Number Of Ingredients 15

1.8kg / 2.6lb large eggplants (aubergines) - about 5 (, sliced lengthways 8mm (1/3")-thick (skin on, Note 1))
1/4 cup olive oil ((for brushing))
1 2/3 cups parmesan (, finely grated)
2 cups basil leaves ((loosely packed), stalks reserved)
1 1/2 cups mozzarella (, shredded (for topping) (Note 2))
2 tbsp extra virgin olive oil
1 onion (, finely diced)
5 garlic cloves (, finely minced)
600ml / 20oz tomato passata ((Note 3))
400g/ 14oz canned tomatoes (, crushed or finely chopped (Note 4))
1 1/2 tsp white sugar
1 1/2 tbsp fresh oregano (, finely chopped (or 1/2 tsp dried oregano, or 1 sprig fresh basil))
1 cup water
3/4 tsp salt
1/4 tsp black pepper

Steps:

  • Preheat oven to 220°C / 430°F (200°C fan).
  • Line three trays: Line three large trays with baking / parchment paper.
  • Brush eggplant with oil: Brush eggplant slices on each side with oil.
  • Bake 35 minutes: Arrange eggplant in a single layer on the trays and bake for about 35 - 45 mins or until browning and tender, turning the eggplant halfway. I put the trays on the top shelf, in the middle, then I put one tray on the floor of the oven. As each tray finishes, I remove the tray and move the others up.
  • Cool: Remove from oven, leave on trays to cool.
  • Sauté onions and garlic: Heat olive oil in a large skillet over medium-high heat. Sauté onions and garlic for 3 minutes until softened and just about to colour on the edges.
  • Add remaining ingredients: Pour in the passata , canned tomatoes, water, oregano and sugar. Stir and bring to a simmer.
  • Simmer 30 minutes: Simmer uncovered for about 30 - 40 minutes, stirring occasionally, until thickened, adding the basil stalks halfway through cooking (so they don't lose their flavour).
  • The final consistency should be slightly thicker than a pasta sauce so it's spreadable and not leaching liquid, but not too pasty either. Add extra water a little at a time if required during cooking if it gets too thick. Remove the basil stalks and discard.
  • Season: Stir in salt and pepper. (Remember, we get salt from the parmesan too, so no need to go overboard here)
  • Reduce oven to 180°C / 350°F (160°C fan).
  • Smear a little tomato sauce in the bottom of baking dish, 23 x 33cm / 9 x 13" (or thereabouts).
  • Layer 1: Lay one third of the eggplant so it covers the base (some overlap is OK when layering eggplant). Spread 1/3 of the remaining sugo over eggplant. Drizzle with a little olive oil. Sprinkle with 1/3 of the parmesan, and 1/3 of basil leaves.
  • Layer 2: Repeat another 1/3 each of eggplant, tomato sauce, olive oil, basil and parmesan.
  • Layer 3 (top layer): Repeat again with remaining eggplant, tomato sauce and some olive oil. Do not put basil on top layer (we will garnish after baking). Scatter with remaining parmesan, then all the mozzarella.
  • Bake for 25 mins until bubbling and golden.
  • Rest: Let it rest for 5 to 10 minutes (easier to slice neatly). Scatter over remaining fresh basil leaves. Cut like lasagna and serve! (Optional: sprinkle with extra parmesan).

HEALTHY EGGPLANT AND KALE PARMESAN RECIPE - (4.2/5)

Healthy Eggplant and Kale Parmesan Recipe - (4.2/5) image

Provided by á-10360

Number Of Ingredients 14

1 tablespoon olive oil
2 cloves garlic, minced
Kosher salt
One 28-ounce can no-salt whole tomatoes, crushed well by hand
1 small bunch curly kale, stripped from the stems and chopped (about 6 cups)
1 cup torn fresh basil leaves
1 cup almond flour
1/2 cup whole-wheat breadcrumbs
2 large egg whites
2 medium eggplants, sliced into 1/2-inch rounds, ends discarded (about 2 1/2 pounds)
Freshly ground black pepper
1 cup shredded part-skim mozzarella
1/4 cup grated Parmesan
2 tablespoons fresh parsley leaves, chopped

Steps:

  • Special equipment: a broiler-safe 9-by-13-inch baking dish Position 2 oven racks in the middle and upper third of the oven, and preheat to 425 degrees F. Line 2 rimmed baking sheets with parchment. Cook the oil, garlic and 1/2 teaspoon salt in a large skillet over medium heat, stirring, until the garlic just starts to turn golden, 4 to 6 minutes. Add the tomatoes; rinse the can with about 1 1/2 cups water, and add the tomato water to the skillet. Add the kale and basil, bring to a simmer and cook until the sauce thickens, about 25 minutes. Meanwhile, combine the almond flour and breadcrumbs in a medium bowl until evenly mixed. Whisk the egg whites and 3 tablespoons water in another medium bowl until frothy. Lay out the eggplant slices on a clean surface, and season with 1/2 teaspoon salt and a few grinds of pepper. Dip the eggplant slices in the egg whites, then press into the almond-breadcrumb mixture to coat. Place the eggplant pieces on the baking sheets. Bake until the eggplant is tender and the crust is golden brown, about 30 minutes. Rotate the baking sheets if the top one is browning too quickly. Turn the oven to broil. Spread a little of the sauce on the bottom of a broiler-safe 9-by-13-inch baking dish. Arrange half the eggplant in the dish in as close to an even layer as you can without overlapping too much. Spread half the remaining sauce on top, then 1/4 of the mozzarella. Top with the remaining eggplant, sauce and mozzarella and the Parmesan. Place the baking dish under the broiler until the cheese is melted and browned, about 1 minute. Serve immediately, while the cheese is still warm. Sprinkle the top with the parsley.

HEALTHY EGGPLANT AND KALE PARMESAN

Healthy Eggplant and Kale Parmesan image

All the classic elements of eggplant Parmesan are here. The surprise is a breading of almond flour and egg whites that bakes up tender on the inside and crispy on the exterior. Braising kale in the tomato sauce boosts the flavor and adds nutritional punch.

Yield 6 servings

Number Of Ingredients 12

2 large eggplants (2 lbs?), sliced 1/2 - 1 inch thick
1 red bell pepper, chopped
1 small onion, chopped (about 1/2 cup)
1 bunch kale (washed, leaves ripped from stalks, then chopped)
2 cloves garlic, diced
2 teaspoons basil, finely chopped
1 jar of pasta sauce (I used Trader Joe's Tomato Basil marinara)
1 pound fresh mozzarella, sliced 1/4-inch thick
1/2 cup fresh shaved Parmesan
1/4 cup bread crumbs
olive oil
salt and pepper

Steps:

  • Preheat your oven to 450. Lay the slices of eggplant out on a oiled baking sheet, then sprinkle with salt and pepper. Bake at 450 degrees until the slices begin to brown (about 15 minutes). Remove from oven. While you're doing that, Sauté the onion, garlic, red bell pepper and basil in 1 teaspoon olive oil over medium heat until the onion just starts to brown (about 7 minutes). Remove the mixture from the pan and set aside. Pour 1 cup of water into the pan you just used, turn the heat up to medium-high, then add the kale. Cover and cook until the kale is soft and not-so-chewy (about 10 minutes). Drain off any remaining water, then pat the kale dry. Set aside. In an 8x12" baking pan, layer the ingredients as follows: half of the eggplant slices the red bell pepper mixture 1 cup of pasta sauce half of the mozzarella slices 1/4 cup Parmesan the remaining eggplant slices the kale 1 cup of pasta sauce the remaining mozzarella slices 1/4 cup Parmesan Bread crumbs bake at 350 degrees, uncovered, until the cheese melts and bubbles and the top turns light brown (20 - 25 minutes). Let cool for 5 minutes - then eat!

EGGPLANT STUFFED BELL PEPPERS

Eggplant Stuffed Bell Peppers image

This recipe was in the Southern Lady magazine Jan/Feb 2006. I used red peppers but you can use either color. I made a few adjustments which I thought made it much easier to prepare. My husband loved it and so did I. Presentation is important, but taste is what matters the most. Try it...you'll like it!!

EGGPLANT PARMIGIANA CAPONATA

Eggplant Parmigiana Caponata image

I made this recipe to combine the tastes of eggplant parmesan and caponata, an Italian eggplant appetizer. It is quite rich and uses a lot of olive oil. It is best served with linguini or some other kind of pasta on the side. It is a bit sweet and a bit salty with a nice texture.

SKILLET EGGPLANT, KALE AND BEANS

Skillet Eggplant, Kale and Beans image

I invented this tonight. It is an Italian flavored stew of sorts. Very tasty over brown rice. I knew the flavors I wanted but didn't have a recipe to follow so went with my instict. I think I did a good job. There are a lot of steps here but this is a very simple recipe. This (with the brown rice) was a great meal but it would be equally as good as a side to a simple grilled steak or grilled chicken or just on its own. I imagine you could also stuff this into a good Italian bread for a yummy sandwich, maybe with some provalone or mozzarella cheese melted over the top.

Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 14

1 eggplant
1 bunch kale
1 sweet onion
2 garlic cloves
1/4 cup olive oil
1 teaspoon fennel seed
1 teaspoon seasoning salt
1 teaspoon dried sage
1 teaspoon oregano
1 cup vegetable broth
1/2 cup marinara sauce
1 (15 ounce) can cannellini beans
salt and pepper, to taste and as needed
1/4 cup balsamic vinegar

Steps:

  • Cut eggplant in quarters then into thin, bite size slices.
  • Chop the kale and descard the tough bottom part of the stems.
  • Cut onion into quarter and then slice thin.
  • Chop garlic.
  • Warm olive oil over medium heat in a large skillet (I use an electric one).
  • Add onion and a little salt. The salt will keep the onion from getting too brown too quick.
  • Cook until it gets soft and starts to brown and then add the eggplant, kale and garlic.
  • Stir and add the fennel, seasoned salt, sage and oregano.
  • Stir to combine and when the garlic starts to lightly brown add the broth.
  • Let bubble and stir until all the liquid evaporated then add the marinata sauce.
  • Stir to combine and warm sauce.
  • Drain the beans and rinse well. Add the beans and stir gently. Cook to warm through.
  • Remove from heat and toss well with the balsamic vinegar.
  • Serve hot.
