Egg salad kicked up with Dijon mustard, crumbled bacon and horseradish. I use light mayo and sour cream to keep it healthy. Serve on lightly toasted wheat rolls with lettuce and tomato.

12 hard-cooked eggs, peeled and chopped
½ cup light mayonnaise
½ cup low-fat sour cream
¼ teaspoon paprika
3 tablespoons Dijon mustard
2 tablespoons prepared horseradish
2 tablespoons chopped red onion
¼ cup real bacon bits
salt and pepper to taste

Steps:

In a medium bowl, stir together the eggs, mayonnaise, sour cream, paprika, mustard, horseradish, red onion and bacon bits. Season with salt and pepper to taste. Serve immediately, or refrigerate until serving.

10 kale leaves, stems removed, thinly sliced
1/4 cup loosely packed basil leaves, thinly sliced
1/2 cup alfalfa sprouts
4 bacon strips, cooked and crumbled
1/2 cup crumbled feta cheese
1/2 medium ripe avocado, peeled and thinly sliced
1 hard-boiled large egg, chopped
1 cup grape tomatoes, chopped
VINAIGRETTE:
1/3 cup olive oil
3 tablespoons lemon juice
2 tablespoons prepared horseradish
2 tablespoons honey
1-1/2 teaspoons garlic powder
1-1/2 teaspoons spicy brown mustard
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon pepper
Dash salt

Steps:

On a serving platter or individual plates, arrange kale and basil. Top with sprouts, bacon, cheese, avocado, egg and tomatoes., In a small bowl, whisk the vinaigrette ingredients. Drizzle over salad; serve immediately.

Ingredients

6 large eggs
⅓ cup finely diced bacon
¼ cup mayonnaise
¼ cup chopped green onions
1 tablespoon chopped fresh dill
1 tablespoon lemon juice
1 teaspoon Dijon mustard
½ teaspoon prepared yellow mustard

Steps:

Place eggs in a saucepan and cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes.
At the same time, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
Mix bacon, mayonnaise, green onions, dill, lemon juice, Dijon, yellow mustard together in a medium bowl.
Remove eggs from hot water, cool under cold running water, and peel. Chop eggs into 1/4-inch cubes. Mix into mayonnaise mixture and refrigerate until cold, at least 1 hour. Serve.

6 celery ribs, chopped
5 scallions, sliced (white part and 2 inches of green)
12 ounces bacon, cut into 1-inch squares, cooked crisp and drained
2 tablespoons caraway seeds
3 -4 tablespoons prepared white horseradish, drained
1 cup mayonnaise
salt & freshly ground black pepper, to taste
1/4 cup chopped fresh parsley

Steps:

Gently combine the eggs, celery, scallions, bacon and caraway seeds in a medium sized bowl.
Mix the horseradish and mayonnaise and fold into the salad.
Season to taste with salt and pepper.
Garnish with parsley.
