heat. Crack an egg in a small bowl, taking care not to break the yolk. Slowly slide the egg into the water. Using a wooden spoon, carefully stir the water around the egg. Cook for 2 to 2 1/2 minutes until the white has set and the yolk is still soft. Using a slotted spoon, remove the egg from the water and drain on paper towels. Repeat with the remaining eggs.
  • To serve, place a tomato slice on each salad plate and season with salt and pepper. Spoon 1/4 of the spinach sauce over the tomato slice. Top with a poached egg and sprinkle with the crumbled prosciutto. Serve warm.
  • Cook's Note: The poached eggs can be made ahead of time if stored in water and refrigerated. Reheat by placing in simmering water for 30 seconds.
